Aislynn welcomes to the Dinner Table this week's special guest Debra Scott-Brown sharing her Good Vibes. Recipe:Ingredients: 1 large eggplant, cubed 1 cup okra, chopped 1 lb (450g) goat meat, cubed 1 cup plain coconut yogurt 2 tablespoons oil 1 large onion, finely chopped 2 tomatoes, chopped 2 teaspoons ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon chili powder (adjust to taste) Salt to taste Fresh cilantro leaves for garnishInstructions: Heat oil in a large pot or pressure cooker over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and sauté for another minute until the raw smell disappears. Add coriander powder, turmeric powder, chili powder, and garam masala. Stir well for a minute to toast the spices. Add cubed goat meat to the pot and brown it on all sides. Add chopped tomatoes and cook until they turn soft and the oil starts to separate from the masala. Add cubed eggplant and chopped okra. Stir gently to coat the vegetables with the spices. If using a pressure cooker, add enough water to cover the meat and vegetables. Cook for about 20-25 minutes or until the meat is tender. If using a regular pot, you may need to simmer for a longer time, possibly an hour or more, until the meat is tender. Once the meat and vegetables are cooked, check for seasoning and adjust salt and spices if needed. In a separate bowl, whisk the coconut yogurt until smooth. Gradually add the yogurt to the curry, stirring continuously. Warm the mixture gently for a few minutes. Do not let it boil. Garnish with fresh cilantro leaves. dairy-free, sugar-free, and grain-free pumpkin bread with banana:Ingredients: 1 cup pumpkin puree (unsweetened) 3 ripe bananas 4 large eggs 1/2 cup almond flour 1/2 cup coconut flour 1/4 cup coconut oil (melted) 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp cloves 1/4 tsp salt Optional: 1/2 cup chopped nuts or seeds (e.g., walnuts, pecans, or pumpkin seeds)Instructions: Preheat your oven to 350°F (175°C) and grease a loaf pan. You can use coconut oil for greasing. In a large mixing bowl, mash the ripe bananas. You can use a fork or a potato masher. Add the pumpkin puree and mix well. Add the eggs and melted coconut oil. Mix until well combined. In a separate bowl, combine the almond flour, coconut flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until a smooth batter forms. If you're adding nuts or seeds, fold them into the batter. Pour the batter into the greased loaf pan. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. The unexpected death of a close friend was the second blow after Joe's mom, and we spend a little time reflecting on one of the brightest stars we ever saw shine: Lisa Joy McDaniel. Post-freeze soups and garden analysis, our contributions to an amazing Christmas lunch, an update on our upcoming trip to New Orleans and a great Random Question: If you could move anywhere in America, where would you move?

Recorded on Christmas Eve in the middle of a 'Land Cleaning Freeze' with two new sheep, 10 new chickens, family on the way...just the huge amount of distraction for Joe to keep his mind off things. Add the deep planning phase of an upcoming vacation and there's zero room to think or process funeral homes, cremation, family and the 'language of death.'

Merry Christmas and Happy Holidays from your friends at The Dinner Table!

Thanks!

Adventures in skunk life continue on the farm when someone gets sprayed. Aislynn vends at a local Farmers' Market which gets her thinking about the state of Farmers' Markets in our area. Don't miss this view from the inside. Eating food off the floor, a week filled with soup, a power outage and a corrupted podcast file. It's a very busy Dinner Table!

Joe's sick this week and sounds like a jazz DJ so Aislynn gives him a fistful of supplements. We're planting seeds this week, literally and figuratively, as we discuss what kind of future we'd like to create. From election cycles to rabbits to Growing with Grace, the trees we want to see someday can't happen without today's seeds. Joe makes amazing Asian dry-rubbed ribs with vegetables, details his tacos from pico to guacamole, and Aislynn heads back to last week's Mexican restaurant to learn all about Sopa Azteca. Oh...and another batch of tepache makes us all feel good.

Unanswered Questions:

  • What is Sopa Azteca?

Random Question of the Week:

  • What's something you pretend to hate that you really love?

We have a lot on our minds this week and it all unspools at The Dinner Table. From wasps to quitting media to a new pop-up restaurant from chef friends, we pretty much cover everything. Aislynn wants authentic fideo so Joe cooks it up (with added squash)!

Unanswered Questions:

  • What was the species of bird that Aislynn saw on the farm last week?
  • Why is it called a ‘Dutch oven'?

Random Question of the Week:

  • Did you ever have an imaginary friend?

Links/Recipes:

Fideo:

We added finely diced squash, yellow squash, and zucchini, sauteed to soften and then dumped it in the fideo with 5 minutes left to cook. https://mexicanfoodjournal.com/traditional-sopa-de-fideo/

This week's recording session was interrupted by tragic news: Maggie, our beloved farm dog was taken too soon. The episode shifts into a remembrance of the best dog ever, the role of a farm dog, thoughts of life and death on a homestead, farm roads, and the differences between urban and rural life.

So long, Maggie. You represented unconditional love, complete freedom, and the responsibilities that come with that freedom. You were perfect. We'll see you again soon.

Aislynn floats the thought that everyone's perception of other people (and themselves) is a figment of their imagination and the Dinner Table Talk winds through just about everything from cancel culture to online bickering. We head back to last week's Random Question of the Week for some unfinished thoughts about county fairs, pronounce salves, talk pickle pop ingredients, creating your food network, and make a good (not great) Asian beef and broccoli.

Unanswered Questions

  • Is 'Salves' pronounced 'SaLves' or 'Savs'?
  • Pickle pops ingredients deep dive!
  • What's the first step one would take to strengthen their network or improve the quality of their food?

Random Question of the Week:

  • If you could only wear one pair of shoes for the rest of your life, what would they be?

"I need a salty dip," Aislynn exclaimed. It's that time of year when heat and outside work makes Aislynn crave salt so Joe scoured the grocery store for items that scratched that eat that were on the good side fo the natural spectrum. When Joe found pickle pops he knew he had a hit. A bunch of past topics collide into a conversation-fueled extravaganza. We conclude our study of Blue Zones, talk medical chefs, peel eggs live on air, name a chicken, and talk about county fairs.

Unanswered Questions:

  • What is a 'medical chef'?
  • The live egg yolk experiment results

Random Question of the Week:

  • What’s your favorite part of a county fair?

The NEW mac and cheese recipe we tried this week. A little easier than our favorite (below):

https://www.jocooks.com/recipes/loaded-chicken-mac-cheese/

Alterations: We added Aislynn's celery to the onion cook, and several cups of vegetables which we boiled to soften before adding.

Our CLASSIC mac and cheese recipe:

https://www.healthyseasonalrecipes.com/macaroni-and-cheese-with-broccoli/

Alterations: We usually add cauliflower (don't have to), but because we're adding mass, I make extra cheese sauce and then eyeball how much to use.

Aislynn's second viewing of 'Everything Everywhere All at Once' gets her thinking about Insanity Loops, and we have plenty to talk about. An explosion of produce leads to two pasta dishes in one week (rare), Squash and Corn Pasta and Pasta Primavera. Our talks about Blue Zones expand into Sardinia, the chicken-naming finals begin, and we're NOT having spinach balls at this Friday's Dinner Table Talks Salon.

Unanswered Questions:

  • How to pronounce 'Ovo.' (This is boring)
  • A deeper dive into another Blue Zone - Sardinia, Italy

Our very first 'Day on the Farm' event was 'evolutionary' as families from across South Texas made a short drive to learn, tour and eat. Aislynn describes her amazing Ploughman's Lunch (farm-to table lunchable) offering and we make Goat Guisada (carne's carne, right?) with leftover goat from the day's goat roast. Aislynn gives a short history of progressive agriculture education in South Texas.

Joe makes Zuppa Toscana (the sausage journey continues) and grabs a cup from Olive Garden, the soup that made Zuppa Toscana famous. Who wins the OG Taste Test? Movie date night out to 'Everything Everywhere All at Once' creates a mind-bending Dinner Table Talk. Unanswered Questions:

  • What does 'Cretan-style' mean in last week's Goat Tsigarelli recipe?

Zuppa Toscana - https://cafedelites.com/zuppa-toscana/

Alterations to the recipe: I didn't use the optional wine (didn't have any; if I had some, I would have), we used a bag of mixed greens from Aislynn's garden, the sausage and bacon was from Turkey Hollow Farm, I created a substitute for the bouillon cube with various spices, but did not add salt anticipating the sodium in the sausage and bacon....that was a good move. Otherwise followed the recipe very closely with low heat to build it with care.

By 'stinker,' yes, we mean a fart. Farts and burps make an appearance on this week's Dinner Table Talks when a talk about kimchi moves into gut health and odorous flatulence. Aislynn 'manipulates' Joe into making a soup. She admits it! In podcast life, we are GOING on a trip. In real life, we just got back. So before we left we recorded this short no-frills, two-recipe episode. Aislynn figures out that Joe would love for her to cook from time to time and makes a big, cook-it-all-day pot of chili. Joe comments that you don't put beans in chili...which sends us off on a conversation about 'life rules.' Joe made a big pot of black-eyed peas and homemade cornbread. We tell you all the details of both recipes.

Since we're (fake) about to go on a trip, we go a little further into why we travel the way we do. Add a random question of the week about ice cream and you got yourself a very sweet episode.

It's the Dinner Table where anything can happen.

We put up our very first 'Four Meal Episode' this week, the highlight being a GF chicken pot pie that comes out wonderfully. Aislynn insists, though, that we recap how Joe does tacos and fried rice since it's the season to use all the vegetables in play and those two dishes do a great job. We wholeheartedly suggest that you watch the movie Pig, you help us name a chicken, Aislynn talks Long Lunch Club, Garden Healing, and all the great goings-on at The Farm.

We've talked about a ton of egg dishes on the show, but Joe wanted to try something completely new and found a Vegetarian Breakfast Strata. This 'frittata with stale bread' turned out to be a perfect 'trash can meal' where you can stuff it with ALLLLL the produce in the house. It froze since our last time together and we talk about the effects, we merge our two chicken flocks, and shoot off fireworks for New Year's Eve. We're headed to Hot Springs, Arkansas, for a much-needed week away and talk a little about how we plan a trip. Throw in some Chicken Tortilla Soup and you've got a perfect Dinner Table.

It's been an interesting week starting with a trip to San Antonio that didn't go according to any plan, into a HUGE Friendsgiving/housewarming party. A foodie event at our house with the best vibe, fire, music, friends and fun that you can imagine, and concluding with a CBD-infused multi-course dinner party from a great friend/chef.

Did we mention the fast track to get rabbits? Did we mention getting 10 new chickens? Did we mention Aislynn's classes, that her onions came in, that she had a local menu name a farm-to-table dish after her, and that Joe's planning the first farm movie night?

An escaping dog, a new robot vacuum cleaner, saying 'No,' and a chicken naming contest is just the beginning this week on a very introspective Dinner Table Talks. Aislynn's business is taking off and she's practicing NOvember while Joe has an emotional awakening at a funeral. We revisit how we want to be dealt with when we go one year after Aislynn said, 'I want you to dig me a hole and set me on fire," and that's when Joe put together the relationship with his father's memorial service and a funeral he attended this week. We are on a solar cycle of repeating behaviors!

Will Joe ever cook again (ignoring that he did)? Aislynn's mom to the rescue with some amazing tomato basil soup and grilled cheese sandwiches. A simple meal, sure, but that soup!...mmmmmmmm. No wonder Joe asked for the recipe.

A super-sized, long and winding road awaits you this week at The Dinner Table! Moving is a transition, and we work through some of the transitions we're all going through while reflecting on the 'new' of the farm. Easter Feast - Smoked Wagyu - Aislynn's Overflow of Abundance - Broccoli Cauliflower Casserole - A Sold Out Farm to Table Cooking Experience

At least one kid made it home for Easter so we pulled all the stops with smoked brisket and wagyu, an Aislynn Salad, potato salad, AC's mom's fermented crudite, homemade strawberry ice cream and so much more. You hear about it all. Aislynn's Overflow of Abundance has kicked into high gear including her first sold-out Farm To Table Cooking Experience at the farm. Witness the spider web of, as Joe calls it, Aislynn's 'not-fully-formed thoughts' as we finally get to what a Farm to Table Cooking Experience is. But wait! There's more! Aislynn finds a broccoli cauliflower casserole that is so easy, so good and could be used for just about any bakeable vegetable.

Unanswered Questions

Cocktails at Home - Crawfish Omelets - Beyond Beef - Outrage Culture - Chicken, Kale and White Bean Soup - Who's Quirky?

A $15 martini proves, yet again, that we can do it better at home. Add the loss of a beer partner and our craft cocktail-at-home game has been rising. We talk about the top drinks we make at home, Aislynn's love/hate relationship with olives, bloody mary skewers, peeled oranges, and real margaritas. Our exploration of the world of plant-based meat rabbit holes into chickens-in-the-mail, empty beef shelves and fake chicken nuggets. Joe found an article that synthesizes his thoughts on social media...partisan politics slips in there. Somehow we touch on WAP, NWA, Madonna and persuasive communications. We wrap it up with building a Chicken, Kale and White Bean Soup with Mr. Picky who's never eaten soup.

Joe makes 'the best pork chops [Aislynn's] ever had.' Did you read that? The BEST pork chops. And that's on the heels of some amazing goat curry. Oh, what a week at The Dinner Table where we talk about everything: How a dirty restroom in a swanky restaurant got us thinking about our city's self-esteem; regional sodas and fast food; the tightrope we walk between a global-reach show and our local roots; a look back at our first time getting Indian food together; flat sugar soda; nude Halloween moon dancing; buying goat to cook; and so much more.

Poke Bowls To Go - Tromboncino Casserole - Headed to the Farm - Trading Cocktails for Flowers

Support the Show: The Virtual Tip Jar

BIG NEWS in this week's episode parked between two food adventures: The Journey of the Tromboncino and poke bowls to go. But first, Aislynn flirts with a bartender and trades drinks for plants. Those tromboncinos are 3' long squash and look like Gandalf's cane. They're starting to come in from the garden so it's soup and a casserole. Plant a tromboncino now! Then, it's just Aislynn and Joe so take out was the way to go. Poke bowls from start to finish.

But the news of the day is that we're moving to the farm. How does everyone feel about it and what, exactly, does it mean? Screaming to loud music, construction and figuring out the grocery store situation and that's just the beginning.

Beefy Eggplant Parmesan - Daughters at The Dinner Table - Burgers and Fries - It's Just Aislynn

Support the Show: The Virtual Tip Jar

After complimenting Joe's lovely eyes, Aislynn catches us up about her new business, It's Just Aislynn. The secret to this week's burgers and fries is rejecting the bag of frozen sweet potato fries and making them ourselves. Joe explains his double cook technique. The Table is a little bare lately with busy, absent kids until the house is suddenly filled with teen girls. We talk our open door/open house policy. Aislynn harvests the first eggplant of the season and they go straight into a Beefy Eggplant Parmesan.

Long Distance Chicken Enchiladas - The Pizza Crust Challenge Begins - DTT Ethics Council Meeting - Crushed Red Pepper - Planning The Oyster Boil

Support the Show: The Virtual Tip Jar

"Goodbye, Charleston. Hello, back to normal." If normal means planting, sending the boys another recipe, getting into a 'spirited debate,' accepting a challenge, and going to space. After not talking about the recent Presidential debate, Joe texts the boys another cheap (for them) meal to get in touch with their own home cooking: Salsa Verde Chicken Enchiladas. The Dinner Table Talks Ethics Council comes to order as Aislynn and Joe have a 'spirited debate' to choose the next entry. Another DTT Challenge begins when Joe dips his toe in grain-free pizza crusts. Egg yolk spectrum, too much pepper, having to repeat oneself and so much more.

Mediterranean Feast: Greek Steak Salad, Baba Ganoush, Basil Hummus - Healing Trauma - Steak, Baked Potato, and Salad - Touring a Local Dairy Farm

Support the Show: The Virtual Tip Jar

After celebrating the 21st birthday of her son, Aislynn takes us on a trip to Knolle Dairy Farm starting with a baby cow on the porch. She rustles cattle, visits the birthing room, and explains why and how the Knolles shifted from an old-school dairy farming model toward newer, more-ethical methods. After offending all 'basic food eaters,' we do it our way with a beef-heavy week at The Dinner Table. Joe details how he makes a steak, ignores Aislynn's furrowed brow and Aislynn declares her love of baked potatoes. A DTT repeat: our homemade ranch dressing. Later, Aislynn cons Joe into making a Mediterranean feast with baba ganoush, basil hummus, and Greek steak salad.

WIth teens around The Dinner Table often, sex is a topic that comes up from time to time. Nothing's off-limits at The Table and who better to equip the kids with the information they need? More females have experienced trauma than we, as a country, want to talk about and Aislynn leads us into a deep conversation about healing that trauma individually and as part of the universal collective that requires that healing.

Chicken Noodle Soup - Revisiting Masala - Morals v. Ethics - Hashing Out Freedom Harvest Island

Support the Show - The Virtual Tip Jar

Joe opens the show crapping on himself (a new fetish) by pointing out when he slips into his 'radio voice.' That moves us into a conversation about Joe and Aislynn's propensity to steal all the 'conversation oxygen' in the room. Joe cooks a chicken and Savannah uses half to cook us fettucini alfredo and Joe makes a delicious pot of chicken noodle soup with the rest. Later in the week, Joe revisited the masala from S1E51 adding some butternut squash puree ("what would happen?"). What happened was a delicious marriage of excellent Indian flavors and local food. Selena comes up for the first time in the show in TableTopics.

Freedom Harvest Island:

  • We revisit the FHI concept by hashing out some of the things that we weren't in agreement with last week leading to a DTT about masculine/feminine power, balance, and getting our bubbles united.

Unanswered Questions:

  • Brainstorming the UQ Stinger - Bird Calls
  • How did early man learn what to eat without dying or getting sick? Learned behavior and using our senses.
  • What do our college boys spend on food out when they're strapped for cash?

Season 2 Premiere - Cooking College Sausage - Freedom Harvest Island - Aislynn's Writing a Speech - Red Light/Green Light

Support the Show - The Virtual Tip Jar

It's our Season Two opener. An evolutionary moment where you hear the Dinner Table Talks you know and love, but with a whole lot of new. Like the notion of spreading the Dinner Table to our boys up at college. Joe photo-journaled how to make a quick-and-easy sausage taco meal for $7 a person which leads to a conversation about local food and budgeting. Like the journey for a new Unanswered Question sound effect when Joe has no direction leading to a conversation about red light/green light/yellow light(?) coasters on the bedstand. Like Queen Aislynn choosing 150 people for a Fury Road-style hippie, peace-and-love commune. Like the all-new Dinner Table Talks Code of Ethics (if you want to emulate us). Like Friends with Benefits COMING SOON!

And we're just warming up. Thank you for listening as we launch a whole new season of Dinner Table Talks.

Unanswered Questions:

Bhindi Chicken Masala - Indian Food Take Out - The Introverted Extrovert - Backyard Campaign Season - Aislynn's Morning Routine Interrupted

Our New Support Button <--Click to throw a few bucks in the tip jar; It's a Dagon Produce Giveaway **week!

Aislynn's morning meditation changed when that Monarch butterfly chrysalis popped and set the intention for the episode with seeds of emergence, the flow, and the BS blocks we put up. Take-out Indian food became a Bhindi Masala challenge...which was met with torturous, fragrant ease and joy. The okra was a little slimy (hate to say that since okra rules!) but that's fixable. This recipe is a must-try! We spend a lot of time on the last Unanswered Question: "Aislynn, what's an Introverted Extrovert, and why are you one?" Aislynn gets real about being the weirdest person Joe's ever met, but the answer is riveting. Then Aislynn says that the squirrels in the backyard can have the local politics...she's got bigger bhindi to masala! Top it off with an amazing TableTopics discussion about WAP, (d)evolution and one-issue voters and you got yourself the best year-anniversary-eve podcast episode you've ever heard.
