Both Sides of the Table brings together two co-bartenders from wildly different backgrounds to discuss the woes of their careers. Clare and Grace will dispute over cocktail creation techniques, share stories of Stranger Dangers (situations brought on by certain customers, stocking issues, etc.), give their Tips of the Trade, and give an overall good, bad, or indifferent take on their experience. Grace, a 20-something sweet academic and religious type, and Clare, a 50 year old generation Xer that spent 20+ years in upper restaurant management are now a coworker match made in Cocktail Heaven.

Well folks, this is it! The end of the first season of Both Sides of the Table. Grace is moving to Atlanta for graduate school, and we’re reflecting on the past year of this podcast along with the past year and a half of bartending together. We hope you pop a bottle alongside us, and cheers one more time this season. 

We’ll be on a break for a few weeks as we adjust to the new recording dynamics, so be sure to listen to some old episodes in the meantime.

Hello again friends! It’s hot out, which means it’s time to get a little bit LIT! That’s right folks, this week we’re having Long Island Iced Teas. Listen to us discuss top shelf vs well liquor, corporate strategy, and more! Cheers.

Ingredients/Recipe 

1/2oz vodka
1/2oz gin
1/2oz rum
1/2oz tequila
1/2oz triple sec
Sour mix
Coca-Cola

Combine liquor into a tall/collins glass. 
Add ice. 
Fill glass with sour mix, leaving a bit of space at the top.
Pour a small amount of Coca-Cola to float atop the drink.
Enjoy!

You know him, you love him, you’ve heard of his celebration and following casualties; it’s Grimace’s birthday, y’all. Although the machine was broken, we had some tricks up our sleeve over at the Both Sides pod lab. If you’re willing to go through all the work, we hope you enjoy this Ramos Gin- I mean, ‘Grimace’ Fizz, as much as we did.

Ingredients/Recipe
2oz Empress (or Beefeater) Gin
1/2oz lemon juice
1/2oz lime juice
1oz simple syrup
1-1 1/2oz heavy cream
1 egg white (medium, probably)

Shake egg white in separate container till very foamy. You do need legitimate egg white, not imitation egg foam. Apologies.
Shake heavy cream with ice until chilled.
Strain.
Combine chilled cream, foamy egg white, and other ingredients, with one or two small pieces of ice. Preferably pellet. Enough to chill, but not to over-dilute.
Shake for as long as you can (maybe share the burden with a friend or two). At least 3 minutes.
Strain into a highball/collins glass.
Place in fridge for a few minutes.
Remove from fridge.
(Gently!!!) Add soda water and watch as the head of this drink rises above your glass without spilling over.
Add orange blossom water if you’re feeling extremely fancy.
After ALL THAT HARD WORK, please enjoy.

It’s time, y’all. We’ve talked about this drink for a while, but it’s finally time to have Amaretto Sours! Please enjoy these, and PLEASE enjoy as many dark maraschino cherries as you can muster. You might need them with our conversation this week. Cheers! 🥃

Ingredients/Recipe: 
1.5oz amaretto 
3/4oz whiskey 
2-3oz sour mix 
Egg white or imitation egg (Fee Foam, Better Bitters, etc.) 
Orange slice

Combine ingredients into a shaker and muddle orange slice/one cherry with liquid. 
With ice, shake until chilled. 
Strain liquid into one side of cocktail tin and remove the ice/leftover muddled fruit.
Shake once more, but “dry” (without ice).
Pour over fresh ice into a rocks glass. 
Garnish with dark maraschino cherry and enjoy!

Fill a rocks glass with pellet ice and strain cocktail into glass.

Ingredients/Recipe: 
1.5oz white rum 
3/4oz orange curaçao 
3/4oz lime 
1/2oz orgeat 
1/2oz dark rum 

In a shaker, combine white rum, curaçao, lime, and orgeat. 
Shake with ice and pour into a highball or hurricane glass. 
Top with dark rum as a floater. 
Enjoy!

As the Kentucky Derby rolls around, make sure you’re prepared with the best mint julep around! Oh, and a hat. Please don’t forget a fancy hat. 

Ingredients/Recipe:

2oz Bourbon
10-15 mint leaves
1oz simple syrup
Crushed ice

In a cocktail shaker, muddle mint leaves and syrup together. Add bourbon.
Add crushed ice to glass, then pour bourbon-mint mixture into glass. 
Stir/swizzle until properly diluted. 
Smack more fresh mint and add to top of drink as an aromatic garnish. 
Enjoy!

It’s the big one! The drink you either never see, or make over and over one night! Today, we’re continuing St. Patrick’s Month by celebrating with a nice and green Appletini. Enjoy while we debate the recipe, and even provide a mocktail version (although it requires quite a bit of effort!). Sláinte!

Ingredients/Recipe

Standard Appletini
2oz vodka
1oz sour apple pucker
Splash sweet/sour mix
Red maraschino or Luxardo maraschino cherry

Combine all ingredients, shake with ice and fine strain into a chilled martini or coupe glass. Don’t forget the cherry!

Mocktail
2.5oz apple juice
.5oz rose’s lime juice
.75oz jolly rancher syrup
Citric acid to taste
Red maraschino or Luxardo maraschino cherry

In a pan on medium-high heat, melt down Sour Apple Jolly Rancher or equivalent candy. Add an equal amount of water for a 1:1 ratio (1 cup of jolly ranchers melted, 1 cup of water), or add half the amount of water for a 2:1 ratio (1 cup of jolly ranchers melted, 1/2 cup of water).
Allow the syrup to cool.
Combine listed ingredients, shake with ice and fine strain into a chilled martini or coupe glass. Don’t forget the cherry!

  • 2 ounces light rum

This week, join us for a Collins matrix. You may be familiar with a Tom or Vodka Collins, so sit with us as we debate which is best! Will Grace continue to choose gin? Only time will tell. 

2oz gin, vodka, or bourbon. 
3/4oz lemon juice.

Combine your choice of liquor with the lemon juice and simple syrup in a cocktail shaker filled with ice.

Celebrate the Lunar New Year with us, as Grace sits back and enjoys Clare’s surprise: a Mandarin Ginger Sour. There’s a few more tricks up her sleeve, too!

1.5 oz Vodka. 
0.75 oz Cointreau. 
1.5 oz Lemon Juice. 
1 oz Mandarin Juice. 
0.25 oz Ginger Syrup.

Combine all ingredients into your shaker.

Ingredients/Recipe

2oz tequila: blanco, añejo, or reposado. 
Personal preference.  
SPL of lime, lemon, and agave. 
3/4oz orange liqueur: triple sec, Cointreau, Gran Marnier. Optional float as well. 
Optional Black Sea salt rim. 

In a shaker, combine ingredients to your preference. Shake with ice and party pour into a glass. 
Garnish with lime and enjoy!

Settle in for the holiday season and enjoy a Puerto Rican classic! No eggnog here, friends, today we’ve prepared Coquito, a cozy, creamy, coconut drink. 

Ingredients/Recipe:

56 ounces sweetened condensed milk

48 ounces evaporated milk

24 ounces cream of coconut (such as Coco Lopez)

4 teaspoons vanilla extract

4 teaspoons ground cinnamon

1 teaspoon ground nutmeg 

-Whisk together and simmer(do not boil)

-strain

-Add 750 milliliters (1 bottle) Puerto Rican rum

cinnamon sticks (1 per storage bottle )

Refrigerate and serve chilled.

“Shamrock” Shake:
1oz vodka 
1oz green creme de menth (you can use   peppermint schnapps and add one drop of green food coloring if you can’t find the green menth)
1 heaping scoop of vanilla ice cream 
Blend and enjoy 

Mudslide Shake
3/4oz Kahlua
3/4oz vodka
3/4oz Baileys
1 heaping scoop of vanilla ice cream 
Blend and enjoy 
* We used Baileys almond cream , vanilla vodka and instead of ice cream you can blend with a little ice for a lactose free fun version of a mudslide shake

.75 triple sec, Gran Marnier, Cointreau, or equivalent 
~1 or 1.5oz cranberry juice
Splash lime juice

Ingredients/Recipe 

Single:
1.5oz Tanqueray 
1.5oz pineapple juice 
2oz cranberry juice 
~1.5oz ginger ale 

Chill a coupe or tall glass overnight in the fridge/freezer. 
Simply pour all ingredients into the glass and enjoy. Stir if you’d like.

46oz pineapple juice
64oz cranberry juice 
2 liters ginger ale 
1.5 liters Tanqueray 

Prepare all ingredients by putting in fridge the night before. 
When ready to serve, just pour into a large punch bowl.

Ingredients/recipe
1 sugar cube
2 dashes angostura bitters
Optional: 2 dashes Orange bitters
2oz bourbon/whiskey/rye
Luxardo: original maraschino Cherry
Orange peel

In a mixing glass, add bitters, sugar cube, and splash water/soda. Muddle. 
Add bourbon of choice. Fill glass with ice and stir. 
In lowball, add large single cube. 
Strain into lowball, garnish with Luxardo original maraschino Cherry. 
Rim glass with orange peel, express oils on top of glass.
