Ingredients:
Absinthe, to rinse
3/4 ounce London dry gin
3/4 ounce Lillet blanc
3/4 ounce orange liqueur
3/4 ounce lemon juice, freshly squeezed
- Rinse the inside of a chilled coupe or cocktail glass with absinthe, discard the excess and set the glass aside.
- Add the gin, Lillet blanc, orange liqueur and lemon juice into a shaker with ice and shake until well-chilled.
- Strain into the prepared glass.

For Rick 2 great things came out of the pandemic. 1. Rick learned to make his own sour dough started and 2. they got a new cockapoo puppy - Arnold!
Rick's Sourdough recipe:
We work in grams/kilograms rather than cups, so I’m not sure how it will translate 😊
Making your starter :
200g of bread flour with 200ml of lukewarm water
Place in a jar or other container and keep uncovered overnight
Keep “feeding” the starter everyday – discard half of the mixture and replace with another 100g of flour and 200ml of water
Keep repeating the discarding and feeding process daily until you start to get bubbles in the mixture. It’s then ready to use, but keep feeding the starter regularly – I find keeping in the fridge covered but feeding once a week works fine.
Making the bread :
Use 100g of your starter and combine with 300g flour, a pinch or two of salt and 300ml of warm water (this is called the “sponge”)
Cover and leave it to rise (3-4 hours)
Top up the starter with 50g flour and 50ml water
After the sponge has risen, add 350g of bread flour and salt and knead for 10 minutes (or use a mixer!)
Leave to prove for around 3 hours (or overnight in the refrigerator works even better to develop the flavour further)
Knock back the dough, shape and prove for another hour before baking – 220C/425F for around 35 minutes.

This was tough. I guess I'd have to say sourdough starter. I know a lot of people got into bread-making during the pandemic. I didn't start until just a few months ago. The starter and some equipment were a Valentine's Day gift from my wife. I've made bread, pancakes, dinner rolls, and biscuits. It's a great compliment to the technical side of my life. 011 Robin’s official title is the Director of Security Technologies at HelpSystems. He is a 3x IBM i Power Champion, he releases a yearly study on the State of Security on the IBM i (18 years and running), he’s got his certificates for DAYS - CISM, PCIP, his CPFA and a plethora of other acronyms.
Robin is a dad of 2 great kids, is an award-winning photographer, when his not on the road for work he splits his time between Iowa and Florida. He loves Rugby, Heinz Bake Beans and Rubix Cube. And in his secret life he’s an English spy – something like 007 I think!
