In this podcast, we start by considering the current environmentally caused crisi in the chocolate industry. If the cocoa farmer is to survive this, the need for acquiring more of the value chain has never been more important. The farmer needs to focus more on quality rather than just quantity.
Quality of flavor beans are the key to survival because quality involves a higher price. To get there, the farmer will need to learn more about fermentation, drying, and triage, the three steps that will lead up the ladder of survivability. That is the focus of Project Hope and Fairness for 2024.
