John Sundstrom, head chef and owner of the James Beard award winning restaurant Lark joins the podcast to discuss what local food means in the coastal areas of Washington, British Columbia and Oregon. John describes his journey to Seattle from Utah, his take on the different seasons in our region from a chef's point of view, and the core elements of Cascadian cuisine in his eyes. University of Victoria Professor Jason Colby comes on the show to discuss his book Orca: How We Came to Know and Love the Ocean's Greatest Predator. We learn about the world's first orca catcher/trainer Ted Griffen and discuss how the Pacific Northwest went from treating Orcas like pests to revering them as sacred animals in less than fifty years.
