DEC. 14 Sushi Masa, 8087 West Broad Street – The following violations were reported during a routine inspection: open drink cup found on prep surface with clean plates; employee failed to sanitize equipment after washing and before storing on drying rack; temperatures of two pans of tempura shrimp cooked two hours prior are elevated; raw tuna improperly thawing in reduced oxygen packaging; in-use knife improperly stored in dirty crevice between prep unit and table; rice scoops stored in ambient temperature water.
