National Muffin Day was on February 20th
Today February 20, is national muffin day and I thought this would be a perfect time for me to share one of my lower carbohydrate healthier recipes, which may be found in my book the Weight Management Revolution. This book is available as an e-book from Amazon.
Vegetable and nut muffins
1 cup almond flour
¼ cup cocoa powder
half teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
½ teaspoon baking soda
three eggs
¼ cup Stevia
2 tablespoons of butter melted
1 tablespoon milk
¾ cup grated zucchini
½ cup chopped walnuts and pecans
Preheat oven to 350°. Combine flour salt cocoa powder cinnamon and baking soda. In another bowl beat eggs and Stevia together for 2 to 3 minutes then add the butter and the milk. Great zucchini and squeeze out all of the extra moisture. Add the walnuts and the pecans. Stir the wet and dry ingredients together, just staring enough to combine. Fold in the zucchini and the nuts. Place muffin papers in a six muffin tin. Divide the mixture equally into six parts. Bake muffins about 25 to 30 minutes or until toothpick inserted comes out clean!
These muffins will provide 10 g of protein 10 g of carbohydrates of which 5 g is fiber, yielding a net carbohydrate value of only 5 g per muffin.
Every year millions of people make resolutions to fix or change something in their lives yet in spite of this emotional commitment 99 percent of us fail. Why? The psychological reasons for this must firstly be considered. We often make these resolutions as the result of some event such as the New Year, a health crisis, etc. but most of the time these resolutions are made out of an emotional moment and that emotional motivation can dissipate rather rapidly. In speaking of motivation, did you ever wonder why it seems so hard to find? We struggle to find the motivation to clean out the garage or paint the bathroom or change our diet or lose weight. The reason why motivation is so elusive is because in and of itself, it doesn’t exist. Motivation is the result or by product of something else and that something is desire. If our desire is strong enough and big enough the motivation to accomplish the goal will automatically be there. This desire must be more than fleeting; it must be bigger than self. The bigger the desire, the longer it will sustain motivation. Let’s take weight loss as an example. If your desire to lose weight is great enough, the motivation to do so will be there. Why do you want to lose weight? Is it for health reasons, longevity, and vanity? It doesn’t really matter what the desire is as long as it’s as intense as possible. When dieting one of the biggest nemesis to many dieters are food cravings, which can often be intense and overwhelming. We find this to be especially true for individuals who choose to embark on the low carbohydrate or Keto type diet. While these diets are extremely beneficial for the majority of overweight people, they can produce intense temporary food cravings, especially for starch and sugary foods. The reason for this is simple to understand. Most of these people had been on a dietary intake relatively high in carbohydrates and if they had been on a weight loss program before it was probably a calorie counting program, which is almost invariably high in carbohydrates because of their low calorie nature. Going from a relatively high carbohydrate, refined carbohydrate, sugar intake to a virtually no carbohydrates or very low carbohydrate intake can temporarily produce overwhelming cravings because the brain is still responding to high levels of insulin production. Insulin is the hormone secreted by your pancreas in response to carbohydrate and sugar consumption. When you go from a high carbohydrate intake to a very low carbohydrate intake it takes some time for the body’s chemistry to regulate and adjust. During that time, it is likely that your insulin levels are still elevated, which then triggers the brain’s appetite center to intensely crave carbohydrates and sugars in order to maintain blood sugar balance. These cravings can be so intense that they cause many dieters to abandon their otherwise effective and healthy weight loss program over and over again. Fortunately, there are several nutrients that can be of benefit to help stop sugar cravings. Carbohydrate and sugar addiction is very real and many researchers have compared it to the withdrawal from opioid medications and street drugs. One of the best ways to help the dieter to greatly reduce or eliminate these cravings for starch and sugary foods would be to add key targeted nutrients along with a full-spectrum nutrition product to their weight management program. Some of these key nutrients include chromium, vanadium, aspartic acid, and cinnamon extract to name a few.
