She goes to radiation five days a week, but doesn't drive because the chemo has really hurt her vision. Amy and her brother help get her to her appointments, but it's a lot when Amy is working full time. Thanks to The Griffin Center for Cancer Care and Griffin Health, we're able to get Deborah a nice wig and Uber gift cards to help with transportation.
Kathy nominated for Gloria a WEBE108 Griffin Health Christmas Wish. Gloria has been helping her daughter raise her 15-year-old son and has had many medical issues this year including a heart attack, surgeries and more. This past September, there was a fire in her condo and they were displaced to a hotel for a month. Kathy's wish is for Gloria to have a new dryer in her condo. Alex has three children, and unfortunately he lost his job earlier this year and was then evicted from their home. Susan's brother and his wife were charged with child abuse and to prevent their children from going to foster care, Susan took in all four children. She went from being single to having four kids! She would've been 47 years old this Christmas Eve. They had already lost their father two years ago. Marielle gave birth to her third son a month ago and as soon as she's released from the hospital her husband was rushed to the hospital and is in need of a heart transplant. She's trying to take care of her two sons and newborn, while also spending time at the hospital with her husband. Michelle nominated Elizabeth for a WEBE108 Griffin Health Christmas Wish. Elizabeth's husband had a stroke right after Thanksgiving and is fighting for his life in the hospital right now. She's unable to work as she's taking care of their three children. We'll also get some food and treats for their two dogs and cat.

At just 53 years old, Charles was diagnosed with dementia and Alzheimer's and had to retire early because of his condition. Six months ago, he was diagnosed with liver cancer and has been recovering from surgery in the ICU. Fran's coworker Christine nominated her for a WEBE108 Maritime Chevrolet Christmas Wish after Fran lost her husband to leukemia and Covid. Fran has two twin boys, one of whom has Autism and had to be placed outside of the home. Fran was also recently diagnosed with breast cancer and is struggling financially and emotionally. Deb from The Center for Family Justice nominated a 15-year-old boy who is in need of a new wheelchair. Puerto Rican Stuffing 3 green plantains 1 yellow plantain 5 garlic cloves crushed 1/2 pack thick cut bacon sliced into small pieces 1 large yellow onion chopped Salt pork belly 12oz sliced into very small pieces Salt and pepper to taste In a frying pan fry pork belly and bacon until crispy. Add onion and garlic until brown. Set aside. Now peel the plantains and slice into 1 inch. Fry until tender in the middle and a little golden on the outside. Drain and mash all the plantains in the bacon and pork mixture. Add salt and pepper to taste. Serve warm.

My famous Jamaican curry chicken. Whole chicken cut up small, wash and clean. In a bowl, season chicken with curry, black pepper seasoning, salt, cayenne pepper, and a dash of cilantro. Also diced onions, peppers, red and green tomato, scallion and thyme. Mix it all up in the bowl with some water making it nice and rich. Then in a saucepan, add vegetable oil mixed with a dash of curry. (Make sure the oil is hot). Put pieces in one at a time and stir until lightly browned. Then all the seasoning that’s left in the bowl, pour over the chicken. Stir and let simmer until cooked.
HOLIDAY CARROT LOAF (EVEN THE GRANDKIDS LOVE IT)
1 1/4 sticks unsalted butter room temp
1/2 cup light brown sugar
2 egg separated room temp
1/2 tsp. salt
1 tablespoon cold water
1 tsp lemon juice
1 cup flour
1 tsp baking powder
1/2 tsp. baking soda
2 cups grated carrots - room temp
Cream butter and sugar
add all except carrots and egg whites
fold in carrots carrots
beat egg whites till stiff fold in
grease a small bundt pan and coat with bread crumbs put batter in and top with more bread crumbs
bake - 350 - 15 minutes
375 - 30 minutes
