India pale ale is the style that built craft beer. With bold, hoppy flavors, it was distinctive and different and tantalized tastebuds of craft beer drinkers.

IPA is a historic style, but historic doesn’t mean static. Yes, there are many modern interpretations of IPA, but even historic IPA evolved over time, in response to tastes, wars, taxation and many other factors that drive beer makers and beer drinkers.

Guests:

Ron Pattinson
Ron Pattinson is a British beer writer and historian who lives in Amsterdam. He has wasted the last two decades of his twilight years researching and obsessing over many beer-related topics. On his Shut up About Barclay Perkins blog, he writes in excruciating detail about beer history, mostly of British beer styles, with excursions across the Channel into German Austrian, Dutch and Scandinavian beer history. The books he has authored on beer history are almost innumerable. They are mostly significant for their single-word titles, such as "Porter!", "Mild!" and "Bitter!" and their enormous page count. His published works include a book on brewing historic beers called "The Home Brewer's Guide to Vintage Beer" and the definitive work on Scottish beer and brewing, the snappily-titled "Scotland! vol. 2". The few copies of his books to be sold mostly reside in brewers' offices. He is married and the father of two sons in their twenties, neither of whom have yet bothered to move out, despite numerous hints.

Mike Karnowski
Mike Karnowski is the owner/brewer at Zebulon Artisan Ales in Weaverville that he rubs with his wife Gabrielle. He is the author of Homebrew: Beyond The Basics, home brewer since 1986, historical beer enthusiast.

A brewery’s trademark and its subsequent labels are its identity and protecting that involves many steps that involve beverage lawyers, government agencies, keeping tabs on other breweries and so much more. Today we speak to three guests with an eye on trademark protection, homage/parody vs. intellectual property theft and the legal ramifications of what happens when the judicial system has to get involved. In the early days of craft beer, fruit was added to beer to offer something to people who didn’t like beer. These beers were typically made with syrups added to a beer and not a lot of thought went into them. Today, breweries are embracing fruit and building beers around them. The fruit is the focal point of the flavor and with increased scientific knowledge of how to work with fruit, brewers are pushing and pulling levers - microbes used to ferment the beer, when they add the fruit and how much and for how long - to bring forward all the right flavor chemicals. Modern fruit beer is bursting with flavor.

Guests

Bret Kollmann Baker is a founder and the COO of Urban Artifact in Cincinnati, Ohio. Urban Artifact is the countries largest fruit beer only brewery, using over 1,000,000 pounds of fruit per year. With degrees in chemical engineering and brewing science, Bret has been able to help build out a brewery dedicated to handling massive amounts of fruit puree. In addition, Bret is the Beer Ambassador for Les Vergers Boiron, helping them reach more professional breweries with their fruit purees. In his free time, writing, hiking, and working on the Brew Skies podcast are his pursuits of passion.

5 years ago, Steven Smith-Hay started Vault City Brewing after experimenting with heavily fruited, mixed fermentation sour beers and spotting a niche with huge potential in an otherwise crowded market. As a keen home brewer, Steven saw the accessibility of Vault City’s signature style as an opportunity to reach avid craft beer fans and non-beer drinkers alike. He has since seen the company grow from just two full-time employees to nearly 30 across Vault City’s brewery and its two bars. Steven’s past life as an IT consultant seems a world away in 2023, which makes for a good story about boring day jobs and exciting hobby-turned-career opportunities that may have otherwise remained a daydream.

Spontaneous fermentation may be the most unique brewing technique in the world and the beers they produce are just as interesting, with many flavors not seen outside these styles. But “spontaneous” doesn't really tell you anything about what goes into making lambic, gueuze and American made versions from insane boiling hours to months and years waiting to see if the beer is actually any good to sell. Today we talk to two producers: one a classic lambic house from the Senne River Valley and the brewery that defined American sour brewing.

Werner Van Obberghen is one of the owners of Brouwerij 3 Fonteinen.

In 2013, Armand Debelder and Michaël Blancquaert called upon Werner to help shaping the future
of 3 Fonteinen. With his experience in strategy and with masters in finance and business economics,
he is now responsible with Michaël for managing 3 Fonteinen and its team of twenty. Michaël takes
care of the creative & operational side (brewing, blending, bottling, labelling) while Werner manages
the business side (administration, sales, marketing, tasting room).

Michaël and Werner continue the life-long craftmanship of Armand and – inspired by his values and
wishes – took 3 Fonteinen a step further. Longer barrel ageing, a local cereal and hop collective with
farmers, a network of families with Schaarbeekse sour cherries, a direct relation with some of the
most progressive biodynamic wine makers are just a few examples.

Jeffrey Stuffings grew up on the gulf coast of Florida. He studied government at Notre Dame and law at Boston College. While in law school, he discovered homebrewing and craft beer. He and his wife Amber moved to Texas 2007. Shortly thereafter, Jeff began working on starting Jester King with Amber (co-founder) and brother Michael Steffing (co-founder).

Today, Jeffrey focuses on beer making and Jester King’s operations. He and Amber live in the Dripping Springs, Texas area and have two children Laura and George.

Brewing can be environmentally intense. It makes use of agricultural products - which themselves can be environmentally intense - water and energy. And it produces waste: spent grain, dirty water and carbon dioxide, a greenhouse gas. But many small breweries see themselves as part of their communities and are therefore acutely aware of the impact they are having.

In this episode of the All About Beer Podcast, we take a look at how breweries are reducing their environmental impact. We only have one Earth, so let’s raise a glass to it.

When you talk about America’s greatest beer cities, several names immediately enter the conversation. We always talk about Portland, Oregon, Asheville, North Carolina, Denver, Colorado, maybe even Chicago. But one name that always makes the list is our home for this episode, San Diego, California. Long an ambassador of great beer with breweries setting the style for the rest of the country and indeed the world, San Diego has a storied brewing history that I’m excited to explore today. I also can’t wait to talk with our two local experts today as it’s been about a decade since I last graced the sunny shores of southern California.

To help us capture the essence of San Diego’s beer scene, we are joined by Jenny Mann and Brandon Hernandez.

Beer writer and marketer Brandon Hernández has been deeply plugged into southern California beer for more than a decade. He has helped direct marketing at some of the area’s best known breweries, including Stone, Alesmith, and Societe. In 2019, the long-time writer decided to focus his efforts on creating a new interactive resource for fans of the area’s beer scene with the founding of San Diego Beer News.

The site is a bit of a throwback to the earlier days of beer blogs and local brewspapers. Instead of doing deep dives into broad, weighty topics of national import, Brandon focuses on providing detailed and tangible information about San Diego breweries and beer bars. SD Beer News offers brewery maps, tap lists, interviews with local brewers and beer players, and lots of local beer news.

A native San Diegan, Brandon is one of the most informed sources you’re going to find about that beer scene.

When you research San Diego beer, Jenny Mann is one of those names that keeps coming up. For more than a decade she has worked for and with some of the top breweries and craft beer bars in the city. She has bartended, led brewery tours, taught draft beer maintenance programs, and helped breweries navigate the confusing world of social media. She is also a professional photographer who has captured many of the city’s breweries through her lens. Jenny is a brewery coach and well-regarded speaker who often presents to local brewery guilds. She and her partner recently departed for the Pacific Northwest but she still considers San Diego home and she has a wealth of knowledge to share.

We're excited to jump into an exploration of the history and present day bounty of the San Diego, California beer scene on this episode of Beer Travelers.

Beer festivals are a great way to try new beers, meet brewery representatives and travel to new places and they’ve come a long way from the days of drinking beers in parking lots.

Many beer festivals nowadays are not just about the beer and have seminars, food, culture, music, art and more.

In this episode, we talk to two beer festival planners, Day Bracey, who runs Barrel and Flow in Pittsburgh, Pennsylvania and Laura Lodge, who ran Big Beers, Belgians and Barleywines in Breckenridge, Colorado. They talk about what goes into making a beer festival a success, some difficulties facing festival planning, and the future of beer festivals.

Beers have been stored in wood for centuries. Historically, it was simply a convenient water-tight vessel. Today, brewers are using them because the wood itself adds character to the beer, whether it be subtle notes of the wood itself, flavors created by microbes living within the porous wood, or flavor fortification from spirits or wine previously held in those barrels. Today, barrels can be considered ingredients themselves and brewers can use them to add depth and character to their beers.

But working with barrels can is time-consuming and unpredictable. We talk with three brewers with substantial barrel programs about how they think about barrel-aged beer.

On this episode of the All About Beer podcast hosts Em Sauter and Don Tse dive into the wonderful world of Kolsch.

Kölsch takes its name from the Cologne (Köln in German) dialect, which is known as Kölsch. The beer is a pale yellow, soft, refreshing ale, sometimes brewed with a touch of wheat malt and usually lightly hopped. It can be quite sweet from the malt or perhaps a bit more bitter from the hops, depending on the brewer. At a glance, a glass of kölsch can easily be mistaken for a standard pilsner, and perhaps that’s done on purpose in these modern times. Much like a pilsner, a typical kölsch is about 5 percent alcohol by volume in strength.

The only beer protected by the European Union, kölsch lays claim to an “appellation controllée.” At the Kölsch Convention in 1986, 24 breweries in Cologne and nearby towns agreed that a beer could only be called a “kölsch” if it met the following criteria:

1) Brewed in Cologne or the immediate area

2) Top fermented

3) Pale in color and clear

4) Filtered

5) Brewed between 11 and 14 degrees Plato (a brewer’s measuring unit)

6) Served in a 20-centiliter stange (a tall, narrow, straight-sided glass)

In this episode of Beer Travelers, we visit Brooklyn, New York, with its frenetic pace to its quiet neighborhood bars, and all the haze, lager, and sour beers you could ever want.

Brooklyn was once one of the world’s great brewing centers. Home to nearly 50 breweries in 1900, the borough brewed a ton of beer under brands names like Schaefer, Rheingold, and many others lost to history. But that came to an end by the mid-1970s and the borough’s mashtuns went silent for the next 20 years. That was until 1987 when Steve Hindy Tom Potter decided to open up their own brewery in a warehouse district in Williamsburg. Named after the borough it inhabited, Brooklyn Brewery would go on to spread the word of craft beer around the globe and become one of the early pioneers of the resurgent modern American beer scene.

It took a while for brewing to catch on again in Brooklyn but slowly others opened, including Kelso and Sixpoint. And then there was the third wave of craft brewers, with names such as Other Half, Threes, and Finback. Today, Brooklyn's beer scene is top notch and the borough's bars and breweries make for an easy and exciting night out.

After falling in love with it after my first visit, I trek down to Brooklyn a couple times a year including in December for an annual holiday themed pub and brewery crawl. It remains a favorite place to visit and drink and I look forward to exploring it with two great local experts.

Courtney Iseman is a freelance writer who has written engaging pieces for Vinepair, Craft Beer and Brewing, as well as her own newsletter, Hugging the Bar. She's a compelling voice in beer and has written extensively about everything from diversity and inclusion to her favorite local Brooklyn pubs, including about the bar owned by our second guest.

Chris Maestro is a DJ, avid record collector, educator, and also the co-owner with his wife of Bierwax, a beer bar with outposts in both Brooklyn and Queens. The Prospect Heights based bar focuses on great beer and music, played analog style from one of Chris’s thousands of vinyl records that line the back of the bar. He was in the beer business before opening his own shop and is a Brooklyn native.

It’s a big borough and there’s a lot of ground to cover in this episode. So let’s get started with our tour of Brooklyn, New York, with writer Courtney Iseman and publican Chris Maestro.

The beer world loves hops, but fermentation produces aromas and flavors drinkers cannot get from raw ingredients, so on this episode of the All About Beer podcast our hosts talk with John Rowley of Rowley Farmhouse Ales about the wonderful world of microbes.

Among the questions answered:

What the hell is a farmhouse ale? Why is it called that?

Is it always yeast? Is it always Saccharomyces? Other microbes? Bacteria?

Co-pitch vs. serial pitch?

With mixed fermentation, is it harder to control outcomes? Do brewers have to blend?

Listen in and learn all about this wonderfully complex style.

Brussels is widely acknowledged as one of the world’s greatest beer cities. But according to today’s guest, author, podcaster, and beer writer Eoghan Walsh, it’s a curious distinction for a town that until recently only had a single brewery. On this third episode of the Beer Travelers podcast, we dive deep into the history and current state of beer and brewing in Brussels, Belgium. Eoghan has a point. Beer lovers, especially those here in the US, tend to canonize Belgium and Brussels. We speak adoringly of its cafe culture, the care with which each beer is served. Much of that stems from the unique place that a brewery such as Cantillon holds in the hearts of all beer fans. But in reality, the history of beer in Brussels has been up and down for the better part of a century. Even in more recent decades, the city’s beer and brewing scenes have been in great peril. Assisted in part by that adoration of beer geeks from around the globe, and of course their tourist dollars, Brussels is making a comeback. And today Eoghan Walsh walks us through the city’s vibrant and curious brewing history and updates on the status of things today and what is to come in its future. Eoghan runs Brussels Beer City, a great website you should visit, and he’s the author of a book of the same name as well as the more recently published A History of Brussels Beer in 50 Objects. For more on those endeavors, I recommend listening to the podcast that Eoghan and I recorded together back in January on Beer Edge. But today, we’re talking about Brussels and its beer scene and culture. It’s an incredibly informative conversation and it left me excited to return to Brussels and visit some of the spots Eoghan talks about.

We discuss Cantillon, Brasserie De La Senne, Le Source Brewing, and Mort Subite as well as many others during this podcast. Stay tuned at the end of the episode for one of my personal favorite suggestions for Brussels, another great place for a nightcap or to escape the crowds of the Grand Place and the tourist dens.

In this episode of Beer Travelers, we discover Brussels, from its robust days of brewing to its more humble yet growing modern times, we try to capture all the city has to offer in this episode.

For a beer lover this is the most wonderful time of the year. The annual rollout of Oktoberfest beers marks autumn (or mid-summer as can be the case with seasonal creep) and the start of the world's largest party in Munich.

While it's grand to put on the dirndls and lederhosen and hoist liters, the beer itself deserves a closer look.

On this episode of the All About Beer Podcast hosts Em Sauter and Don Tse talk with Megan Parisi of Boston Beer, makers of Samuel Adams Octoberfest. The beer is a hugely popular seasonal for the brewery and is often the gateway for curious drinkers looking for a little international flavor.

Denver holds a special place in my heart. I’ve watched as the local beer scene has grown and then exploded, with dozens and dozens of breweries cropping up in parts of town that didn’t even really exist, such as RiNo. Denver has long had a formidable beer scene but today it is one of the country’s best. And on this second episode of the Beer Travelers podcast, we’re going to talk with two local experts, Tristan Chan of PorchDrinking and Jonathan Shikes of the Denver Post. These two are as knowledgeable as they come and as we’ll hear, they are full of advice for planning your visit to the Mile High City.

Stay tuned at the end of the episode for my personal favorite suggestion for Denver. Hint: it’s the perfect place for a nightcap or to end your trip.

In this episode of Beer Travelers, we discuss all that the city has to offer in this episode so let’s start our trip to Denver, Colorado with Tristan Chan and Jonathan Shikes.

Our hosts are huge fans of brewery taprooms. They are special places where you can get a sense of the ethos of the brewery. It's also a place that you can hope the the beer is going to treated well and you might even meet the brewer or otherwise learn a few things about the beer you’re drinking.

"I love A GOOD taproom and I think there’s a difference between a GOOD one and one that feels cookie cutter," says Em Sauter.

This episode's guests, Chris Lohring & Kinsey Bernhard, are well versed in taproom aesthetics and hospitality and join the show with their expertise.

On the the third episode of the Brewer to Brewer Podcast Jeffrey Stuffings of Jester King slides into the host seat and welcomes Khristopher Johnson of Green Bench Brewing.

The two start off by talking about the evolution of the brewing scene in southwest Florida over the last decade before taking a trip down memory lane, highlighting beers that shaped their careers.

It usually does not take too long for brewers gathered together to start talking about lagers and this episode is no exception, as Stuffings picks Johnson's brain a bit on Postcard Pils, the process and the customers experience. From there they transition into farmhouse ales.

Work and life balance has emerged as an important topic on this show and Johnson shares his experiences and guide rails on how to be present as both while setting proper boundaries.

And before signing off the duo goes full ESPN and offers their outlook for the upcoming NBA season.

There’s an episode of The Simpsons, notes co-host Don Tse, where an alien says to pronounce its name correctly, it would have to pull out your tongue.

"I think Kveik is like that," says Tse on saying the yeast strain out loud.

The Norwegian farmhouse yeast seems to be everywhere these days after decades in obscurity from the larger world. Brewers of all sizes have embraced Kveik and all its strains to create ales and lagers of note and to embrace its hearty nature that results in fast fermentation times.

With nearly 10,000 breweries in the US, and countless thousands more around the world, it can feel next to impossible to figure out where to go. That’s where the Beer Travelers podcast comes in. Each episode we’ll take a deep dive into a local beer scene, highlighting its best breweries, taprooms, and local wonders. And I hope we’ll leave listeners feeling as if they’re locals equipped with a plan of where to have their next pint.

We’ve all spent enough time at home on our couches ticking off new beers; it’s time to get out and explore the greater world of beer.

On the first episode of the new Beer Travelers podcast from All About Beer, we start where it all began for our host Andy Crouch, his hometown of Chicago. And Andy has two of the best to help guide our exploration. Nik White and Chalonda White represent two of the freshest voices in craft beer. Chalonda, better known as Afro Beer Chick on social media, is a force of nature and her husband Nik is an old school Chicago beer guy who co-runs Chicago Beer Pass. Together, this dynamic husband and wife team are about as knowledgeable about their local scene as anyone we can think of.

We discuss all the great Chicago breweries, where to get the best lagers, IPAs, and sour beers.

On the first episode of the Brewer to Brewer podcast Tomme Arthur of The Lost Abbey interviews Marcus Baskerville of Weathered Souls Brewing.

Eventually the conversation turns to Black is Beautiful, the global collaboration that Baskerville and the brewery spearheaded. To date more than 1,200 breweries in 22 countries have brewed and released the beer which aims to “raise awareness for the injustices people of color face daily and raise funds for police brutality reform and legal defenses for those who have been wronged.”

Much has been said and chronicled about the beer and its history but Arthur wanted to go a little deeper and do a fresh check in. Hear their full conversation on the Brewer to Brewer podcast.
