This is the third episode in our Back to School Series. Episode 39 focused on packing kid lunches. Episode 40 focused on avoiding the drive thru when life get’s busy. This episode focuses on breakfast for busy mornings.
My kids can be a little picky about breakfast. They all have strong preferences and they are not always the same. If your kids are less picky than mine, the best strategy is to assign a theme to each day and make the same breakfast all year long. Diane has a theme like Monday = Eggs, Tuesday = Peanut butter Toast, Wednesday = Oatmeal and follows the theme all year long.
If you kids are pickier, you may have a broader framework like mine. I try and make some type of breakfast meat at the beginning of the week and have a well-stocked pantry and freezer with lots of make-ahead options for quick breakfasts on the go.
Some easy make-ahead breakfasts include:
Apple Cinnamon Baked Oatmeal
Lemon Blueberry Baked Oatmeal
Breakfast Cookies
Spinach Egg and Cheese Breakfast Sandwiches
Chocolate Almond Granola
Spinach and Hash Brown Breakfast Bake
Shamrock Smoothie
Chai Spiced Granola
Breakfast Casserole
Overnight Yeast Belgian Waffles
Quick and Easy Turkey Sausage
Some special treat breakfasts include:
Sourdough French Toast with Strawberry Syrup
Lemon Scones (with dairy – free option) and Lemon Curd
Blueberry Streusel Muffins
Oatmeal Pancakes
Home Fried Potatoes
Orange Streusel Coffee Cake
Cream Biscuits
Puffy Pancake with Buttermilk Syrup
