Stuffed Italian Zucchini Boats with Italian Sausage

Preparation Time: 20 minutes Cooking Time: 35 minutes

Ingredients:

  • 4 medium zucchini
  • 1 lb. Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Directions:
  • Preheat your oven to 375°F and lightly grease a baking sheet or dish.
  • Cut each zucchini in half lengthwise and use a spoon or melon baller to hollow out the centers, leaving about a 1/4 inch thick zucchini “boat”. Place the zucchini on the baking sheet.
  • In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook until browned and no longer pink, breaking it up with a wooden spoon as it cooks. Remove the sausage from the skillet and set it aside.
  • In the same skillet, add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Add the diced tomatoes, basil, oregano, and a pinch of salt and pepper. Stir well and cook for a few more minutes.
  • Add back the sausage and cook for another 2-3 minutes until everything is well combined.
  • Spoon the sausage mixture into each zucchini boat, pressing it down and filling to the top.
  • Top each zucchini boat with a generous amount of mozzarella and Parmesan cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
  • Remove from the oven and allow to cool for a few minutes before serving.

Or we may want to get rid of something, but someone else in our life expects us to keep it. What to do then? Today Kathi is discussing this very issue with her friend and co-author, Cheri Gregory.

Cheri tells the tale of some big items she has recently decluttered and shares how her mindset about those items has changed over time. Some of those shifts in her thinking include:

  • Realizing that just because an item was nice several decades ago, doesn’t mean it is still nice.
  • Learning to set a time limit on fixing things – just because something could be fixed someday by someone doesn’t mean I have to keep it (broken) forever.
  • There is a cost to keeping things – time dealing with them, lost space to enjoy other things, and missed opportunities.

Kathi is talking with author and Bible teacher Barb Roose about her struggles with perfectionism and performance, and how that affects both her closet and her faith in God.

Here are Barb’s 3 rules for a better closet:

  1. Don’t wear it if it makes you sad.
  2. If it doesn’t fit your current body or style, get rid of it.
  3. Don’t let fear or shame make you keep clothing that doesn’t fit your current size.

Barb says that our closets are full of memories, and our relationship with God is the same way. How can we move on from experiences in our past that bring up feelings of guilt today? Barb has been on a spiritual journey: moving from a place where guilt robbed her of feeling like she could connect with God, to a place of freedom and understanding of how big God’s love is.

Her life has been changed by focusing more on the promises of God, and less on her performance for Him. Her favorite prayer in a time of need? “Save me O God.” That 4 word prayer is a whole prayer. Barb reminds us of God’s promise from Isaiah 43: “When you go through deep waters, I will be with you. When you go through rivers of difficulty, you will not drown.”

So take a deep breath, remember God’s promises to you, and then do the next right thing.

There was a time I just ate bananas.
Like any banana. I’d buy them put them in my lunch and eat them. Green, light green, yellow, brown I didn’t pay much attention.
Then one day I was driving to my awesome college job at Gap kids, and I took a bite of my greenish banana.
I realized it wasn’t good.
As a matter of fact every time I ate a greenish banana I didn’t really like it.
Suddenly I realized I didn’t like green bananas. And I didn’t have to eat any banana I didn’t like.
I was a legit grown up I could pick the color of bananas I would eat.
I rolled down my window and SPIT OUT the gross banana in my mouth and to this day I’ve never eaten a banana with a grace of green.
Life is too short for green bananas.
This life lesson has served me well in a million areas of my life.
With friendships, jobs, picking out jeans and how I spend my time on a Saturday. The applications are endless.
Tonight I share this lesson with you.
You don’t have to eat green bananas either my friends.
Only eat bananas you really enjoy.

For decades, his family rescued lost and forgotten donkeys in the Irish countryside. He had no idea that one day, the donkeys would rescue him.

Patrick Barrett grew up on the back of a donkey. In the small village of Liscarroll, the young boy helped his family run a sanctuary for abandoned and abused donkeys. Struggling in school, Patrick only felt truly accepted in the presence of these funny, fuzzy, touching animals. It was like magic, how he and the donkeys understood each other. He became a true “donkey whisperer”—reading their body language, communicating with them in ways they could understand, and teaching himself how to “speak” in their distinctive calls.

But when Patrick was of age, he shipped out with the Irish Army and encountered unimaginable wartime horrors in Lebanon and Kosovo. In the aftermath, he returned home a broken man, sinking into the depths of PTSD and addictions. He believed nothing could save him. But he hadn’t counted on the donkeys.

Sanctuary is the remarkable true story of how faith turned one lost man’s life around with the help of the rescue animals who loved him. It’s an antidote to despair and a call to hope, revealing the beauty and wonder of Ireland as you’ve never seen it before.

To make your own list, find a notebook that makes you happy and write down the things you need to do – ALL the things you need to do – even if that includes taking a shower. It’s that easy!
Keeping a list will:

  • Help you get stuff done – You have a visual representation of your work
  • Prioritize – Not all tasks are of equal importance or time sensitive
  • Keep your mind clear – Writing it down means you don’t have to keep thinking about it and can focus on the task at hand

Things on your list should take you 5 minutes, so you can keep crossing things off all day long. Once you accomplish a task, you can cross it off the list. And doesn’t crossing things off just feel great?

Now you may be thinking, “Kathi! That’s crazy! I can’t get rid of half of my stuff!” The great news is that you don’t have to. Let Kathi and Roger break down the helpful strategies they learned when purging their living space.

Let’s talk about categories. Maybe you have a lot of jewelry. Make your goal to sort through that jewelry and get rid of the half you don’t wear, like, or find uncomfortable.

How do you make a decision when you have too much of a category?
Kathi suggests picking up each item and considering how much you actually like it, and if you have something similar that you like better? Get rid of those repeat items that no longer serve you.

Having too many choices day to day eliminates how much we value the things we have. And giving away your stuff could help bless people with the things they need. Keep what you love and get rid of the rest. You don’t need the Tupperware you lost the lid to.

Kathi and Roger Lipp are here, up before the sun, with some real talk about whether or not you need a junk removal service. Have you ever thought your clutter problems would all be solved if you could just point at the clutter and someone would take it away? That’s a great solution in some situations, but most of the time, removing the clutter is not the real problem – it’s making decisions about the clutter. Kathi and Roger have some great tips for getting through the clutter including:

  • Give yourself a hard deadline – Designate a junk/recycling/charity dropoff day
  • Double up your errands – If you know you’re going out tomorrow, load up your car with items to donate today
  • “Body-Doubling” – Have someone sit with you, even if it’s just on the phone, as you declutter. If no one is available, join us every Wednesday at 11:00am (PT) in the Clutter Free Academy FaceBook group for a 15 min declutter. We’d love to be your body double!

496: 1 Day Declutter Your Pop Up Clutter Free Focus:The Great 100 Item Cupboard Clean Out

Kathi and Tonya are here today with details on the upcoming “Great 100 Item Cupboard Clean-Out!” On Wednesday January 26th, Kathi Lipp and Tonya Kubo are hosting a friendly challenge in Clutter Free Academy. You mission, should you choose to accept it: get rid of 100 items in your kitchen. It’s time to throw out those extra soy sauce packets, expired items, donate-able items, and takeout menus (you can find those menus on the Internet anyway). Listen in as the pair give all the details and guidelines for a successful kitchen clean-out.

Now, gather your supplies – some of Kathi’s go-to suggestions include:

  • Garbage can/recycling can
  • A box for food bank donations
  • A black marker and labeling tape
  • Plastic containers (Kathi’s favorite are the OXO Containers)
