This week, Chrissy welcomes Chrissy! Christina Mitchell describes herself as a fun-loving Kansas girl who loves animals and at one point in her life wanted to be a veterinarian but didn’t think she could handle having to euthanize animals. Chrissy grew up as a meat-eater questioning where her food came from, but went vegan in 2016 when a random slaughterhouse video played on her Facebook feed. Since then, she has protested with activists around the United States against animal cruelty at slaughterhouses, factory farms ,and pet stores, and she’s also been part of a number of pretty dramatic animal rescues. Mike and Sherry raised two vegan daughters, and among his many accomplishments, he was the undefeated pie-eating contest champion at Cornell. Chef Guy Vaknin is the founder and executive chef of City Roots Hospitality and based in New York City. For part of his youth, Chef Guy was raised on a kibbutz in Israel, where he was immersed in agriculture from a young age. He was taught how to cultivate food for the benefit of a community as a whole. To this day, Chef Guy believes that food is deeply connected to emotion, culture, and memory which is why he set out to create a restaurant group that would raise awareness about the interconnectedness of food and environment.
Chef Guy launched his first restaurant, Beyond Sushi, in 2012 as a tiny storefront in the East Village. As the success of Beyond Sushi flourished with several locations across New York City, Chef Guy’s vision expanded into a multi-restaurant group including Willow, Coletta, Anixi, and Sentir - each venue distinct yet unified by the goal to redefine vegan cuisine.
In 2012, Chef Guy was in the spotlight as a contestant on Fox’s Hell’s Kitchen Season 10. Sometimes, the fog is so all-encompassing that we can’t even see it. Derrick Broze discovered prayer and meditation in prison, when he was incarcerated for a nonviolent drug offense. Only then did he discover prayer and meditation and begin to emerge from the fog of depression and addiction. When he was released from prison after 18 months, he finally experienced true freedom - physical, emotional, and spiritual - and moved from a prison of self-hatred to the freedom of self-love.
Derrick is an investigative journalist, author, documentary filmmaker, entrepreneur, public speaker, and activist. Since 2010, he has worked to empower Houstonians by exposing corruption and focusing on solutions. No discussion of the animal rights movement is complete without a mention of People for the Ethical Treatment of Animals. Notorious for its undercover journalism, graphic videos documenting animal abuse, and willingness to disrupt commonly-held human attitudes and beliefs regarding non-human animals, PETA is loved by many and not so loved by many others - and no one bears the brunt of the pushback more than founder Ingrid Newkirk.
A true warrior for animals, Ingrid happily takes the good, the bad, and the ugly in the interest of spreading the message of kindness, compassion, and basic decency toward non-human animals. Her heart still breaks into amillion pieces every day at the suffering she sees, but she's not going to just sit around and cry about it. Instead, she continues to turn sorrow and anger into action for animals - and inspires the rest of us to do the same.

Ingrid Newkirk, full bio:
Ingrid Newkirk was born in Surrey, England, and moved with her family to New Delhi, India, when she was 7 years old. There, she assisted her mother in volunteering for Mother Teresa and various charities, and those early experiences informed her view that it doesn’t matter who is suffering, only whether you can help them.
In 1970, Ingrid took a litter of abandoned kittens to an animal shelter—and that soon led to her resignation from the brokerage where she had worked. She then took her first job working in behalf of animals, which led to leading roles in humane law enforcement. Her experiences along the way—including finding a fox and a squirrel caught in steel traps, discovering a pig left to starve on a farm, and inspecting laboratories and circuses for the government—inspired her to launch PETA in 1980.
At that time, researchers were experimenting on chimpanzees in squalid laboratories, pigs were being slammed into walls in car-crash tests, and dogs were being shot in military exercises. But PETA's landmark victories—as well as the media attention that has accompanied them—have led to a huge change in public attitudes, and the victories keep coming.
These days, the demand for vegan food has skyrocketed (e.g., Taco Bell is testing a Vegan Crunchwrap this week), Ringling Bros. has reinvented itself as a stunning animal-free circus, nearly every major fashion brand has gone fur-free, and the U.S. Food and Drug Administration is no longer required to mandate archaic and cruel animal tests for new drugs.
Ingrid has authored 13 books and been profiled by The New Yorker, the Los Angeles Times, and Fortune, which dubbed her the “Mother Teresa of rabbits.” She was also the subject of HBO’s award-winning documentary I Am an Animal and was named one of Forbes’s 100 Most Powerful Women.
How much truth can you handle? Reverend Shad Goverland, brother of television producer and The Highwire host Del Bigtree, was born and raised in the Unity Church, a religion founded in the 1900s by a husband and wife who were pioneers in the vegan movement. At the age of 12, after hearing his father, a Unity minister, give a sermon about oneness with all creatures, Shad became a committed vegetarian. Decades later, his wife, Erinna, introduced him to veganism, and from then on he's been not just preaching the vegan message but living it. He went on to become President and CEO of Unity, continuing to speak out for animals, truth, and freedom. Tennesseeans are known for their grit, and Bobbi Jo Hemmen is a living example of true vegan grit! Bobbi is a Nashville native who lives in Whites Creek, in the house my dad grew up in. After losing her job during the COVID years, she statted her own CBD baked goods business, Hempcetera. She went vegan in 2022, when she was diagnosed with ovarian cancer. She refused chemotherapy and instead changed her lifestyle, and she's now as healthy as she's ever been -not to mention, cancer-free! At the age of 48, she is living her best life with her three dogs and her amazing boyfriend.

Welcome to the fourth and final week of the Vegan Posse Tennessee Series! How many doctors do you know who take it upon themselves to organize plant-based potluck dinners to help weave veganism into the fabric of community life? I know of exactly one, and his name is Dr. Scott Stoll.
Dr. Scott Stoll is board-certified physician specializing in sports and regenerative musculoskeletal medicine and is a recognized as an international leader in lifestyle medicine and whole food plant-based nutrition. He is the co-founder of the Plantrician Project, the International Plant Based Nutrition Healthcare Conference, the International Journal of Disease Reversal and Prevention, and the Regenerative Health Institute, a unique collaborative project with the Rodale Institute that integrates a regenerative vision of human health, agriculture, and the environment. He was a member of the 1994 Olympic Bobsled team and served as a team physician for the United States Bobsled and Skeleton Team and Lehigh University. Dr. Stoll served as a member of the Whole Foods scientific and medical advisory board and consults with healthcare organizations and leaders globally to integrate lifestyle medicine solutions.
Every year Dr. Stoll hosts the very popular one-week total health immersions in Florida and helps attendees recover lost health, overcome addictions, and restore emotional balance. In addition to authoring numerous books, scientific articles and speaking internationally, Dr. Stoll has appeared on a wide variety of national TV shows including The Dr. Oz show, hosting a 2018 PBS special, “Food As Medicine,” and numerous documentaries including The Game Changers, Eating You Alive, Disease Reversal Hope, Plantwise, and an upcoming TV series based on his health immersions.

It's Week 2 of the Vegan Posse Tennessee Series! Native Tennesseean and longtime vegan Kara Carden is a homeschooling mother and community organizer. Daughter of chart-topping country music star Ronnie McDowell, Kara grew up touring the country and occasionally selling merch for her dad. She went on to become a freelance journalist and travel writer and, later, a homeschooling mom. In 2010, she founded Nashville Waldorf Homeschoolers, a non-profit nature- and art-based enrichment program.
Kara has served as a volunteer peer counselor and certified Attached at the Heart Educator for Attachment Parenting International for more than 15 years. She recently accepted a job as Communications Director for WeKnow, LLC., a peace-provoking company disrupting industry norms in divorce, real estate, and finance. In her freet time, Kara enjoys gardening, hiking, floating rivers, hammocking with her husband, pondering metaphysics, and sharing helpful information.

Who better to kick off our Tennessee series than Tennessee-born-and-raised Robby Cox and his business partner AND life partner, Ananya, founders of vegan meal prep company SUNstenance?
Ananya has been practicing and working in the field of holistic wellness since her teenage years. In East Harlem, Ananya worked for Soluna Holistic Spa teaching yoga classes and developing the juice bar and vegan eatery. She has completed over 800+ hours of Yoga Teacher Trainings in Hatha, Vinyasa, Kundalini, Kriya and taken additional courses in Ayurveda, pranayama and prenatal. She began studying Ayurveda in 2012 in Laughing Lotus Yoga School, and around the same time dove into Macrobiotics and Eastern Medicine. She began using food to help treat various ailments relating to both physical and mental health. Ananya moved to India where she worked with the sustainable Ayurvedic organizations Gotirthashram & Panchgavya Healthcare India doing research and development, marketing, and product creation. In the Himalayas, she deepened her spiritual practice, and after six years, returned to Tennessee, starting Ananya Wellness offering holistic education, yoga/ meditation classes and creating gourmet holistic food and herbal treats. She began working as the holistic chef for Mobile Macro Meals, a macrobiotic vegan company. She and Robby met and started SUNstenance, LLC and are now offering vegan, holistic meal prep, catering, events and retreats and educational classes.
Robby began learning the truth about health and wellness in 2009 while facing a life-threatening situation in which western medicine failed him entirely. After malpractice by a trusted family dentist left him with epileptic seizures and continuous pain, he came across the documentary The Beautiful Truth, which sent him down the path to undoing the damage caused by not only this procedure but the lifetime of assault on the physical, mental and emotional body that is our modern life. Around this time, a family friend gifted him a tiny book called The Pocket Tibetan Buddhism Reader. Upon reading a single page regarding the practice of ethical vegetarianism, he adopted a vegetarian diet on the spot. Robby’s philosophy on health and nutrition has evolved continuously over the years, but his passion for ethical veganism has only intensified. His research now focuses on the common “pillars of health” that are shared in many ancient traditions prioritizing adequate sleep, hydration, sunshine, fresh air, movement, optimized plant-only nutrition, and the careful application of fasting and cleansing modalities to achieve health and wellness.

How does a person go from Burger King to vegan in two hours? A pre-screening of the classic animal rights film Earthlings did it for Carlos Garcia over two decades ago!
Carlos has been playing drums since he was a kid in New York City. He grew up in a large, music-loving family listening to salsa and Latin music every day. Carlos is constantly recording and creating music with many diverse artists around the world. When Carlos isn’t playing music, he’s busy growing his own food and being an activist for peace, animal rights, human rights, GLBT rights and holistic, vegan living.
Carlos lived in Los Angeles most of his life and went vegan over two decades ago after seeing an early test screening of Shaun Monson’s film Earthlings and realizing he was paying to do horrific things to these beautiful, innocent creatures and left the theater vegan. He literally went from Burger King to vegan in two hours.
Carlos is now 66 years old, and no one ever guesses his age correctly. He considers himself living proof that keeping your spirit and body clean of torture and poison, does a body (and spirit) good.
Carlos was living on Maui, Hawaii for 16 years doing animal activism and being percussionist for Mick Fleetwood’s side project, Mick Fleetwood’s Island Rumours Band. He has spent the last year in different parts of California, Portland and New York soul-searching after the loss of his mother and the recent devastating fires on Maui. He's in NYC right now to help raise funds for an upcoming vegan feature film with Victoria Moran called Miss Liberty. Simultaneously, he's promoting his music video "It’s OK To Love Me" and putting together the live band.

What started out as an ambitious plan to travel the world for 22 months became a transformative exploration of our relationship with animals, food, and one other. The story of this journey makes for an impassioned and personal, yet thoroughly reasoned, plea for a kinder, more just, and merciful world.
Lucas Spiegel is a lifelong animal-lover who has been vegan for over 30 years. After studying and practicing architecture in the U.S., Canada, and India, Lucas left it all behind in an effort to rethink what it is to live a meaningful life. Since then, he's traveled the world, started a dog treat company that donated all of its profits to farm animal sanctuaries, published a vegan travel memoir, and continues the process of learning and reinvention. Along the way, he enjoys playing frisbee, making things with his hands, and spending time with his dog, Rosie. They're currently riding out the winter in a village on the northern coast of Colombia.

Even for docs, losing weight isn't easy! Scott Harrington, D.O., is a board-certified Family Medicine physician with over 17 years of experience. He started his medical career using standard treatment methodologies. Then, in 2012, Dr. Harrington personally adopted a plant-based diet and saw dramatic health improvements in his energy level, athletic endurance, and recovery time. His weight, blood pressure, blood sugar, and hormone levels all normalized. This personal transformation convinced Dr. Harrington to shift the focus of his medical practice to teaching patients what he had learned.
Dr. Harrington went on to found Vegan Primary Care. The plant-based diet had impressive effects with his patients, many of whom were suffering with chronic illnesses. In fact, a large number of patients were able to stop their medications altogether.

Working as a microbiologist with a global pharmaceutical company in the early 1990s, JoAnn Farb toured lab animal testing facilities, pharmaceutical manufacturing plants, and factory farms and came face-to-face with the fact it was her own (and all of our) food choices that were driving the horrific experiments being conducted on non-human animals. She went vegan in 1991, without ever having met a single other vegan! Now, she lives in the woods in Kansas with her husband and dog,. Their two grownup vegan-since-birth daughters live nearby.

Adam Woods, M.D., is a private practice "Family Psychiatrist" in the Iowa City area, meaning that he sees "all ages" and "all diagnoses." He holds a Bachelor's Degree from Drake University, a Master's Degree from Princeton University, and a medical degree from Duke University. He completed his Psychiatry Residency at the University of Iowa.

Peggy Young grew up in northern Wisconsin where a picnic is not a picnic without hot dogs and hamburgers on the grill and a jelly mold of marshmallows for dessert. Becoming vegan was foreign territory.
Peggy was diagnosed with stage 3 ovarian cancer in 2010 at the tender age of 53 - far too young to say goodbye to her two daughters and her new husband. Her research revealed that a whole-food food plant-based diet was her best bet for living to enjoy her later years. She tried it to see if it would positively affect her cancer.
Now, almost 14 years later, Peggy is still here and enjoying life at the age of 66! She loves her family and her vegetables, and she's shifted to helping others change their lifestyles to optimize their lives.

Looking for a living example of initiative and self-determination? Look no further! In May of 2013, Paul Chatlin was diagnosed with heart disease and presented with two options: bypass surgery or something called "plant-based nutrition." He opted for the latter.
The very next day, Paul consulted with Dr. Caldwell Esselstyn, who gave him the lowdown on whole-food, plant-based eating. Incredibly, after just three weeks, Paul's angina disappeared. His cholesterol levels plummeted from 350 to 92, and he lost 75 pounds in four months! Not only that, he kept it off.
Paul promised himself that when he felt better, he would put together a support group to help others. He contacted Dr. Joel Kahn, who agreed to assist him on the journey. In February 2014, he hosted his first Plant-Based Nutrition Support Group (PBNSG) meeting, and 123 people attended! As of today, PBNSG has helped more than 150,000 people, offering outreach programs that are always educational and plant-based.
Paul's current project is creating an alliance called Sage Circle Alliance to bring together like-minded organizations and individuals.

SoCal native and longtime vegan Rich Rees started his music career as a professional drummer and concert producer. He went on to become a successful booking agent, working \with such artists as Colin Hay, Wynonna Judd, Michael McDonald, Alan Parsons, Human League, English Beat, Dave Davies, and many more. Rich was the assistant to the music director for President Bill Clinton's Arkansas Ball at the 1997 inauguration, and later went on to produce a Classic Rock all-star show that toured North America for nearly three years.
In 2006, a the height of his booking career, he produced a sold-out 80s show at the legendary Hollywood Bowl In Los Angeles, featuring The Human League, Psychedelic Furs, and ABC. He later produced a tour called Classic Hits Live that showcased artists from the 70’s era, including Ambrosia, Christopher Cross, Edgar Winter, and Dave Mason. He toured with that show throughout the world for nearly ten years. It was one of the first Yacht Rock package shows, that spawned the genre and has since become a household term.
Rich has since retired from the mainstream music business and in 2020, hw moved to the Nashville area. He isagain playing drums, working with several local artists in the Conscious Music scene. He's started a new venture called Conscious Music Nashville and is promoting Conscious Music shows throughout Nashville and surrounding areas.
After a number of extended stretches as a vegetarian, Rich became a full-fledged vegan after attending a two-week vegan cooking course at the Vegan Fusion Academy with chef Mark Reinfeld. He has been vegan now for over a decade and still cooking pretty much every day. He livesjust south of Nashville with an epic garden, and he's learned to make Old World styIe sourdough bread with an ancient culture from Europe. His vision is to open a vegan cafe and bakery in the near future and bring healthy organic food to his neighborhood.

Harold Brown is a former beef and dairy farmer. He was born on a cattle farm in Michigan and spent over half his life in agriculture. After a personal health crisis forced him to confront the incidence of heart disease in his family, Harold began eating a plant-exclusive diet. Living in great health as an herbivore and seeing his triglycerides plummet led him to reexamine all of his previous assumptions about eating animals. He soon arrived at the profound conviction that exploiting and killing non-animals for food is immoral. At that point, Harold went from merely plant-exclusive to truly vegan. Now a vegan activist, he is the founder of Farm Kind and one of the subjects of the documentary Peaceable Kingdom.

Alyssa Almond began her career with Teach For America as a third-grade bilingual teacher in Washington Heights, New York City. Her fascination with languages and language learning called her to specialize in Teaching English to Speakers of Other Languages (TESOL). She helped immigrants acquire the language skills necessary for them to succeed in the U.S. Alyssa worked both as a middle school ESOL teacher and as a program administrator in Adult Basic Education.
But, her veganism reminded her that she's not just about helping humans.
So, in 2017, after some intensive coaching, she gathered her courage and left her full-time job in education. This leap landed her at a farmed animal sanctuary. She later became a writer and curriculum designer for documentary film The Last Pig.
Following her passion, talent, and empathetic nature, Alyssa created the perfect role for herself. As a Certified Professional Co-Active Coach (CPCC), Alyssa gets to help animals by supporting the humans who serve them!

The Vegan Posse welcomes its first mother-daughter duo! Zina Znayenko and her daughter Tatiana Znayenko-Miller are both long-time vegans and living examples of the power of plant-based eating. In this super special episode, they discuss their overlapping vegan journeys, whcih include their own respective real-life "medical miracles!"
First-generation Ukrainian-American Zina was a fat vegan, yo-yo dieter, and binge-eater for most of her adult life. She's discovered veganism after reading the book Diet For A New America by John Robbins. While it changed her life and her worldview, it did not change her waistline. She gained and lost the same 50 pounds for almost a decade.
In 2015, thanks to her brilliant daughter, Tatiana, Zina inadvertently discovered whole-food plant-based eating through the Physicians Committee for Responsible Medicine Kickstart program. She finally achieved - and has maintained - a full 100-pound weight loss. More importantly, she cleared up her lifelong cystic acne and eradicated all traces of two early-stage cancers, a host of systemic inflammatory conditions, and debilitating aches and pains in her limbs.
Since then, Zina has pursued further graduate work in the area of integrative health and medicine, numerous certifications and partnerships, and discovered the wondrous mentorship of Dr. Doug Lisle, Dr. Alan Goldhammer, Dr. Frank Sabatino, Jayney Goddard, Chef AJ, and especially our beloved Dr. Jen Howk. Following the declaration of the COVID-19 pandemic, Zina began working as an educator for Plant-Powered Metro New York and has continued to expand her self-understanding and improve her self-care, in a constant endeavor to manage that pleasure trap!
Tatiana (Tati) Znayenko-Miller currently lives in Washington, D.C. with her rescue collie, “Kolie.” Tati is a graduate of both the MSHS in Integrative Medicine and BSHS in Emergency Medical Services Management programs at George Washington University (GWU). She is currently pursuing a DrPH in Preventive Care at Loma Linda University.
Tati works as a Clinical Research Specialist at the Physicians Committee for Responsible Medicine. Her primary work is concentrated on elucidating the effect conferred by a plant-based diet on insulin requirements in adults living with type 1 diabetes. She has also contributed to research exploring the utility of a plant-based diet in the alleviation of vasomotor symptoms in women experiencing menopause; and in women experiencing endometriosis symptomatology. She is currently facilitating an innovative study, in partnership with Blue Cross Blue Shield, exploring how a plant-based diet may reduce health care spending across a period of 24 months in adults living with type 2 diabetes.
Tatiana was recently appointed the primary investigator on a series of studies exploring the relationship between dietary advanced glycation end-product (dAGE) consumption, metabolic disorder, vasomotor symptoms, glycemic variation, mood, and quality of life. In her free time, Tatiana enjoys practicing and teaching Bikram Yoga. In January of 2023, Tatiana received her RYT-200 from Trimurti Yoga in Quito, Ecuador.

In 1990, at the height of her corporate career, Nancy James was diagnosed with a life-threatening chronic and systemic auto-immune respiratory disease which was supposedly “incurable." The doctor who diagnosed her was so cold and dismissive as he issued the diagnosis sarcoidosis that she decided, “I don’t trust him. I don’t believe a word he says”. That decision saved her life.
Nancy went to see a different doctor, who pointed her to the Macrobiotic healing diet, s 100% vegan diet. This doctor told her, “Don’t look at this illness as your enemy. Look at it as your teacher and your friend." From there, Nancy's healing journey began. Not wihtout setbacks, this journey led her to where she is today, a life coach who helps other people learn to live without struggle and strife and to live in integrity, as the vegan path had enabled her to do.
In Nancy's words, "Being in touch with my Indigenous roots, I’m getting in touch with a reverence for all creatures. I know there are no 'lesser' creatures in this amazing Universe. "

Shelley Watts, of Harrisburg, Pennsylvania, is a retired high school home economics teacher. Arrogant about what and how much she could eat, Shelley started gaining weight in her late 20s by overeating sugar, salt, and fatty foods. Over the years, she gained 65 pounds and developed multiple health issues, including type 2 diabetes. She knew things were bad. Despite a lifelong aversion to needles, she learned to prick herself to administer her diabetes meds. Finally, she prayed and made a decision to make real changes in how she ate. She did her homework, researching websites, books, and articles and listening to experts. She made a plan, based on science, and then she executed it – beginning with a fast at the Fasting Escape., run by Dr. Nate Gershfeld. Since June 24, 2019, she’s eaten only plants, all the time - and she'[s transformed her health! Now, at 70, she's got a brand-new life and looking forward to many more QUALITY years ahead.

Comic, filmmaker, podcaster, and longtime vegan Graham Elwood honed his comedic skills in comedy clubs and colleges to become a sarcastic hipster who can make light of anything and anyone including himself. Nerma Frieden came to the United States as a refugee from Bosnia and Herzegovina in 1996, having survived a years-long war where she was terrified not of being killed but of being tortured, being captured, being raped. In 2014, after watching an ethical eating presentation at her Unitarian Universalist Church and seeing what was happening to farmed animals, she realized that they were living her worst nightmare: being at the mercy of someone with no mercy. She went vegan and subsequently became a certified Food for Life instructor through the Physicians Committee for Responsible Medicine.
Nerma is also an animal rights activist and member of Voices for the Peoria, Illinois, Voices for Animals. Besides teaching Food for Life classes, she regularly leaflets at local universities, organizes local protests and tabling events, and gives regular vegan presentations at a local high school. She has organized movie screenings and presented at local libraries. Nerma also volunteers at a nearby farmed animal sanctuary, Wedrose Acres. Finally, she has shared her vegan story at several UU churches titled "Forced to Live My Worst Nightmare: From Surviving Genocide to Confronting My Own Violence."

After a near heart attack at age 21 followed by literally dropping dead on an airplane, recording engineer Ady Parzentny finally heeded the wakeup call to take care of himself rather than just everyone else. Given his more than near-death experience, it's perhaps little surprise the value Ady now places on consciousness, in every sense of the word. In this intimate interview, Ady talks about his incredible adventures traveling the world as a music producer and recording engineer in over 17 different countries, his decision to extract himself from the "drama cycle" and put himself first, and how self-care and food as medicine have skyrocketed his creativity to new levels and brought him to places he thought he'd never go.
A musician since the age of 11 and vegan for over a decade Ady Parzentny switched to music production in 2017, specializing in location recording, remote mixing, and producing (writing, composing) songs for artists worldwide. He spent two years in Morocco during the COVID craziness, supporting local artists by producing over 50 singles and music videos, two LPs, and six live shows. A truly mobile recording engineer who travels from location to location recording music, Ady is currently based in Poland, where, clearly, his newest chapter of adventures has only just begun.

An adventurer in both body and spirit, Steven Shalowitz has been to over 70 countries - and counting! Steven was considering giving up eating meat while living in Singapore, but an interview with now-deceased celebrity chef Anthony Bourdain convinced him that if he did, he'd be missing out on key cultural experiences. (Heard that one before, anyone?) Nevertheless, over the years, Steven found himself eating less and less meat, and, in 2020, a conversation with Main Street Vegan author Victoria Moran finally prompted him to "rethink his breakfast" and go fully vegan. Since then, there's been no looking back!
These days, Steven is the full-time host and producer of The One Way Ticket Show podcast, now in its 11th season. The One Way Ticket Show features high-profile guests who discuss where they would go if given a one-way ticket to anywhere, no coming back. In addition, Steven produces and hosts the IsraelCast podcast for Jewish National Fund USA, and he produces the What’s Burning podcast from the Galilee Culinary Institute. Ever wonder where the concept of the glycemic index came from? This guy! Dr. David Jenkins is a professor in both the Departments of Medicine and Nutritional Sciences at the University of Toronto, a staff physician in the Division of Endocrinology and Metabolism, and the Director of the Clinical Nutrition and Risk Factor Modification Center, St. Michael’s Hospital. Dr. Jenkins has served on committees in Canada and the United States that have formulated nutritional guidelines for the treatment of diabetes and recommendations for fiber and macronutrient intake for the general population under the new joint United States-Canada Dietary Reference Intake system of the National Academy of Sciences.
His team was the first to explore the concept of the glycemic index of foods and demonstrate the breadth of metabolic effects of viscous soluble fiber. His studies on combining cholesterol-lowering food components, also known as the dietary portfolio, have been recognized as creating an effective dietary alternative to statins for many people and was the only dietary approach referenced in the last Guidelines of the US National Cholesterol Education Program and the Canadian Cardiovascular Society Guidelines. He believes that diets have to be environmentally sustainable - and palatable!

Where are all the vegetarians in our history books - especially the vegetarian women? Part of the problem in tracing our plant-based past is that the word "vegetarian" wasn't even used in the United States until around 1850. And no one was writing about women, like vegetarian pioneer Ellen G. White!
But in early 2020, journalist Avery Yale Kamila, long-running author of the Vegan Kitchen column in the Maine Sunday Telegram newspaper, discovered a clue from 1838 which unearthed 300 years of buried vegetarian history in Maine, all of which is excluded from Maine’s history books. She went on to create the Maine Vegetarian History Project. Avery shares about the (unintentional but real) veg history scrub, what it was like growing up on organic Sunshine Farm where the cruelty of animal ag was indeed never kept in the dark, and her experience of being served a friend named Fifi for dinner one night. (She did not eat her.)

Are we really still doing this in the 21st century? Horseracing is a "sport" built on the backs of animals who are kept in isolation and confinement for 23 hours of every day, die by the thousands every year on the track, are illegally drugged and doped, and whose reward after retiring from a successful "career" is to be slaughtered and sold for their flesh for human (yes, human!) consumption outside the U.S. And not only that, your tax dollars are funding it!
Nicole Arciello, who's been vegan for over 14 years, has been active in the animal-rights movement in Upstate New York for over a decade. Shortly after becoming a regular contributor on the Times Union Animal Rights blog, she co-founded Albany Animal Rights, a local advocacy group protesting various animal-use industries – circuses, rodeos, puppy mills, fur, etc. Nicole went on to become the co-founder and executive director of Horseracing Wrongs, a non-profit committed to ending the cruel horseracing industry in the United States.
But Nicole's talents aren't limited to advocacy! She also has over 12 years of experience as a vegan chef and baker. Her message is that anything, and everything, can be made - and made better - vegan. Who can argue with that?!

"I always wanted to be a doctor." From an early age, parroting terms from her dermatologist father's medical journals, Dr. Debra Shapiro was clear on her vocational calling. But her mother's death from a brain tumor when she was just 14 threw her into an emotional tailspin, and she left high school, later obtaining her GED. She went on to college at age 16 but "didn't last." Finally, at age 21, she returned to college and subsequently went on to medical school - where she learned lots about the pathogenesis of disease and NOTHING about optimizing health through nutrition.
When, as a med student, she assisted in a birth and was told, "Catch this baby," Debra knew that women's health was where she wanted to be. She became a board-certified OBBYN and loved helping women and delivering babies. However, when her practice crumbled due to embezzlement by a corrupt office manager, she took the crisis as an opportunity to shift gears to lifestyle medicine. She also took it upon herself to become a skilled public speaker, to be able to better carry the vegan message.
Debra now does her best to be a shining example of health in a world that doesn't make it easy to live a healthy life! "The more people see us as being in excellent health, the more it will catch on. Instead of it seeming so extreme, people will be saying, 'I can do that.''

"It was drilled into me that it was bad for me to eat plants - by doctors!" says Michelle Cen of the eating disorder treatment she underwent for severe anorexia at age 17. "I learned what it was like not to have rights. And it essentially taught me what not to eat."
One of the Big Five Personality traits is openness to new experiences, and Michelle possibly broke that test! A Stanford University graduate, she's done everything from learning to grow organic food on a farm in Hawaii to now living and making art in New Zealand. She describes how she's still overcoming the consequences of receiving the "best" medical care growing up in Northern California with parents who believed wholeheartedly in the traditional healthcare system - including overly aggressive prescriptions for nearsightedness that left her with debilitating eye pain and treatment for anorexia that tried to "pump her up" like a farmed animal and advised her to throw thoughts of health and nutrition out the window. Michelle shares how she discovered whole-food plant-based eating and how a seven-day fast at True North Health Center changed her life - and why she is now determined to devote her life to helping other people go vegan, get healthy, and avoid the same pitfalls she experienced.
