I am happy to share with you a recipe by "thevegansclub."  It is for Freezer Cookie Dough Bites, but I have chosen to call them "Happy Freezer Cookie Balls."  And, get this, they are good for you! I am limiting myself to one day!  Here is the recipe. (I changed the sweetener in this recipe to monk fruit with erythritol.)

2 tablespoons ground flax seed mixed with 1/4 cup water

1/3 cup monk fruit with erythritol

1/2 cup peanut butter

1 teaspoon vanilla

14 cup almond milk

1 1/2 cup almond flour

1/2 cup oat flour

1/4 cup cacao  chips

Soak the flax seed in water and set aside.  Combine remaining ingredients.  Add in flax seed.  Scoop 1 heaped tablespoon onto a parchment lined baking sheet.  Repeat until all the batter is gone.  Freeze.  Store in a ziploc back in the freezer.  YUM!

This recipe is titled "The Best Black Bean Burgers I've Ever Had." I did not name this recipe, but I couldn't agree more. I hope you enjoy it. You can also find the recipe at https://sallysbakingaddiction.com/best-black-bean-burgers/ OR on my website - www.letstalkdementia.org/podcasts. Happy eating!

THE BEST BLACK BEAN BURGERS I'VE EVER HAD

  • 2 (14 ounce) cans black beans, drained, rinsed, and patted dry
  • 1 Tablespoon extra virgin olive oil
  • 3/4 cup finely chopped bell pepper (1/2 of a pepper)
  • 1 cup finely chopped yellow onion (1/2 of a large onion)
  • 3 garlic cloves, minced (about 1 Tablespoon)
  • 1 and 1/2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup bread crumbs or oat flour
  • 1/2 cup feta cheese
  • 2 large eggs
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons ketchup, mayo, or BBQ sauce
  • pinch salt + pepper

  • Preheat oven to 325°F (163°C). Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.

  • Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently blot some of the moisture out. Place in a large bowl or in a food processor with the remaining ingredients (cumin, chili powder, garlic powder, smoked paprika, bread crumbs, cheese, eggs, worcestershire, ketchup, salt, and pepper). Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.
  • Form into patties– about 1/3 cup of mixture in each.
  • To bake: Place patties on a parchment paper lined baking sheet and bake at 375°F (191°C) for 10 minutes on each side, 20 minutes total. To grill: Place patties on greased aluminum foil and grill 8 minutes on each side. Heat temperature is personal preference as all grills differ. Generally, black bean burgers should grill on medium-high heat about 350°F (177°C) – 400°F (204°C).
  • Serve with your favorite toppings. Store leftovers in the refrigerator for up to 5 days.

Notes

Freezing Instructions: Cooked or uncooked black bean burgers freeze wonderfully for up to 3 months. Stack between parchment paper in a freezer container or zipped-top bag. Thaw in the refrigerator and reheat to your liking or, if uncooked, cook according to instructions. If desired, you can skip thawing and reheat/cook from frozen for an extra couple minutes.

3 tablespoons nut butter (almond, walnut, pecan - try to stay away from peanut butter)

1/4 cup almond milk

five pitted dates

Process these ingredients until smooth, and then add protein powder mixture.  Pour 1/3 cup of the panaffle batter into DASH MINI WAFFLE MAKER, cook for 2-3 minutes.  SO VERY GOOD.  Here are the links for both the protein powder (https://amzn.to/3iCYBvJ)  and the DASH MINI WAFFLE MAKER (https://amzn.to/3nqvKOA).

If we do argue, we always expect to win. Arguing with someone who has dementia, will not help the situation. But hallucinations need to be dealt with. That's the topic of today's episode.

Today was a Difficult Day," said Pooh.  There was a pause.

"Do you want to talk about it?" asked Piglet.

"No," said Pooh after a bit.  "No, I don't think I do."

"That's okay," said Piglet, and he came and sat beside his friend.

"What are you doing?" asked Pooh.

"Nothing, really," said Piglet.  "Only I know what Difficult Days are like.  I quite often don't feel like talking about it on my Difficult Days either.  But, goodness, Difficult Days are so much easier when you know you've got someone there for for you. And I'll always be here for you, Pooh."

And as Pooh sat there, working through in his head his Difficult Day, while the solid, reliable Piglet sat next to him quietly, swinging his little legs...he thought that his best friend had never been more right.

When someone affirms us and our work, our day is improved substantially.  When you affirm your LO, their day is improved in ways that cannot be measured.  Scripture says, "God is within her, she will not fall" (Psalm 46:5)  Reminding ourselves, our neighbors, the grocery clerk, your LO, and everyone you meet that God is within them and they will not fall can be a wonderful affirmation.  Call them by name and tell them they are doing a great job and are bringing joy to your day.

I had the distinct privilege of interviewing my friend, Ryan Monk, Eldercare Attorney, on today's episode.  He co-owns Monk Legal (www.monklegal.com - 803-594-4453), and he has good advice on planning for the future.  Write me with questions about dementia - carol@letstalkdementia.  Or if you have legal questions, I can refer you to Ryan!

The BOLD ACT was signed on December 31, 2018, and it provides $100 million dollars towards closing the existing infrastructure gaps in our health care system and help deliver valuable new resources for the prevention, treatment and care of Alzheimer's Disease.  (Alzheimer's Today Magazine, Winter 2019 - You might want to subscribe to this free magazine - www.alzfdn.org).  $100 million dollars!!!  Let's change the face of Alzheimer's!  I conclude with a cute story about Democrats and Christians.  FUNNY!

Today's episode is not a cheery as usual, but I hope the cartoon above made you giggle.  We are talking about a two year old boy diagnosed with dementia.  How terribly sad, but his mother is inspiring.  Write me with your story at carol@letstalkdementia.org

Hey, Dude - Ever thought of renting a truck?

It's a great day to sit down and talk with your LO (loved one) about their past.  What was their first paying job?  Did they like their boss?  Where did they go to high school?  Did they ever get in trouble while at school?  There are so many questions you can ask.  If you are asking your mother these questions, then I recommend the book Reflections from a Mother's Heart, and you can order it at https://amzn.to/2knXHeg.

Having fun is such a healing part of our life.  If we laugh and relax, our body respond in a positive way.  This is true for your LO with dementia.  Don't forget to share fun "outside experiences" with them.  Today's episode relives my mother's trip to a park in the mountains, her trip down a big slide, and swinging to Mars.  She had a fantastic time!   It makes me happy to recall it.  Write me with your thoughts at carol@letstalkdementia.org.  Happy to hear from you.
