Welcoming Martha Yolanda Diaz, founder of Itacate Foods. In this episode we learn how Martha went from—Idea to Reality-Bringing Latin Food to the Backcountry. In 2020, during the great resignation, she quit her job, which was so stressful as a toxicologist without having anything lined up and at a crossroads. Itacate means food for the journey. With the lack of diversity in the outdoors in general, she didn’t see her culture reflected in the backcountry menu.
