Clare Thomas Allen is a New Yorker and beer blogger with a heart of gold, and a liver of steel. Last week she visited Japan for the first time, and we were lucky enough to find a few minutes in her schedule to sit down and have a chat about beer beginnings, making craft accessible to all, and the tricky question of whether to wear brewery merch when you visit the brewery. Together we drank some of the appropriately named "One Night in Tokyo" - a virtual collaboration between Sakamichi and Virginia Beer Co.

A Grodziskie is a traditional, oak smoked wheat ale that is sometimes referred to as "Polish Champagne" due to its high carbonation: Light, smoky, crisp, and summery. The second beer could not have been more different. The Gateway Empowered is a 13.0% Imperial Stout with coffee and vanilla. Rich, thick, and incredibly dark. In an incredible coincidence, both will be available at our taproom from Friday afternoon so you can drink along with us.

This week we crushed a can of Citra Slam, and after that we drank it too. It's a single hop West Coast IPA from Revision Brewing of Sparks Nevada. Single hop IPAs are sometimes viewed as being a bit thin or uninteresting but recently we've had a number of really excellent ones, including several from Two Rabbits. Somehow, drinking this great beer led to a discussion of saying "no" and its importance in all walks of life.

In May 2007 Brian Oestrike, brother of Jackie O's Brewery owner Art Oestrike, set out to climb Mt. Everest in honor of their mother. The successful expedition led to the delicious beer that we tried this week - Chomolungma, which fittingly means Goddess Mother of the World. Chomolungma is a honey nut brown ale, and a perfect example of the kind of beer that we want to drink in the Autumn.

This week's beer was a can of the excellent Terry Porter from Gilgamesh Brewing in Portland, Oregon. This beer was first made in 2016 as a seasonal winter brew and a collaboration between Gilgamesh and the Portland Trail Blazer’s legendary point guard Terry Porter, but since then it's become a regular favourite and a great way to raise money for The Doernbecher Children’s Hospital Foundation. Talking basketball was also a great way for Daniel to test the limits of Matthew's knowledge, and an opportunity for us to talk about a charity that we've been supporting here in Japan. This week we crushed a can of Jungle Boogie - a blood orange sour by Funk Estate from New Zealand. We haven't been able to have enough New Zealand beer in our fridges, so when this one popped up on an importers list we jumped at the chance. We also dug in a little to the interesting story behind the brewery and found that Funk Estate were actually liquidated in March this year and their IP picked up by an alcohol distribution company called Brand House.

Talking about the tough environment that a lot of breweries have been facing over the last 18 months also led us to a discussion of Shiokaze BrewLab, a brewery and taproom run by our good friend Chris Poel. Despite the fact that the State of Emergency has been extended to Chiba recently, Shiokaze have taken the decision not to close and to continue to serve alcohol to customers (while following all possible safety precautions). What's more, they've decided to stay open very publicly and written a letter to both the Mayor of Soga and the Governor or Chiba. This week we cracked a can of Days Over, a delicious unfiltered lager from Black Tide Brewing. Black Tide have established themselves as a real favourite in our taproom, with customers often coming in specifically for any new beers that we stock from them. Days Over is a malty and flavourful brew, perfect for drinking in the bath with Winston Churchill and a bear.

We also reflected a little on some of the things that we've had to learn to do over the last 2 years and some of the lessons we've learned about how to actually get things done. Accepting that the first draft is going to be terrible has allowed us to get started (and hopefully get better) on so many different projects. Our advice - just start! You have to make something to be able to make it better.

This week Sakamichi Nights is coming to you 100% vaccinated! We celebrated by cracking a can of Serious Leisure, a guava, lime, and hibiscus sour from Fair State Co-Op in Minneapolis. The wheel of pairings came up on video game again this week and led Matthew to reminisce for some time about an IOS game from 2011 called Radballs. Having gone back to check, the soundtrack is still 100% bangers. Speaking of bangers, in this episode we have for the first time - interstitial music! Be prepared for a big drop in the silence that usually accompanies us drinking the beer.

This week we dipped in to TDM 1874's IPA #16. George at TDM changes the hop bill every time he makes this beer. Version 16 has Magnum, Sabro, Idaho 7, Cryo Citra, and Mackinac. That's a lot of interesting hops! We also talked a bit about how breweries (and home brewers) store hops and what some of the best practices are if you are planning to keep your hop character fresh and true.

We have the hazy pale on tap and the pilsner in cans, so also talked a bit about the advantages and disadvantages of bottling vs canning, and what the future might hold for Sakamichi. Also, we discuss Danish - English relations through history and reveal the truth about Daniel's cheese name.

This week we again tried some of the delicious Golden Kiwi - a modern IPA that we made together with our good friends at NomCraft. This beer is finally available on tap, now that the state of emergency has been lifted, so we were also joined by two good friends of Sakamichi - Nick and Tyler. This is the first time we've had two guests on (with a bonus remote appearance by a mystery third guest) so things got a little chaotic. Still, at least we managed to get to the bottom of the Pavlova controversy and hear exactly what Nick got up to with a pottle of mince.

This week we drank a bottle of delicious Freiheit Premium Bock from Numazu Craft in Numazu. We also welcomed a new sponsor - Danke, Nationalmannschaft. Traditional Bock beers are malty, slightly sweet, and typically quite strong, and this Freiheit certainly lived up to that billing - but what does Bock mean? Listen to the episode to find out (or just google it). Numazu and the surrounding area is a hotbed of great Japanese beer, so we also talked a little about cooperation and solidarity when operating in a local market.

Also - we are OPEN! At least at the time of recording we are open for drink in from 12-8, with last orders at 7, so we recommended some excellent local restaurants for you to visit before coming to see us. Remember that you can bring in your own food to our taproom.

This week we drank a can of Zoigl-Weiss, a deliciously light and refreshing German style wheat ale from Zoiglhaus Brewing in Portland, Oregon. A Zoiglhaus is a traditional German style of brewing that dates from the middle ages. Local citizens share a communal brewhouse to brew beer, then take turns serving it to their neighbors from the comfort of their own homes.

That sense of community is central to what we are trying to achieve at Sakamichi Brewing, so we also talked a bit about the kind of employment opportunities that we want to create as we grow and (hopefully) develop our brewery. This week we shared a can of Pink Drink, a raspberry sour from Crucible Brewing in Washington State, USA. Pink Drink is a kettle soured beer, so we dove into some of the different processes that breweries can use to make sours and discussed some of the other recent examples we've had across our tap boards. It's a good thing we have several sours in the fridge right now, because this was actually our last can of Pink Drink. If you weren't able to try it then please take solace in the fact that we really enjoyed it.

This week we tried some Tall and Kinki, an excellent hazy IPA made in collaboration by NomCraft, from Wakayama, and Tall Boys Brewing, from Nagoya. Spoiler alert, it's great! We've got a few different bottles of Tall Boys beer available in our TWO FRIDGES, so come by and check them out if you get the chance.

We are also hoping to have our brewhouse installed at some point this year, so we also talked a bit about the work that we are doing to prepare our space - patching, sealing, and painting the concrete. This fascinating topic leads to a discussion on why sanitation is so crucial in the brewhouse and what can happen if you get things wrong in the splash zone.

We also talked a bit about the difficult decisions that the latest lockdown have given to small businesses in Tokyo and share our perspective on the thinking that goes on behind the scenes.

This week we got to try some of the beer we made together with our friends at NomCraft - the Golden Kiwi. We were joined in the taproom by our own Golden Kiwi local pervert Daniel H, a friend of Sakamichi and frequent provider of weird cans of beer.

The Golden Kiwi is a Modern IPA made with some delicious NZ hops, Wai-iti and Rakau, and a big heaping of haze. It's deliciously smashable, and we hope you get to try it soon. Unfortunately the current State of Emergency means that we are closed at the moment, but we hope to be opening up again either from the 12th of May or even earlier if we can get our take-out license.

This week we tried some of the excellent White Gradation from Y-Market in Nagoya. An extremely drinkable and well-balanced Hefeweizen. What's the correct way to pronounce Hefeweizen? We don't know. We do know though that both Daniel and Matthew have grown to love wheat beers, so we discuss what makes them, how they taste, and some of the history and practicality behind brewing with wheat. We also introduce a new character to the Sakamichi Cinematic Universe.

We were also trying out a new microphone this week and Matthew may have screwed some of the settings up, which is why Daniel sounds so much quieter than him. Sources confirm that this absolutely was not a deliberate choice.

This double dry hopped IPA took its inspiration from the Strata Hops grown in brewmaster Ben's home state of Oregon. This time we drank 年またぎセッション (Toshi Matagi Session) from Repubrew in Numazu. This West Coast Session IPA is super light and drinkable, and has a very interesting hop bill that includes several different varieties of cryo hops. We also discussed some of the different ways that hops can be processed for use in the brewery, who has to clean up the mess, and whether cryo hops can bestow super powers.
