On the menu today, Yvonne's cooking up some Shrimp Pesto Pasta. The ladies share some laughs with a few jokes, share some risky business in cooking new foods, share about thing-a-ma-jigs or whats-you-call-its, as well as updates on Jen's commitments. 

Shrimp Pesto Pasta
Ingredients
- 2 Tbsp Olive oil
- 1 diced onion
- 1 diced garlic
- 1 diced yellow pepper
- 1 diced carrot
- Cherry tomatoes (or other small tomato)
- Handful of spinach (if desired)
- Jar of pesto sauce
- Box of preferred noodles (farfalle, rotini, macaroni) cooked according to package directions
-1 lb of thawed medium shrimp (tails removed)

Cooking Instructions

  1. Saute veggies in olive oil on medium heat until soft (10-15 minutes)
  2. Add tomatoes, (if you want cooked tomatoes) and cook for one minute. Skip to step 5 if you prefer fresh tomatoes
  3. Add shrimp. Cook for approximately 5-8 minutes or until they are no longer translucent and are pink/white colored and smaller in size.
  4. Add jar of basil, mix well
  5. Add tomatoes (if desired can also add some spinach at this time.)
  6. Mix well and serve over cooked pasta.
  7. Garnish with parmesan cheese or fresh basil.
