Team, I am stoked to bring you today’s episode with the incredibly smart Jacob Pechenik. This absolute legend is the founder of Lettuce Grow, a company creating “Farm Stands” which are small hydroponic micro-farms that allow you to grow your own pre-sprouted plants that are ready to harvest, fresh, within three weeks. This company is truly amazing. Not only are they giving their consumers the power to produce at least 20% of their own food while using 95% less water. They are pesticide-free, non-GMO, use recyclable eco-conscious packaging, and do a host of other amazing things. If you are interested in entrepreneurship, sustainability, and or the agricultural industry, this is definitely the episode for you.
Funny enough, too many it may seem like Jacob started Lettuce Grow out of nowhere. His story is actually quite incredible. Jacob attended MIT with no idea what he wanted to study. As he was undecided on his career trajectory, he chose the hardest major at the school, chemical engineering, and did it, graduating with a perfect GPA. I don’t know about you legends but to me, that’s pretty impressive. After graduating, he started a couple of companies in the finance and tech space, ended up becoming a film producer having helped produce over 30 films in his career, and then decided to drop all of that and get into the agricultural space in a unique way.
After leaving the film industry, Jacob co-created the Farm Project and eventually built Lettuce Grow to help consumers develop a new food system. At this point, Lettuce Grow has over 1.6 million square feet of farmland across all of their individual consumer farm stands, which are truly improving the health of people and the planet.

I had the pleasure of talking with Dr. Doni Wilson who is a naturopathic doctor, a clinical nutritionist, a best-selling author of The Stress Remedy, and now she is the author of her new book Master Your Stress Reset Your Health. Dr. Doni specializes in the field of stress and building our bodies to properly manage and optimize stress levels. From observing women in labor and giving birth, she realized that a certain amount of cortisol and adrenaline (stress) is needed to successfully give birth. Legends, I am stoked to bring you today’s episode with Mirna Valerio! Mirna started her blog, Fatgirlrunning, to document her journey through running as a larger woman in the world of thinner athletes. Her blog took off and after a long road of consistency, perseverance, determination of this woman who is now a professional athlete running for LuluLemon. Before becoming a professional athlete, Mirna was a cross-country coach and a teacher for 18 years while leading the diversity and inclusion program at her school. Her life trajectory changed when one day she was driving home from work and began experiencing significant chest pain and was rushed to the hospital. After many examinations, it was clear that she had a panic attack - which felt impossible to her because as she had previously thought, “Black people don’t have panic attacks.” Due to the extreme quantity of responsibilities she was taking on in her life, she wasn’t sleeping and was on track to an early death. The doctor asked her, “do you want to see your son grow up?” and from that moment forward, she changed the way she lived, from training and sleep to nutrition and everything in between. After breaking out her treadmill, she started running 5k’s every weekend in New York City and is now sponsored by Lululemon and LL Bean as well as multiple others. In addition to her athletic career, Mirna is also a speaker and the author of her memoir “A Beautiful Work in Progress.” In today’s episode we dive into her journey of becoming a professional athlete, her relationship with anxiety and the stereotypes that accompany being a Black person with anxiety as well as a deeper look into what it’s like being a Black woman in the United States. Team, one of the perks of having this podcast is the ability to talk with truly extraordinary and unique individuals. Today’s guest Joseph Abell is one of those people and has such an amazing story. He lost his dad at a young age and afterwards, his family became ultra-religious. Joseph made it a practice to analyze and examine the validity of the information he was being given in church and ended up debating the church’s teachings. This ultimately led to him getting kicked out and becoming homeless as he couldn’t stay with his family. After being home-schooled his entire life, Joseph ended up going to high school and won first place at nationals for speech and debate. This garnered national attention and in college he started teaching speech and debate. He built a company to teach people how to succeed at speech and debate and the company grew to the top of the industry and became the best in speech and debate coaching in the country, coaching multiple national champions. Joseph proceeded to receive the largest scholarship USC offers for Law School and is currently practicing law. While this story is already incredible, going from homeless to receiving the largest scholarship USC offers to practice law, he also is building his personal brand. This amazing woman truly has a one-of-a-kind story. She went from being a lawyer to amassing TikTok fame essentially overnight. After posting videos of herself cooking while discussing topics such as BLM, LGBTQ+, AAPI, democracy on TikTok, she amassed a massive following and her life changed. Legends, I am stoked to bring you today’s episode with Ross Mackay! Ross is a good friend of mine, an absolute beast in the gym, and the CEO and Founder of Daring. Daring is a truly incredible company making plant chicken with the mission of making chicken better for people, planet, and chickens. I love that. I have known Ross for a little while now and he is truly one of the hardest working, most driven, and visionary people I have met. At the age of 27 in 2017, he had the idea for Daring. Only two years later he headed to NYC with a backpack of samples to meet with potential investors and received a lot of “no’s”. A year later Daring launched and Ross returned to NYC with millions of dollars raised and in full pursuit of their mission to remove chicken from the market by making chicken better: making it out of plants. Fast forward to 2021 and Daring has raised over 130 million dollars with investors such as Drake, Cam Newton and more. In the span of three years Ross ideated, developed, and launched Daring, getting it into thousands of stores such as Sprouts, Walmart, and probably your local grocery store. The dude is a LEGEND! In today’s episode we discuss Ross’s passion for health, his love for training, why he is plant-strong (Ross is committed to renaming plant-based as plant-strong), how he approaches team building, and how he launched Daring.

Team, today Danny Del Ray who is a legit legend joined us on the show. Danny is a military veteran having received the purple heart from his service in Afghanistan. Danny survived two years overseas and one of the bloodiest battles in history. Danny was one of the few US soldiers stationed at an outpost in a valley surrounded by mountains that thousands of Taliban attacked. Danny and some of his fellow brothers in arms fought them off and survived. This battle is recapped in the movie The Outpost and Danny stars in it. Already, Danny’s story is unique and truly incredible. However, this is just the beginning. After returning from war, Danny played in the NFL for the Rams to honor his promise to his fallen brothers. After a couple of years in the NFL, Danny decided to pursue his music career which was his passion before he joined the Military. Danny has one of the most powerful stories I have ever heard and it was an honor to have him in the studio.

To Celebrate The Victories, It Had to Get Dark at Some Point - Robbie Balenger
Team, today we have Robbie Balenger, one of the elite plant-based athletes in the space, on the show today. Robbie started running at 29, so well into his life, and decided to see how far he could go with it. Robbie is a plant-based, ultra-endurance athlete who has completed the Trans-con which involved a 3,175-mile transcontinental run starting in Huntington Beach, CA, and ending in Central Park, NYC. This involved 14 states and an average of 43 miles a day for 75 days. He also completed the insane Colorado Crush which incorporates the Leadville Trail Marathon, The Leadville Silver Rush 50-miler, and the Leadville Trail 100-miler. Robbie got in 1,200 miles and more than 300,000 feet of elevation gain over 63 days. And team, these are just two of three epic challenges he has finished so far! Robbie also completed the Central Park Loop challenge which consists of running the most number of loops around Central Park in NYC during the park’s opening hours of 6am to 1am the next day. Robbie got in 16 full loops around the park with almost an hour to spare, breaking the previous record of 11 loops. These are incredible accomplishments, however, this lifestyle that Robbie lives in is relatively new to him. Team! It’s marathon season! As I gear up to run the NYC Marathon to raise money for City Harvest, it’s time to get dialed on all things marathon prep. In today’s episode, we dive into the primary variables to focus on to achieve your ultimate performance. One of the primary things to nail is eating enough food. Studies have shown that going from recreational running to marathon training, women on average adjusted their overall energy intake requirement by 40% and men increased theirs by 15% due to their increased training. Overall, individuals going into a marathon are significantly under fueled, and that dramatically affects performance.
So how do you know how much you should consume? First, you need to understand your body and how it responds to food. The simplest way to understand the ratio you should be shooting for in your meals is 50% carbohydrates, 30% fat and 20% protein. While approaching this ratio, increase your food quantities to the extent that feels comfortable as you increase your exercise load.
The second major component is hydration. On the topic of hydration, we are looking at electrolytes. When we are training for a marathon, we sweat a lot. When we sweat, people tend to immediately drink a lot of water. This is great, however we need to specifically focus on our electrolyte levels. When you train, you typically lose 200 - 700 milligrams of sodium per hour. We need to be increasing our sodium, potassium, and magnesium intake to improve our performance.

As a Division 1 athlete, Adam’s plan was to pursue a career in Major League Soccer. However, he suffered from concussions that forced him to stop playing contact sports and this dream was shattered. In today’s episode, we dive into Adam’s story. We focus on how he pivoted from soccer to CrossFit, built his body into a “hybrid athlete” with extreme levels of fast-twitch muscle, and on his ability to run a sub-five-minute mile. Legends! In the studio today I am joined by the legendary Rich Roll. Rich is a primary thought leader in society, with a podcast ranked in the top charts for years and a social platform reaching millions, Rich is truly a voice for the people. Being able to learn from Rich as a friend is truly an honor and a blessing. In this episode, we gain a vulnerable and in-depth look into who Rich truly is. We dive into his story from a Division 1 swimmer in college to battling with drugs and alcohol all the way to how he maintains emotional sobriety now in the midst of his success. Rich is one of the most impressive, supportive, and caring humans I have met.
He graduated from Stanford University and Cornell Law School, became a lawyer, and was making good money. At the age of 30 Rich had hit rock bottom working as a lawyer in the hopes to prove himself to his family and peers. He became a workaholic for 10 years striving to please others while neglecting himself. Through this low point, he reached the age of 40, had a heart attack scare, was addicted to junk food weighing 50 pounds overweight, and wasn’t happy. He had a wake-up call.
Rich became a vegan, focusing on the energetic benefits of plants and how to eat for performance. In his 40’s Rich became one of the first vegan ultra-endurance athletes paving the way for those to follow. In 2008 and 2009, Rich competed in the Ultraman World Championships in Hawaii which is one of the world’s most daunting and grueling endurance races on the planet. He was a top finisher. Later in May of 2010, Rich completed the EPIC5 Challenge: completing 5 ironman-distance triathlons on 5 islands of Hawaii in under a week. He also became one of the world’s fittest men. These are incredible physical feats that many couldn’t even imagine achieving and these are just one aspect of who Rich is. In 2012, Rich launched his book Finding Ultra: Rejecting Middle Age, Becoming One of the World’s Fittest Men, and Discovering Myself, and became a #1 bestselling author. After publication, Rich launched his podcast The Rich Roll Podcast which resides in the Itunes Top-10 List. Rich is a legend.

Hurst has won 30 Australian surf titles, is in the surf life-saving hall of fame, is a multiple Ironman champion and a dual Olympian, having competed in the open water swimming at the 2008 and 2012 Games. In recent years he has transitioned to professional sailing, even competing for Oracle Team USA at the last America’s Cup and is now represents his nation in the sport of Sail GP. A big takeaway from this episode is how Hurst defines what an athlete is. Having done three different sports and three different modalities for over 23 years, he has a massive engine, and so he talks about how he builds that aerobic base and why we need to focus on recovery - not just for sport, but also for everyday life.
