You can visit, enjoy a coffee and a bun and watch the entire days activities as the distillery team mash, ferment and distill tomorrow's whiskey and gin.

Barry took over as Master Distiller from his father Max Crockett, at the old Midleton Distillery; at the time when the New Midleton Distillery was in the planning and commissioning stage in late 1970's Ireland. I got to ask him about that time on this podcast.

She had a twinkle in her eye soon after I arrived and quickly asked Brian if she should pull out 'The Bottle'...... I won't spoil it, you'll have to listen to the end..... but I think they made my decade with the gift they allowed me to sample. Amazing...

I spent a couple of days last February 2023, in bitter freezing conditions, above in Killowen Distillery on work experience. Brendan Carty and his distiller Hugh allowed me to get stuck into every aspect of production that week. But on the last day, as we were falling upwards towards the distillery along the frozen mountain lane entrance, Brendan asked if I'd like to run his new micro 100ltr Column Still that day, a well as making the pot still cuts. Well, who could pass on that offer!
I strapped a couple of mics onto myself and Brendan for 4hrs and edited it down to just over an hour, but i think it gives you a good flavour of a day in Killowen Distillery.

Nestled in an celtic tiger era car sales showroom, off the M1 motorway from Dublin to Belfast is a rather special distillery doing rather special things. The Cooney family's Boann Distillery has come to prominance of late with their vintage mashbill programme, as part of Fionnán O'Connor's Doctoral thesis on historic mashbills. After my visit, I see why Fionnán had as much success as he did with his vintage multi-grain mashes. The equipment the distiller's have at their disposal is some of the best in Ireland, from their mash conversion vessels for mashing unmalted grains to the floor of deep fermenters always on the bubble. It's a little gem of a distillery and I thoroughly enjoyed exploring every nook and cranny of the place with my host, Peter.

Stephen has undertaken to restore and convert an old woolen mill into a distillery, but is operating his self-designed stills from a warehouse a feet away, on the site.
I had the opportunity to visit him and was hudely impressed with Stephen and the entire project. He is currently selling sourced whiskey under the May Loag brand and gin under the Old Carrick Mill brand, distilled onsite.

My Chat with David Walsh Kemiss from Ballykilcavan farm and brewery.
David is a 13th generation owner of Ballykilcavan, which is a working farm and brewey amongst other things.
He grows barley for Waterford Distillery and also owns Kylebeg Wood, from where Irish Distillers felled the Irish Oak for their Dair Ghaelach release a couple of years ago.
I had a great time having a look around his historic buildings and also visited one of the Dair Ghaelach stumps in Kylebeg Wood.

In a nod to the centenary of the 1916 Easter Rising, where the William Jameson distillery in Marrowbone Lane in The Liberties area of Dublin was used as a stronghold by the Irish Republicans. This landmark release of this 11yr old Single Pot Still Irish whiskey, in the heavier, oilier trad pot style stands out as one of the best Irish Whiskeys of the modern age imo. I spoke to Peter White (who was IWS vice-president at the time), Fionnán O'Connor (Author of A Glass Apart & cask committee at the time) and Willie Murphy aka PotStillWill (also IWS cask committee at the time) who were instrumental in getting this Midleton distillate bottled and released for all to enjoy.
