Quick note on potato tahdig: As promised on the episode, we're sharing an update on this delicious Persian rice recipe here. As Stephanie correctly mentioned, you don't need to preboil the potatoes for a potato tahdig. Najmieh Batmanglij, in her book Food of Life, shares a recipe which involves slicing Russet potatoes into 1/4-inch thick rounds and placing them on the bottom of a pot that has been greased with water, oil and a few drops of saffron water. We also love their misir (lentils), atar (peas), key wot (lamb stew), kara mara tibs (lamb or beef with onions and tomatoes, a more dry-style preparation which somewhat resembles jerky). Make sure to order aib (homemade curd cheese) which cools your palate after the hot and sour flavours of the stews. Ambo is an Ethiopian-style soda - highly recommend the lemon-lime flavour!

We were invited for an "ocean to plate" tour, that included tasting local fish and oysters at the hotel's dedicated seafood concept, The Copper Lobster under Chef Georgiy Danilov, and then with a visit to the Dibba Bay Oyster farm which supplies the restaurant with the region's only locally farmed oysters.
A special thanks to Joanna Huang and Marwa al Omami who invited us to the Fairmont. And an extra special shout out to Marwa who spent two days sharing her knowledge and passion for Dibba with us. It was truly one of the most memorable trips we have had in the country.

We've also done some blind taste tests with shoppers and vendors at the farmer's market at Business Bay, Dubai.
