A hot current of air poured over desert thickets, reeds & willows, and rolled over the Judean desert.
Howling winds carried/pushed the sound of soft classical middle eastern instrumentals through the narrow straight between the rock faces.
With the salt beds of the Jordan river paces away, the smell of salt bounced against the gypsum walls and traded & mixed with spices
Carved into an urban landscape, the great hall was supported by a single hewn plastic pillar at center.
White tiled ceilings stretch across the vast expanse, and gold varnished millwork bordered the perimeter of the region.
Images of pita, olives & zatar-peppered bread, and smothered meats were encased in gold-trimmed/framed glass.
Patrons sat along dusty shores, on the surface of mahogany red chairs, and along the edge of tables line up across the beige tiled floors, the color of sunbaked clay.
The red/brown dust settled at my feet as a white saucer was set upon my table. The saucer was divided into zatar, olive oil & chili paste.
My chicken shawarma plate sided with a house salad and basmati rice was planted on my table. I didn't have to think twice.

Out tumbled a box of kleenex and a translucent package, marked by a gregarious bear. The plastic skin hug tight to individual rolls of paper.
He threw a furtive, apologetic glance in my direction.
People hurried past, mocking smirks hidden in cotton T-shirts, noses buried in surgical masks, and hands skinned in latex.
It was common courtesy to greet the strange old lady that circuits the neighborhood with a grin, slight nod, and a flick of the wrist, but as she tread the pavement, she unflinchingly crossed to the other side, where no concrete had yet been poured, and force her gaze forward.

I figured what better way to get to know a city as an engineer and foodie than to explore it's restaurants/infrastructure and breath the air of the atmosphere/influence they create.
This is my way of breaking into the printable food market, writing and mouthing reviews that attempted to translate spices into texts and dinner plates into prose.
What I desire from these streets I roam, is freedom.聽
It's the imperfections/commonality of street art/literature/poetry that attract me to it and the hope for restoration/progress that keeps me fixated.
