Back to Basics

As spring approaches this week I'll take you through my Top 7 Gardening tips ... plus my 

"Go to Herbs" for the kitchen garden, and one that might surprise you…what goes into my Pineapple Shrub Cocktail! And as always, some great questions from BBY listeners.

Shrub Cocktail Recipe

1/2lb prepared chopped pineapple

3-5 sprigs tarragon

1 cup cane sugar

A pinch kosher salt

½ cup apple cider vinegar

1 cup white wine (whatever you like to drink )

Seltzer water 

Using a wooden spoon smash prepared pineapple add and muddle two sprigs of tarragon.

Add sugar and salt and cover and let sit at room temperature for a couple of hours. With a fine sieve strain pineapple mixture into a large measuring bowl, pressing on fruit to release as much syrup as possible. Discard solids.

Add wine and vinegar into shrub mixture, stir to combine.

Prepare glasses of ice and pour shrub mixture into the glass and top up with seltzer water. Add sprigs of tarragon to garnish.
