Chicken and Green Chile Posole

This is a Chef Tom Exclusive! I don't get too excited over soup dishes, but this one is one in a million! I have loved my travels to New Mexico over the years and once I got introduced to their unique flavors, chiles, and spices over 30 years ago, I have been a fan! This recipe is layered with that New Mexico flavor. I use roasted Hatch green chiles and a special spice mixture from a company in New Mexico. Jump on board this green chile train and let's ride it to the garden of Hatch Valley!
