Welcome to my Slimming World Chicken Doner Kebab Fakeaway night in. A delicious homemade chicken doner kebab meal with lots of sides and so easy and quick to make too. Discover just how simple it is to make chicken doner kebab at home with all the trimmings.
Nowadays we have this huge obesity epidemic. There are more fat people than skinny people and it is killing us. All the fat in our diet, all the processed foods and don’t get me started with the lack of vegetables that way too many families have these days.
One of the biggest blames is the fast food establishments. McDonalds, Burger King, Pizza Hut, KFC and of course the British kebab and pizza takeaways.
Yet they were around 30 years ago and there was not as many fat people then. Yet its all their fault in the eyes of the rest of the world.
Fast food was available long before then and always will be. But there is one common difference. Back then fast food was a treat. Sometimes once a week or sometimes once a month. I grew up with the grandparents that would treat themselves to Fish & Chips on a Friday night. And that would be it for greasy unhealthy food. Yet now the takeaways are busier than ever with people reaching out for the phone and to ring up a takeaway at least 4 times a week.
Yes 4 times a week…..
And now the takeaways will do buy one get one free so that takeaway of a doner kebab and fries, is suddenly a doner kebab fries and a pizza and some onion rings and a full sugar can of drink. The calories have suddenly tripled in size and are happening 4 times as often.
That 750 calorie treat has suddenly turned into a 3000 calorie treat and 3000 calories 4 times a week. All of a sudden fast food is 12,000 calories a week and vegetables are only ever heard of in the garnish of a burger.
So no wonder we have such a problem.
I remember having a doner kebab takeaway when I was in my teens. I would sit on my tummy next to my mum and we would have a doner kebab each while watching a movie. It was the 90s and the chances are it would either be an Eddie Murphy or a Goldie Hawn film. With one portion of fries between us. That was it. There was not this greed like there is today and it would happen maybe once every 2-3 months. Not several times a week. There was no guilt in having it and you were not fat.
Apart from this you might eat out in a restaurant once a week and there would rarely be any other fast food. We still had several fast food places and there was of course temptation everywhere, there just wasn’t the greed like there is today.
But if you are on a diet like Slimming World and you are in need of losing weight, then I have a real treat for you in my Slimming World Chicken Doner Kebab Fakeaway. No guilt at all and so easy to make at home. I even have the sides covered. It is also very easy to make and you could do it like we do, where one of you is in charge of the bread and then the other the chicken, then share out the jobs of the sides.
Plus don’t forget you can save yourself a small fortune by making it yourself compared to the cost of buying a takeaway. We used just pantry items plus a couple of chicken breasts. We made the chicken doner meat in the Airfryer and then used a large wok for cooking the pita breads in.

Where do I start when I am talking about chocolate traybakes? They are just part of the diet, something that you grow up on and something that you adore from a small age.
It wasn’t until I was about 15 that I ever heard the word “brownies” and it wasn’t until last year that I had heard of blondies. You see I grew up in England and their idea of brownies (or their version) would always be either chocolate cake or chocolate shortbread made via a big fat traybake.
At school growing up you would have a really big slice of chocolate shortbread and it would be served with flavoured custard. My favourite was always the one with strawberry custard. It was the best. I sat next to a really skinny girl that hated pudding so I would always finish hers. Maybe why I was chubby and she wasn’t? But it was so good, it was worth the extra bit of puppy fat.
But I also loved the chocolate sponge cake version that they served up with warm chocolate custard. It would have a delicious sprinkling of icing sugar on top and have loads of chocolate. Plus the big difference between a British traybake and an American one would have to be the butter. Us Brits are butter obsessed and believe that everything tastes better if you have extra butter. So butter would come first.
Actually, better just say that I liked all desserts from school that were nut free. And that I was never bothered for the main course, but wanted to get my spoon into the dessert.
It would also be very simple to make the school puddings at home. Especially the chocolate shortbread. It had butter, plain flour, caster sugar and a cocoa and that would be it. It was also one of those things that I learnt first to cook for myself when I left home.
Here in 2017 though, I still have found memories of those school dinners. But now I am venturing into cooking blondies instead. Blondies are just like Brownies the only difference is that they are made with brown sugar being the star, rather than chocolate being the star.
Instead of cocoa you will add one main extra to the recipe as your classic add on. This could be chocolate smarties, chocolate chips, lemon or caramel. In our version though we have been greedy. We have gone with white chocolate chunks and milk chocolate chips. It gives it the total wow factor and makes you a massive batch of chocolate chip brownies.
We also found that because it’s a traybake there was very little washing up and it was very fast and easy to make. This recipe is certainly going to be a keeper and we will be going back to it time and time again.

Welcome to my Airfryer Baja Fish Taco Recipe. Delicious summer fish tacos with the help of our Airfryer. Loaded with fresh mango and fresh cod it’s a recipe keeper for your family.
I love white fish. I am the granddaughter of a fisherman. I used to love going out on the boat with him and the smell of the fresh fish he was catching. Even now when I am at the harbour and smell fresh fish I think of him.
Unless you are catching a high end piece of fish such as the fish caught on Deadliest Catch then the chances are is that the money will never pay well. It is a poor job with often a case of going weeks without a living wage and many fishermen work below the poverty line.
But the one perk is that you have an endless supply of fish to take home with you for supper. Delicious fish that you can make a huge amount of different dishes with. My grandad also grew his own fruit and vegetables in his allotment so this meant that the money spent on food was very, very little.
BUT OMG he made the best ever fishcakes, fish stew and I absolutely loved the way he cooked batter with a piece of fish.
Though if he had a few too many beers, then the food would be very salty as he would have added the salt more than once, because he would have forgotten in his drunken haze.
He also loved a variety of food in his diet and he would absolutely love these:
I could just imagine if he was a fisherman today, that we would be sat on his bench outside in the summer sunshine, tucking into them and commenting on how great Mexican food can be and why cod is just the best!
Sadly, he died when I was 11 years old at Christmas 1993, so this moment is not going to happen. BUT he will always be the grandad that made cod exciting.
My husband Dominic on the other hand, will only eat cod if it is battered, as he says like a typical Englishman that it’s the only way we should eat cod. Here in Portugal the way we eat cod is salted in a bake. A bit like how the Brits love their Oceans Pie but with some cheese in it. Bacalhau as they call it is one of my favourite Portuguese foods and my own personal way for enjoying cod.
But I talked him in to making a big batch of this and he was in love.
Though with a teenage boy at home too, I will be lucky if I get just one of them to myself:
To make these delicious Baja Fish Tacos we made our homemade tortilla wraps first, tossed our cod in a marinade, cooked them in the Airfryer, made our mango salsa and served it all up.
You’re probably expecting something over complicated but it really is not. It is simple, hearty and so easy for a delicious family supper. We original recipe tested this on a Thursday night when we just wanted something simple.
You can even be frugal load it up with extra vegetables and then you will need less cod in the tacos and then one piece of fish would stretch enough to feed six of you!
All 3 kids joined us in the kitchen and we love it like that as it’s so much fun.
Jorge at 9 months spent the time running around the kitchen in his baby walker and you need shoes on, so that he doesn’t run you over! Sofia spent the time trying to steal all the food and flooding the kitchen with her toddler washing up skills. But thankfully having Kyle around and him being a teen around means that you have someone that is exceptionally good at preparing the food and makes it feel like there are 3 adults present.
And that is how our kitchen rolls during recipe testing evenings!
I may add that they tasted delicious and it’s amazing what a great job the Airfryer does of making Baja Fish Tacos. It is like genius and is a must have if you want a really nice fish taco.

I don’t know which side of the fence you are on, but when it comes down to a choice between tomato ketchup and mayonnaise I am the mayo girl. I have never really got the addiction to ketchup and just can’t say no to mayonnaise. I even use it as a replacement to butter for my bread.
When I first tried this mayonnaise it wasn’t like any mayonnaise that I had ever tried. I have always had the cheap supermarket brands and not really thought much about the mayonnaise and always assumed that it was supposed to be really thick.
But last summer I did make my own and Kyle’s Mayonnaise is just like that and it got me thinking….classic shop bought mayonnaise is not great for cooking with, but a real mayonnaise like this one is just the right consistency for home cooking.

Perfect for sharing and your kids will love them! Ingredients Airfryer ¼ Shortcrust Pastry 200g/7oz Edam Cheese 2 Spring Onions Kyle’s Mayonnaise 1 Small Egg (beaten) 1Tbsp Coconut Oil 1Tbsp Thyme Salt & Pepper Instructions Clean and thinly dice the spring onion. Grate the cheese. Add to a medium mixing bowl the onion, cheese, mayonnaise, coconut oil , salt, pepper and the dried thyme. Mix well and make into 8 small balls and fridge for an hour. Roll out your shortcrust pastry and make into 8 nugget shapes. Make sure they are big enough for the 8 cheese fillings without being too big or small. Place the cheesy mixture into the centre of each of the pastry shape. Then seal it up so that there are no gaps. Using a pastry brush, brush egg over the pastry so that it will have an eggy glow when cooked. Cook in the Airfryer for 12 minutes at 180c/356f. Serve warm and while the cheese is still melting. Notes Edam is fantastic for this recipe as it is not too melty so is perfect for cooking with.The benefit of fridging the cheese mixture is that the coconut oil goes hard when cold and it stiffens up the mixture enough so that it wont explode later when you cook it.

On the 26th of September 2016 I achieved something that I once thought was impossible. That was to complete my family. After lots and lots of heartache my third and final child entered the world.
There was never loads of pregnancy pictures on Facebook or on Instagram. Not because I wasn’t excited because I was over the moon, but because of fear that something was going to go wrong and how would I cope with everyone’s sympathy. So old school friends were rather shocked when Dominic revealed my pregnancy at 34 weeks when hardly anyone even knew I was expecting.
But I was and the amazing Jorge entered our world in September last year:
He is now a beautiful soon to be 11 month old. He is mischievous just like his big brother, full of character like this sister and is at that wonderful part of his life when everything is an adventure as he learns everything for the first time.
One thing on his mind is always the food.
That crazy transition that as new parents you always have. They have started off with breast milk which is easy. You just stick them on the breast every 4 hours and then bingo they are fed.
But then four months hits and then six months and then seven months and then of course nine months.
All key times when you can introduce more and more regular food into their lives. You are still incredibly cautious to make sure it is a food that a young child can have and is not going to damage their development or make them sick. Days out and meals out have to be pre-planned. And something simple like dessert and summer food can be very much like hard work.
But some foods that I have always found can be perfect for them after 9 months is the following:
You just can’t go wrong and combined into smoothie ice lollies and you have something amazing for the little ones. Something that you know will give them something that is their dessert and then they don’t look at you so wantingly as you eat a piece of summer cheesecake without them.
So this is for Jorge. His first ever smoothie ice lollies and a batch that I am sure he will be sharing with his soon to be 3 year old sister. Though I think she believes her big sister role is to lick up any spillages.

An ice lolly, a popsicle or an ice pole is the exact same thing. The Europeans call it an Ice Lolly, the Americans a Popsicle and the Australians call it an Ice Pole.
The popsicle is a brand of American Ice Pops and if you asked for an actual Ice Pop many Americans would have no idea what you’re talking about.
No matter what you call them they are one of the same. Usually associated with lots of frozen fruit, along with liquid and sugar for a delicious summer treat.
Or if you are really lucky a fruit split, that is instead filled in the centre with ice cream.

Welcome to my Airfryer Chilli Cheese Dog recipe. A healthier version of the classic frugal sandwich with premiums sausages, homemade cheesy chilli and a sprinkling of salad. They’re served in our homemade hotdog rolls and are best for some summer party fun.
When I was growing up there was only one way that you ever enjoyed hotdogs….and that was out of a can with some baked beans and tomato sauce. They tasted good at the time and when you’re a kid, you really don’t know any better.
In fact they are like a heart attack waiting to happen. They have even been named by scientists and nutritionists as being worse for your health than smoking. Yet we wouldn’t allow our kids to smoke, yet many, many families feed their kids these hotdogs for dinner ever day.
Or if you don’t get them with the beans and tomato sauce, then the chances are, you have had them bought from the can in brine and then had them served into hot dog buns. You might even have had them with some mustard or some ketchup on top. Or the closest they have been to healthy would have been the onions that you had thrown on top.
Even worse – since researching for this Chilli Cheese Dog, I have even heard that the chilli comes out of a can too. I mean “hello” chilli is just so easy to make yourself and so economical too.
I am pleased to say that I have not touched cheap hotdogs for years. I am trying to think of the last time but can’t. But it must be at least 5 years ago.
Plus think of the costs for a big bowl of chilli mince vs the cost of one can and just think how many you can feed and how much you would have leftover for later.
But let’s face it, there is nothing that shouts out healthy. Everything says that you should avoid them like they are the plague and get them as far away from your kids as possible.
But we all love a chilli cheese dog, so how do we make the best ever Airfryer Chilli Cheese Dog and keep it fairly healthy for them at the same time?
Well what I do is use the best ever German sausages, they are Whole 30 friendly so you know that they are super healthy, along with homemade bread, homemade chilli and of course soft cheese. It gives you the complete wow factor and things are loaded up so high into your sandwich, that you will need to eat a bit with a fork because you can tackle it.
And OMG if you offered this to your kids when they come home from school, I doubt there will be a kid that would say that they would rather have a can option.
Plus if you want to win in the “team parents”, then the sauce made with the chilli cheese comes with loads of fresh and tinned tomatoes and I bet they wont even notice that it includes vegetables.
What Is A Chilli Dog?
A chilli dog is the generic name for a hotdog served in a hotdog bun and topped with delicious chilli mince, such as chilli con carne or bolognese with chilli seasoning. Often it also includes mustard, fried onions and melted cheese.
In many parts of the world the name varies but the main ingredients and the idea behind it often stay the same.
For example in the United States Of America they call it a Chili Dog, spelling it slightly different to the rest of the world with one less 🙂

Welcome to my Airfryer Butterless Strawberry Sugar Cookies recipe. A delicious alternative if you are out of butter and want some sugar cookies for supper. Made with a good balance of coconut oil and extra virgin olive oil it is a recipe keeper.
These came about because I had a terrible chocolate craving. I just wanted some cookies or some cake or some doughnuts. In fact I really didn’t care what I had, just as long as I had something……
Then I looked in the cupboard and I had zero butter, zero chocolate chips and absolutely zero soft cheese. You see normally if I have chocolate cravings I would have some homemade cookies or some homemade cheesecake.
I also live out in the country. We live in a beautiful little village., There is no café, a small church and several country cottages and villas. It is great for long walks and we have the most amazing views. I love nothing more than taking the kids for an evening stroll. But it does mean that you are away from shops, restaurants and bars. So we always make sure we have a chest freezer and many cupboards full of food just in case we are running low.
We bought the house because of its location. It is 20 minutes in one direction for the beach, the same another way for the waterpark, 10 minutes to our favourite café, 10 minutes to the local supermarket and 10 minutes to our favourite park.
This means that it is 10 minutes drive to get some chocolate, so if you crave some it just doesn’t seem worth the effort to go and do something about it.
In my cupboards I had a look to see what I had and all I had was:
And before I knew it, I had played around with the ingredients and made myself some homemade sugar cookies. The cookie batter itself was really greasy and not as delicious as homemade cookie dough but it was okay.
I crossed my fingers as they were cooking in the Airfryer and hoped for the best….I bit into them and I was pleasantly surprised by how nice they turned out. They were still a little too oily but they were perfect for the sugar cravings.
So I made another batch a week later. Less oil this time and made a strawberry version instead of a chocolate version. They were the most amazing butterless sugar cookies that I had ever tried. And OMG they were truly amazing and I just can’t believe that these were just from experimenting and from leftovers we had in the house.
They certainly make a totally different use out of strawberries and remind me of the local Portuguese cookies that we often have at cafes and restaurants.

Many of you know, that before we moved to Portugal in 2008, that we lived in England. I was born in London, raised in Yorkshire & had the first half of my 20’s in Manchester. If there was one thing that stays close to my heart then it has to be British baking.
My grandma taught me how to make the most amazing buns, my aunt taught me how to make shortcrust pastry and my love for baking started at a very young age.
I loved the biscuits the most. The Jammie Dodgers is my absolute favourites and I also love custard creams, party rings and chocolate digestives.
One of our treats when we were first married was the broken biscuit boxes from Aldis. It was a huge cardboard box and it would be filled full of all the top British biscuits that was not fit for general sale. They would be broken or missing a key element and were basically the factory rejects.
Plus because they were not perfect you got a huge box of them for a very low price.
Sadly we ate them way too fast and could go through a box in four days and it clearly didn’t help my abs, that were slowly disappearing with each of the biscuits that I was consuming.
But for the £3 that we paid for them, it cost about 90% less than what you would have paid for the biscuits if they had been complete. So it was one of those amazing money saving family things. We still get them every now and again from Iceland Portugal and they cost about 4,00€ so the price hasn’t changed that much over the years.
But it is thinking about those broken biscuits that has given me a totally different idea of how today’s recipe is going to roll. You see we live in a food blogging world where we want perfection. We want the perfect looking salad, the perfect biscuit and of course the perfect looking burger. We read too many magazines when the glossy pictures look back at us and we believe that is what life is like.
But in reality it is not. We have the dirty flour face on our kids, we don’t use a blow torch to make our food look good and we certainly don’t take 200 pictures of one meal, to then choose the best one for our blog.
So I gave my kids the ingredients list to make my custard cream cake and set them to work. They took the pictures, even though they never even used cameras and did the first attempt of the custard cream cake recipe, until I did the finished piece.
It was a bit of fun and we all had a great time giggling away, licking lots of cake bowls and having a great time and this is what true baking is all about.

I pointed out to Sofia that for the mould to work that it needed to be well oiled and needs to come away easily and for the custard cream print to show. She was a girl on a mission. She started with loads of butter down the bottom and sides, with plenty more butter in her hair and followed this with rubbing and shaking lots of flour in. The picture above was the end result.

Next was the custard cream cake out of the oven. Only problem with leaving under 16’s in charge is that they fail to check what time it went in the oven. This means that it cooked for about 10 more minutes that it should have done.

I have to say that I just LOVE Greek food. I am lucky enough to have visited several of the Greek Isles when I was growing up and loving the local culture and the local food.
My favourite island was always Crete as the food was always spectacular and I would love to visit again one day. The only problem though is that its so difficult to visit the Greek Isles from Portugal especially when you have 2 kids under 3. You have to get a connecting flight as there are no direct flights for us, plus the flights are always late at night.
Yet we can just drive for an hour in the car and we are in Spain or we can fly out to Madeira in an hour. So this means that Greece and the Greek Isles are often on the back burner.
But wow the food.
It is so family focused and everyone just thinks about family and eating together.
I love this quote from My Big Fat Greek Wedding:
“We are always together eating…eating….eating…”
As it is so true. Portugal which is also on the Mediterranean has always had a similar opinion on food. Plus I can imagine if any of my kids marry into a Portuguese family that it will be like the movie.
I remember disappearing on holiday in Crete when I was little and my parents going frantic. They looked everywhere for me and we were eating out at a restaurant at the time. In the end they found me in the back room of the restaurant with the kids and their family eating Greek food.
But when you think of Greek food it is often bumped up with oils and butters and carbs and is not exactly Slimming World or low calorie friendly.

OMG scampi and chips you say?
Talk about taking me back to my old British pub meals. The meals were never that great and it was more about being cheap and cheerful. But I still loved it and it was always about the amazing atmosphere that you got with being down the pub.
I can also credit the fact that I met my husband down the pub, my mum and dad met down the pub and so did my grandparents. So its certainly a place to go for true love!
I always remember though that there was a huge amount of traditional meals. There would always be scampi and chips, fish and chips, steak and ale pie, lasagne or even liver and onions on the menu. There would also be a large pudding menu too with everything coming with warm custard. You would then get a meal for a fiver and be proud of what you got for your money.
Quite often one of us would be having scampi and chips. Those little prawns deep fried and served with fresh lemon and chips was always a favourite for many people.
But in reality I have not been in a British pub for more than a decade. The last time I was in a pub was back when we lived in England.
It had the pub on one side and then a massive kids soft play centre on the other. Dominic would be watching the football while I was next door with Kyle having fun kids time. He was about 5 or 6 at the time when we last went there. Then we would meet up together and have a delicious pub meal afterwards.
It was bliss.
And I wish they had more like that in Portugal. We only have a couple of soft play centres. One has poor hygiene and the other is way too far away. But of course I can dream.
But even though I don’t have the soft play centres I can make the best ever Scampi & Chips at home in the Airfryer.
It of course has to be with real prawns and not that rubbish you buy from the freezers in the local supermarket. You have to know what you’re eating and this version is much healthier. And it tastes so crispy being cooked in the Airfryer.
And the chunky chips of course finish off the meal don’t they?
Though in the British pubs they would always be served with garden peas. Well I am not much of a fan so that side of things is going to be left out. But the delicious pieces of scampi will be there would all their glory.
What Is In Scampi?
With £50 million worth of scampi being sold every year in Britain its no surprise that so many people search every day on the internet to find out what is in it.
It should be either langoustine, langoustine tails or Irish king prawns which are all the smaller cousin of the lobster.
But in reality you’re more likely to find pangasius catfish which is mass produced in Vietnam and in Thailand. There is often as little as 7% of actual langoustines in scampi that is served in British pubs. The rest if made up of this Asian catfish and mass amounts of water. It is then breaded so that you don’t know any different.
Many scampi products served in pubs or purchased from supermarkets have more water than actual fish.
Many food experts name it as the worst type of processed foods you could ever eat. Especially because of all the additives included in it. The best thing to do (like us) is to make your own!

One of my biggest addictions as a child was the fizzy drinks. I loved lemonade, orangeade, cherryade, limeade and I could go on but you will probably get sick of reading the word ade.
I also doubt before the age of 16 that I had drank any water without complaining at the thought of drinking water.
I even remember being on a school trip when I was 10 and being disgusted by the fact that they were serving us all water with our meals.
I mean I don’t drink water and I hate water.
Well that was me back then anyway as a grumpy 10 year old!
Since then I have fallen in love with water and easily drink 3 litres of it a day, if not more.
I remember we used to always have a lot of orange squash in the house. It was the go to drink. It had no added sugar so it was considered to be okay, even though it was not great for you. But at the time nobody really told you any different.
But there was a plan B. Whenever we ate out I would have a can of Diet Coke and it was so refreshing and nice. Or if I went to the corner shop for some sweets with money from my Grandma I would always get a fizzy drink at the same time.
But there was one drink that always got my attention above all others and that was lemonade. I just loved my lemonade and could guzzle it if given the chance. The one that was in fashion during the 90’s was the pink lemonade and it just tasted so good and made me feel like I had something amazing while my parents drank their wine over dinner.
When we would head off on our yearly holiday I would stock up on the pink lemonade to take with me. But nowadays it costs a small fortune, has so many chemicals in it that I would never let my kids near it.
Well my option for them was to teach them how to make strawberry lemonade instead. It is full of additives, is made quickly in our blender and is so refreshing during these hot summer months.
It is like give it to me now! Or else!!!!
So get in the kitchen with your kids and make a delicious homemade strawberry lemonade in the blender and fill up your fridge with it. Your kids will think that you are amazing and might actually forget that a) it is good for them and b) that water is not that bad after all.

Add in the sugar along with 300ml of cold water. Blend until coarse. Add the lemon juice, give it another whizz and then serve with ice cubes. Notes I find that if the strawberries are not very sweet that you need to add a tablespoon of honey to it too.If you want a more citrus flavour then double the lemon and add a lime.This keeps really well in a big jug in the fridge for a refreshing drink throughout the summer. I can’t remember the first time I experienced British Scones, just that they were always part of my daily diet and were a staple for many Brits.
When I was 11 years old and started secondary school, it was the first thing you ever learnt how to make in cookery class because it was so easy. The basic mixture is made up of flour, butter and milk and a little seasoning.
I mean how easy is that?
Then if you want cheesy ones then add a bit of cheese, or more sweet ones add some sugar and raisins.
Or my favourite way to have them is to add some herbs and some mustard and a little wine and serve them over a big fat beef stew. Or if you were having an Irish stew to use some leftover beer instead.
But my best ever scone recipe moments are with my Grandparents. My Grandma would bake them with me. There would be a mix of the traditional rock buns or the cheese variety. So good and there was nothing better than tucking into a warm cheesy scone. Of course there was nothing better than a warm cheese scone with MORE cheese. As that was always the law. Or for the ultimate moment….more butter too!
Then when my Grandma passed away when I was 18 in the year 2000, My Grandad started taking me out for a mid morning scone. We would head out to a nice tearoom and have a cheese scone (or a piece of quiche) with a warm cup of tea. Talk about Yorkshire foodie heaven.

British Scones Vs American Biscuits
If there is one debate between British food and American food that needs explaining it has to be the British Scone vs the American Biscuit. I have heard so much wrong information over the years that I believe it has completely confused people.
I think they get talked about so frequently because of how alike they look, yet their flavours and uses are some what different.
American Biscuits tend to be used as an alternative to the British dumpling. It is served with a meal such as American Chicken & Dumplings. Where as the British dumpling will be served inside a beef stew or hotpot. The only similar British alternative is the cobbler scone that is used as an alternative to the dumpling in meals such as a beef cobbler.
British Scones comes in a lot of varieties. There are the rich scones with raisins that you often find in cafes, the cheese variety that many British kids learn to cook at school and plain scones that are used as a basis for many different recipes. There are of course many other varieties but those are the most common.
British Scones are most common as a savoury food as are American biscuits. British Scones tend to be very flour based and many are egg free and have a small amount of butter, compared to American Biscuits which has a much bigger buttery flavour.
Both the British Cheese Scone and the American Biscuit are perfect as a side for a casserole or stew. And are very similar in many ways.

Like many 30 somethings that grew up in the North of England in the 80s and 90s strawberry jam was a staple of the diet. You always had at least one jar of it in the door of the fridge and then whenever you had some spare bread, then out would come some bread, butter and strawberry jam.
It was always amazing and always felt like something luxury when it reality it was not. It was cheap to make, delicious and nearly always served for breakfast on a Saturday morning.
My most fond memories were always of my paternal grandparents serving it up. They loved their jam or marmalade on toast. On a Saturday they would start the day with a single boiled egg, followed by loads of buttery toast with lots of strawberry jam or orange marmalade.
I never cared much for the marmalade as I always thought that it tasted disgusting (and still do) but the strawberry jam with the melted butter was out of this world amazing.
It would have come from either the supermarket or a Yorkshire jam and pickle shop.
But on the other hand if you have fresh strawberries and an Instant Pot then making your own Instant Pot Strawberry Jam is an absolute must.
When we made our first batch in the Instant Pot we were so, so tired. It was a heat wave and the temperatures was well into the 40’s and we felt like we had been suffocating from global warming. We had also been up all night comforting our under 3s. As if there is something a toddler and a baby don’t like then it is super hot houses.
But we had a lot of strawberries that needed using up. It was a case of them being super hot and we needed to use them up before they turned and went mouldy. So here we are on little sleep in the heat making strawberry jam.
Thankfully the great thing about the Instant Pot is that it is quick and effortless. You probably put more effort into sterilising the jam jars or eating the jam than you do in making the jam.
Plus as homemade strawberry jam is often 5 ingredients or less than it becomes something super frugal to have in your kitchen.
Here in Portugal everything is always about frugality. So its no surprise that in the hospitals all they seem to give you to snack on is bread and jam. There was so much of it when I was in hospital having my kids that by the time I came out, I didn’t touch jam for a long time.
Well until now that is!
When we made this Instant Pot Strawberry Jam version it made loads of jars and gave us the chance to give some to our next door neighbour. She is a lovely elderly lady and is always giving us fresh fruit and vegetables from her allotment so it gave us the chance to give some back.
Plus even though I love strawberry jam I struggle to eat it all in a reasonable time, so a big batch like this would last me months.

I can’t actually take the credit for these delicious strawberry and cream crepes as I didn’t make them. I watched them been made and then I ate them! Which makes a change because 95% of the recipes on RecipeThis are personally recipe tested from me. But for today I got to have a day off.
Instead it was Kyle making these strawberry and cream crepes. My amazing 15 year old that loves to cook as much as his parents do, was showing me just how talented he is and being part of the latest recipe on the blog. Fresh healthy crepes cooked in the frying pan and then the filling made super fast in the blender.
At the time it was a Sunday morning and it was super hot and it was just one of those nice and tasty breakfasts that we should all have more often.
I sat on the chair in the kitchen as he crafted together some amazing crepes that were filled with soft cheese (Philly of course) along with honey and stevia, then loads of fresh strawberries. Because fresh strawberries rule the world right???
Then a sweet eggy mixture to make the crepes.
A very simple breakfast and a perfect start to the day. It is also rather quick to make too so perfect for if you’re in a rush. Though I may add it is hard to stop with just one of these strawberry and cream crepes as I want to eat loads and loads of them.
But first I am sure you’re probably wondering “why strawberries again”? After all they were only featured on the blog yesterday. Well we just LOVE fresh strawberries and right now in Portugal they are in season. They are everywhere and you can’t escape the beautiful red berry.
It is full of flavour and perfect for all kinds of summer treats.

I even got a shedload of strawberries from the market especially so that I could blog about them over 6 different strawberry recipes. We had an American cocktail on the 4th of July, Slimming World Eton Mess yesterday and then today these amazing strawberry crepes.
We got nearly 7 kilos of strawberries and in Portuguese culture got them for a real bargain. They cost just 3€ a kilo making them 15€. Plus we were charged for just 5 kilos and a couple of elderly ladies packed them all up for us and chose the nicest ones, as Sofia happily ate all the free cherries that they gave her. I don’t think I have ever seen her face so red!
We then brought them home and thought we had way too many of them, but then with how much Sofia loves her fresh strawberries we will be lucky if there is enough to make the recipes with!
In fact after we bought them she made a detour to the park to tuck into some before we went home:
We actually got our fresh strawberries yesterday and decided that the perfect use of them would be some fresh strawberry crepes for a summer Sunday breakfast. So out they came on a very warm late June morning. We have put Kyle in charge of them as he loves this kind of thing and he often has them turning out just so perfect. So if you want to teach your kids to cook then start out with something simple like this!
Crepes Vs Pancakes?
One question often asked is what is the difference between crepes and pancakes? Well the main difference is that crepes are made with plain flour compared to pancakes with self raising flour.
Though some recipes use self raising flour for both and then when they make crepes they just make them with much less batter.

I know I know another Airfryer chicken recipe coming your way. But I love chicken and I love my Airfryer! Plus every recipe you will find on RecipeThis.com are all ones that have passed the kids test so if they like it, then it must be good!
Chicken is so cheap here in Portugal and we often pay as little as 1,40€ for a whole chicken. We will buy 16 chickens from our local Makro and then put them in the freezer for whenever we want some. Then for making this recipe we used 2 large chicken breasts from a whole chicken and along with the bread it was a big portion size for the four of us for lunch.
If you have not tried chopping up a whole chicken yet then you MUST and here is a quick guide to doing so.
Also because chicken is so versatile you could get some chicken out of the freezer the night before for cooking the next day, have the Airfryer in mind, then the next day make a delicious random meal.
As I write this I have my Chicken Spiedie next to me. I can smell the warm bread, the garlic and lemon from the chicken along with a big scent of oregano. It is served with my favourite homemade mayonnaise and it feels truly amazing that my Airfryer is responsible for such a great lunch.
As I bite into it I can’t believe how good something so simple can taste. The chicken is so succulent and the bread is so soft. And I have the best ever husband in the world for making it for me!
I asked him how long it took him as something so good must take hours right? And I was happily mistaken when he said 5 minutes for the prep.
Plus if course making the marinade which I did myself. But it took me about 3 minutes for my part and I love the fact as a family that we can have some teamwork to get family food on the table.

What Is A Chicken Spiedie?
A Chicken Spiedie is an Italian sandwich most popular in New York. The chicken is chopped into chunky cubes and are marinated in a specific Italian marinade. Then it is cooked with skewers and served inside fresh homemade bread.
Other variations include pork, lamb, veal, venison or beef instead of the chicken.
The meat of choice is always chicken because of how cheap it is to buy. It is also commonly served in a warm Italian bread roll.
The same marinated chicken is also well known for being served in stews, casseroles, stir fries and summer salads.
There is also a festival in New York every summer where a cook off takes place for the best Spiedie recipe. This has happened every August since 1983.

I have this problem. It’s a really big problem…..I am addicted to cookies. They are just so addictive and I can never just stop at one.
The smell. The texture. The chewy sensation. The melted chocolate in the middle. Need I go on?
Even talking about it now and I want a big fat dark chocolate chunk cookie.
Maybe that is the reason why people with discipline are super skinny and I am not. But I would rather have cookies than be a size zero, as life is for living and life is for these dark chocolate chunk cookies!!!
Well can you blame me?
What I tend to do is overload them with vanilla essence, then break into them tiny little chunks of dark chocolate. I will buy a big bar of dark chocolate and then each square will be broken up into about 3-4 and then I will add them to the cookies last.
I will poke them into the top of the cookies and then they leave a nice surprise as you bite into them.
Or at Christmas what I will do is have a flattened out cookie shape, add a little dark chocolate and then wrap the cookie round it. That will leave a chunk of cookie in the centre, I will then turn it into a ball.
Then the person getting the dark chocolate chunk cookies will not know about the dark chocolate and then all of a sudden the ball will explode in their mouth to reveal the best ever chocolate sensation.
Dominic asks for these all the time, but I point out that we would end up the size of a house if we ate them all the time. Though I have to have a LOT of self discipline as otherwise I would eat dark chocolate chunk cookies all the time.
But best of all I cook them in the Airfryer. This is a fantastic way of doing things as Airfryer cookies taste so chewy, goey and crunchy all at the very same time. They really do taste 300% better than ones that are oven baked.
Plus if you are anything like us, if you forget about them, the Airfryer will stop after the time is up. Then you wont feel like such an idiot, if you normally burn them by forgetting that they are still cooking away in the oven.
Chocolate Chunk Cookies Vs Chocolate Chip Cookies
There is often a big fat cookie debate over whether or not to use chocolate chunks or chocolate chips.
Chocolate chunks give you a melt in your mouth sensation, but less of them feature in the actual cookie.
Chocolate chips however tend to be more expensive to buy, but more of them go into a cookie.
Both are perfect for the cookie addict and for the frugal family its best to use a mix of both or whether the cheapest type is.

I must say that I am totally and utterly addicted to rice. In fact I can’t remember a time when I didn’t like rice as it was always part of my diet and something that I always got excited over.
Though it has never been good to my abs. I literally look at a Paella and I have gained 9 pounds in weight!
But it doesn’t mean I don’t dream and always want rice. It just means that there is usually some cauliflower rice involved instead these days!
Looking back though my first memory of rice is probably in local restaurants.
I would have some pilau rice at the Indian restaurant with my butter chicken along with a garlic naan bread and it would be foodie heaven. Or trips to the Chinese restaurant would involve a good helping of egg fried rice.
Then as I got older I discovered a love for seafood paella and would be lost without the staple Spanish dish whenever I visited Spain. Even now when we cross the border into Spain I am always talking about where I am going to get my Paella fix!
But now as I find myself celebrating the 9th year of living here in Portugal and I am head over hills truly in love with the food and in particular the rice.
I have eaten out at many Portuguese restaurants and there are 2 staples you will always find with every meal. One would be the delicious Portuguese spicy rice and the other would be a Portuguese salad. Then whatever your main dish would be, would be served with these two.
There would be Piri Piri Chicken with rice and salad, steak with rice and salad, chicken kebabs with rice and salad. And the list goes on and on. Oh and I better not forget the bread and olives that you eat while you are waiting for your food to arrive. Clearly we are talking a lot of traditional Mediterranean food here and that you can see that the Portuguese wouldn’t last even a day on the Paleo diet!
The spicy rice would always have a kick to it, but would never be that spicy that it would blew your face off. I like to taste the flavours of my food without feeling like it is so spicy that you can’t taste what else is in it.
In reality what I like is to taste all those great flavours that go into the rice. The garlic, the saffron, red pepper, parsley, coriander and the green peas. Then of course the spicy element that brings the rice dish alive.
Then I tend to keep some in the fridge and serve some cold as it is perfect for the beach at this time of the year. Or take it to a friends barbecue for something different to taking a bottle of wine.
To make it into a cold spicy rice afterwards, simply allow it to cool overnight, then add 2 tablespoons of mayonnaise along with a little Greek yoghurt. Then you could also do the same with pasta dishes too.

We love the beautiful sunshine, the low cost of living and the low crime rates. Though out of everything we get most excited over the food. I mean who doesn’t just adore Mediterranean foods? They are nutritious yet they taste so good that you forget they are healthy for you.

I will be sharing with you my fail safe plan for a delicious Nandos whole chicken with the famous peri peri marinade. As well as this I will be sharing with you 2 different versions along with the dream Nandos sauce. You can then print it and save it and have a Nandos takeaway at home.
For me Peri Peri (or Piri Piri as I know it) is one of my favourite ever foodie moments and it makes me so glad that I can call Portugal my home country. I am a British Expat so I can’t say I was born with it in my blood, but I have called it home for the last 9 years and I dread to think in that time, how many times I have binged my way through the spicy Portuguese chicken.
Our favourite way to enjoy it is from our local supermarket. You see here in Portugal (well unless you live in a big city) there is no such thing as ringing up a takeaway. Those British days when you rang up a takeaway and pizza came to your door 20 minutes later are well gone. Instead you grab something to take away from the supermarket instead.
We will buy a Piri Piri Rotisserie Chicken, some fresh bread, some pate and some cheese. Then cook some potato wedges in the Airfryer and that will be our dream takeaway night.
We are also not alone with this though, as we also see a lot of Portuguese doing the same thing. Though many of them will add some ham to the list as they can’t live without their cheese, ham and bread.
So when I upgraded from the standard Philips Airfryer to the XL Philips Airfryer, I learnt that it was now big enough for this kind of feast.
How To Make Nandos Sauce
To start with we are talking about the marinade. That amazing homemade sauce that Nandos makes to go over your raw chicken before you cook it to crispy perfection in the Philips Airfryer.

Then tuck in and drink lots of wine! I also make a really big batch of the marinade below that is enough for several Nando meals and you can freeze the leftovers and then put it into small yoghurt pots for whenever you fancy a Nandos Fakeaway. I found that this recipe made 550ml of it, which is just short of a pint and you could use it for all kinds of Portuguese cuisine. Or if you fancy feeding a crowd one lot of marinade would do 10 chickens. Where do I start about Nandos and their Peri Peri Chicken? Well at the beginning of course….. The first time I heard about the spicy Portuguese chicken was when I first tried it in Portugal. We had recently moved house and had just started renting our first apartment here in Portugal.
It was in a small town in the Algarve in Southern Portugal and even though we don’t live there now, we are still just 10 minutes drive away if we fancy a chicken fix. The town itself has a busy Saturday morning market, a few shops, a beautiful river, a great park that the local families love but where you can exercise too.
We lived there for just short of six years and had a great time.
But I still remember the day we moved in as if it was yesterday. It was a bank holiday and unlike countries like in England when things are still open, if it is a major bank holiday everything is closed here and it is like a ghost town.
So we ended up having to drive hours into the city to get some grocery shopping as we had absolutely nothing in to eat.
On the phone to my mum, she said that we must try the chicken place within the week or else. Like my life depended on it. All she said is you will know which one it is and it cooks Chicken Piri Piri outside.
Well in our typical bad luck style we went to the wrong one. We went next door and it was horrible. And of course that was our first proper taste of it. As all we had tried before this was a bad campsite experience that was over spicy and with a huge amount of soggy horrible fries.
What we were looking for was the real thing. Something authentic that would get us excited about spicy barbecued chicken.
So eventually we made it next door to the right one. And we wasn’t disappointed. We had the most amazing piri piri chicken served with homemade chips, Mediterranean salad and served with bread and olives. Plus it was washed down with white wine for the perfect chicken experience.
We were hooked. So when people started talking about Nandos and Peri Peri Chicken we realised there really wasn’t much difference between one and the other. It was also nice to say that we had the real thing here in Portugal at a much cheaper price. To say that we were paying (and still pay now in 2017) just 8€ each and it includes drinks and desserts is truly magical and makes us so grateful for our life here in Portugal.

I never found anybody (well until I met Dominic) that would enjoy a good movie as much as me. So before I met him I would head to the cinema solo and enjoy back to back movies.
I think the first time I did this was when I saw Toy Story for the first time. It was in a boring small town in East England and I was on holiday with my parents and there was nothing to do. I had a wonder into the town and found a cinema. So I was happy. I sat down with my popcorn and was lost in the movie.
I was 13 at the time and I have seen 100’s of 100’s of movies since and had a LOT of popcorn.
But there is a big problem with popcorn as far as I am concerned…..It is either too boring (just salt) or too unhealthy (the caramel version). There is no in between that I could get excited about, well that is until I made this:

Though a bit of advice – keep it away from teenage boys (well if you want some) as they can eat a huge bowl of it in under 20 minutes. And then make you super jealous as they maintain their size zero body while you struggle to keep your flabby belly under control.
Plus you can change this for whatever cheese you fancy. I used some really nice cheddar cheese. Because being a British Expat that is the cheese of choice, but Swiss cheese like you would use in a cheese and ham toastie is equally perfect.

I have always loved the McDonalds chicken burger. For me it has been the simplicity that has always attracted me to it. How something can taste so good when there really isn’t that much to it. You have a delicious piece of breaded chicken, followed by a big portion of mayonnaise, a handful of lettuce and a nice bun.
Not really a lot to get excited about, but the McChicken Sandwich has always done it for me. I used to have them in McDonalds a lot in my teens and would have them with some medium fries and a milkshake. It was lunch time heaven and to show how long ago it was, it would cost just £2.99. They cost close to double that now in Portugal so times have certainly changed from the mid 90’s.
I notice that whenever you go the local shopping centre here in Portugal that its rare that you see a Portuguese family eating there.
The reason…
Fast Food at McDonalds is too expensive and is considered a luxury. You compare spending 5-6€ per person in McDonalds to eating at the local Portuguese café and there is a big difference. You can get a full meal there rather than a McDonalds that rarely fills you up for about 30% less. Or pay the same amount as McDonalds and you can expect to have a filling fairly healthy Mediterranean meal, including a drink and small dessert.
I am with them on that.
I can often go to McDonalds and end up spending 20€ and looking down at our tray and feeling like we really don’t have that much for our money.
But make your own McDonalds at home and its amazing how much money you can save, how delicious the food can be, how filling it can be and how much fun it can be to make one together as a family.

How Many Calories In A McChicken Sandwich?
A McDonalds McChicken Sandwich or a McRoyal Chicken (as they call them here on the Mediterranean) comes in at 357 calories. It is a lower calorie option for calorie counters compared to the Big Mac which is 563 calories.
However the McChicken Sandwich is unlikely to fill you up and keep hungry at bay thanks to it being just 131g compared to the 219g of a Big Mac.
If you added medium fries to a McChicken Sandwich then you would be looking at a total calorie consumption of 697 calories.

There is some people out there that like cheese a little and then there are others that like it a lot. My mum is one of those true addicts. She would eat it from dawn until dusk and then back until dawn again if she was given the opportunity. Normally served up with bread with big cheese boards or on toast.
In fact she was the first person to ever get me addicted to cheese. Starting off when I was in the womb.
I have fond memories of snacking on cheese with my mum, loads of cheese on toast and don’t get me started about trips to Betty’s for Welsh Rarebit.
I would say that out of everything I ever give up to do the Whole 30 (did I really do that for 30 days last month???) cheese was one of the hardest.
It is kind of that staple that is always in your fridge and makes meals taste just so good. How often do you really enjoy a meal and then remember that some cheese has been added?
Often during the Whole 30 the comments from the boys will always be that they loved the food, but it was missing some cheese.
But when you eat cheese you can often end up eating loads of hard cheddar cheese which is really not very good for you. BUT quality buffalo mozzarella is so good for you and is completely natural.
It tastes horrible on its own as it lacks flavour, but cook it and you have a cheese goddess moment. Then cover it in a gluten free coating and you have a great flourless option for a quick snack with your leftover cheese.
My kids also love it when I serve them up with sweet potato fries or if I cover other things in oats for a tapas moment.
Though the best thing is that I use the baking pan with my Airfryer as it fits perfectly inside the basket and then you don’t have to worry about the coating getting stuck in the basket wires of your Airfryer.
Burger King Mozzarella Sticks
Burger King Mozzarella Sticks come in at 350 calories for four of them. This works out at 87.5 calories each. They are deep fried and are often bought as a side dish for the Big Whopper along with French Fries.
However they are so easy to make yourself at home with a few simple smart ingredients. Homemade mozzarella sticks can be made gluten free and can come in at 66 calories each. This includes a generous portion of cheese for all us cheese addicts out there!
In our recipe a pack of four (the same size you get at Burger King) works out at 264 calories saving you 86 calories per serving.

One of my biggest ever foodie addictions in the Milner household is the Brazilian barbecue. If you have not experienced one then you MUST as it is a meat lovers dream. It is where they serve up lots of different cuts of meat in a garlic marinade at your table. They literally keep feeding you until you BEG them to stop.
It varies from restaurant to restaurant with what you actually get, but usually you can expect thick Brazilian sausages and several varieties of red meat. My favourite is always the sirloin that is so garlicky that I can’t stop at 3 slices.
But then the meal finishes on fresh pineapple. It is a case of you always make sure that you have enough room for the warm pineapple.
It will be warm rather than overcooked and will have a delicious cinnamon flavour. Dominic has never really been a fan of cinnamon, but with this it is a small portion rather than overpowering and tastes so, so good.

If you have read my blog for a while you will know that I absolutely love fries. My blog is famous for the Airfryer recipes and with Airfryers being originally made for fries, it is no wonder that I have a few.
I decided to put together some honey glazed pineapple fries, because I am often on Paleo and want something really sweet to eat that is Paleo approved without having to get out the coconut flour.
For many people coconut flour can be hard to use so if you can find a sweet alternative without using it, then it will make life so much easier. Plus I love coconut but I prefer it in a savoury dish (think Thai curries) rather than in Paleo cookies.

Whenever I see chicken breast at the supermarket I always get excited. That is because chicken is just so versatile and I can think of loads of different favourite recipes I can make with it.
I can make a stir fry, I can cook it in a coconut sauce, I can make a curry, I can serve it in coconut oil with garlic potatoes, I can make chicken fajitas, I can make chicken noodle soup, I can make a chicken pie. The truth is the ideas are endless.
But one thing that I am super addicted to doing with my chicken breast is breading it. My favourite fast food is KFC and the fact that I can use my Airfryer to make delicious breaded chicken instead of battered, means that I can enjoy healthier versions of the old classics. In fact by breading it like in this Chicken Schnitzel recipe you can be looking at reducing the calories by up to 70%.
Whenever I bread my chicken (which is never as often as I would like) I will often use this method in this recipe where I use gluten free oats and then it makes it completely Whole 30 and Paleo and perfect for the health conscious cook.

What Is Chicken Schnitzel?
A schnitzel is basically the German word for meat and is usually the type of meat also known around the world as scalloped. My cousin and I chat a lot on Facebook messenger. We put the world to rights, talk about what we have done that day, talk about what we are eating and what we are doing. Before we know it a couple of hours has passed and Dominic wants to know what is so interesting considering we just chatted the night before.
Sadly though, we live thousands of miles away from each other. She is based in Vermont in the US, while we are based here in the Algarve in Portugal. We haven’t seen each other face to face for 5 years and its so sad that it has to be like that, as I would love her to be on my doorstep.
But the conversation often ends up being about America Vs Europe. As there is a lot of cultural differences that we end up chatting about.
I am envious whenever she sends me pictures of her eating the latest flavour of Ben & Jerry’s (we only get about 4 options here in Portugal) and normally that picture will come through when I am craving some sugar during a Paleo/Whole 30 day.
Then I will talk to her about the low cost of living in Portugal, the amazing olive oil, our lemon tree, the street traders with the fresh oranges or the fresh seafood.
We will then get engrossed into each others cultures and it can be rather exciting even though we live miles away from each other.
One conversation that came up recently was the summer and we each do and what the local traditions are. Clearly I have priorities and I am spilling all the gossip about the super size doughnuts filled with a cutard and cream, that are sold on the beach for a Euro. And that on those days we make a picnic and hit the beach with our homemade quiche, sausage rolls and tuna salad.
I ask her what they have. To which she tells me that they have barbecues that you can use on the beach. You bring your cooler with your raw chicken and then start cooking.
This is something we don’t have (though I wish they did) and it got me thinking and inspired me with todays Greek chicken Souvlaki recipe. You see my lovely cousin writes the reviews for me for products that we work with that our US based. It saves on shipping costs, customs issues and we make an excellent partnership!
So after she put together some chicken and packaged it up for the beach (see the review further down) I decided that whether you Air Fried or barbecued these little Greek Chicken Souvlaki were just perfect.
Let me explain a little more.
Imagine that you are either going to someone’s house for a barbecue, having one at home and want all your food together, or like my cousin Tracy you are hitting the beach with your barbecue.

What Is Virgin Daiquiri?
A Virgin Daiquiri is basically a cocktail that is free of alcohol and has a strong citrus focus. The citrus fruit is commonly lime though you can often see lemon being used. After fruit the second most common ingredient is sugar.
There are many variations on a Daiquiri with some featuring just rum, strawberries and sugar and many having a twist on famous cocktails.
The name Daiquiri comes from an American mining engineer. He was working in Cuba at the time and named the drink after a local beach. It then became popular in America when it was tried out among the cocktail scene in New York City.
The drink was originally served in a tall glass packed with cracked ice and a teaspoon of sugar would be poured over the ice. It would then have fresh lime squeezed over the sugar.
It has been modernised a bit since but that is the basics.

Well its hard to believe that it is the 4th of July already. For us 4th of July tells us that summer is here and that we must wear our suntan cream at all times and avoid the sun at the hottest part of the day. We will get up early and then lock ourselves indoors once it hits lunch time and then enter the world again once it is early evening.
You see we grew up in England. Therefore unless there was a heatwave you would be lucky if you saw better than 25 degrees on a good day and 16 on a bad day. You would go on nice holidays abroad in order to get your sunshine fix.
But having spent the last 9 years living in Portugal it is very hot come July time. As I write this Virgin Daiquiri Recipe, we have just got back from a trip to the market for fresh strawberries. It was 40 degrees and at the time of writing it was the 17th of June. A heat wave for June and so, so hot.
So we always think that once the 4th of July comes it is going to be super hot everyday up until early September. And that you must have access to a really good beach or swimming pool to cope.
Also as a food blogger (and an internet marketer before that) with a big US customer base, I have always taken off the 4th of July. It’s a time to celebrate my wonderful American family and because our readers are not online we treat it as a day off.

My first ever experiences of homemade burgers growing up was one of two. Trips to McDonalds or family barbecues.
McDonalds was something that my Grandparents mainly took me to as my parents were not that keen as they realised how rubbish the food was and it was only ever done to keep me happy!
But then I got older and I earned my own money and when you were working about 5 doors away from McDonalds you could nip in there for your lunch in between shifts. It was great and I could get what I wanted and then know that I would burn the calories off at work. I would probably do this most Saturdays in my early teens.
I would have either the McChicken sandwich or the Big Mac and then wash it down with a delicious banana milkshake. It was teenage heaven!
Then also in the summer months there would be a family member having a barbecue. We would have thick British sausages, freezer bought burgers, hot dogs and loads of other things.
But that was about as good as the burgers got. I just didn’t know any different. A trip to Hard Rock Café in 2012 and then a trip to the US six months later soon changed my mind. I realised that burgers that have a little effort put into them, can be so truly amazing.
While we were in America we experienced some delicious burgers. We went to a 50’s style diner, we had big fat burgers at Planet Hollywood (the burger was amazing but the service was terrible) and my late uncle introduced me to Wendys. This was five years ago (we were there exactly 5 years ago to the date this was published). Even now Dominic still mentions that he wishes there was a Wendys in Portugal.
Though maybe a good thing, as we would only get fatter!

Featuring cheese and bread from your healthy allowances, absolutely no oil added and then crisped up in the Airfryer.
It works out at 1 healthy extra A for the cheese and then 1 healthy extra B for the bread. Easy to remember and perfect for if you want to save your Syns.

Welcome to the latest Podcast here at Food Blogging FM and today is all about a very simple look at food blogging and what you need to be doing in order to turn your zero traffic into a lot of traffic.
If you want to reach 1000 page views a day, 2,000 page views or even 10,000 page views a day then this is how to make it happen.
This is our own method for the success of Recipe This and we have used it to go from zero to a million page views and it works perfectly!
This involves a lot of rinse and repeat for each and every new recipe that you produce or any other post you put out on your blog.
None of it is rocket science and none of it is difficult. I find it is more of a case of people wanting to sell you software or programmes that make it seem like you can’t achieve decent traffic without it, or that you need to pay for an expensive Pinterest training programme when you really don’t.
Just follow these as your 3 step plan, like rules of your food blog and you will hit the high traffic levels before you know it.
Stage 1 = The Content
No matter what people tell you content will always be king and traffic will be queen. You have to have the amazing content in order for you to build traffic through to your content. You have to keep your readers engaged so that they will share your content and join your mailing list.
The idea is that every piece of content is your best, is of excellent quality and if you were the reader you would love it and return for more.
Next on the agenda is to see what your readers already like and give them more of the same. We are all in different micro niches so you have to ask yourself what you would be looking for if you were them and give them more of the same.

I started it on the 15th of November 2015 with a selection of back dated blog posts so that it didn’t look bare and so that I could start sharing my food experiences with my readers. That was the start and it is hard to believe that we have been at it for 14 months as it feels like it has been a lot longer than that.
But we have loved it and the best thing about our food blog is connecting with our readers and growing a business from scratch.

My blog is just over a year old. In that time I have an average of 350 shares for every recipe that I have published to my blog. Some have been better than that some have been worse. It is thanks to all this social sharing that I have excellent SEO results with SEO being the leader in the traffic that comes through to my site.
But if you want to safeguard 500 social shares to your next blog post there is nothing better than doing a round up. In case you’re wondering what a round up actually is, then it is those blog posts you see such as “top 10 chicken recipes” that feature recipe images and links to other people’s blogs.
People do them in the hope that the people featured will go on and share the content via their own social media channels and that it might just go viral and get them a lot of shares.
But I personally find that they can be rather time consuming and like them to be good quality content and this has meant that I have not got that many of them out.

Air fryers have actually got so popular in 2016 that even Paula Deen and Gordon Ramsay have started getting excited about them. Yet a lot of us out there still don’t own one and still make their trusted French Fries in the deep fat fryer.
With an air fryer it is a great diet aid. Instead of having a deep fat fryer with 2 litres of unhealthy oil in it you have the Air fryer that like it says cooks with oil instead. This means for the average portion of fries you will use about a tablespoon of olive oil instead.
This means that from a calorie point of view your French Fries have less calories than a jacket potato with baked beans. For those of you that are on a diet it can mean that you could lose weight by eating delicious homemade fries.
I personally hassled and nagged my husband into buying me one until he eventually agreed after I gave him a review of it in a diet magazine. He was amazed by the idea of it and a week later we bought our first Air Fryer from our local electrical store. But this is Portugal which means we pay a lot more for electricals and with the air fryer being so new and not having any competition it meant that we paid more for our Air Fryer than we had for any other small kitchen appliance.
But we saw the potential in it and knew that it would last many years.
