It's one of those constants in this fair city; every Sunday at midday tune into the best radio station on earth for Eat It, Triple R's resident food show. No-one really knows quite how many years the show has been on-air, but it's been going long enough for us all to lose track. Each week Cam Smith and Matt Steadman take an hour to discuss every aspect of food and drink, including regular market reports, interviews with chefs and restaurateurs, chats with industry and lobby groups, emptying bottles with wine-makers and writers, answering listeners' questions, the occasional on-air cooking segment, and anything else we deem fit. Sometimes we'll even squeeze in a song or two.

Anyway back to food, and we spoke to Andrew Kavasalis about the recent law change allowing the production and sale of low-THC hemp for consumption in Australia. We're lagging the world in this, however hemp seed is a very nutritious food that is easy to grow, and vegan-friendly. It tastes a little like nuts, and much like almonds you can even make milk from it. Hopefully you'll see some on restaurant menus and store shelves very soon.
The man behind the CBD's Pastuso, Alejandro Saravia made the trip into Brunswick to talk about Peruvian food, and specifically Empanada. His Fitzroy eatery Che serves up many varieties, and we spoke about how to make them at home, as well as the many differing varieties of chillies available around the world.
We finished by chatting to Professor James Dale about the growing worldwide crisis for banana growers. There is a soil-borne fungus that is slowly infecting the worldwide crops of our favourite banana, the Cavendish. Affected plantations can take up to 40 years to recover from the disease, and Professor Dale is part of a team working on a GM solution to increase the natural resistance to this threat.
On a cracking Melbourne afternoon we spoke to Mitchell Horrocks about his time and work in Uganda. He first travelled to Africa in high school, and since then learned about their disease problems due to unclean drinking water. But every problem is a solution waiting to happen, so Mitchell has designed an apparatus that can sit on an existing cooking setup and purify water at the same time. Heston Blumenthal is one of the most influential chefs of our time, and his "right hand man" - and Dinner by Heston Executive Chef - Ashley Palmer-Watts joined us in the studio to talk about running restaurants in different continents. We spoke about his Fat Duck journey, the logistics of setting up Dinner in Melbourne, and the awesome gin they created based on a trip from Perth to Margaret River.

Rightly regarded as one of Melbourne's top chefs, Scott Pickett (from ESP, Estelle Bistro, and St Crispin) is about to open a new place in the Queen Vic Market called Pickett's Deli & Rotisserie. We talked about Scott's new "super pot" that's being used to make jams and preserves, his vision to showcase Victorian ingredients, and his tips for an amazing rotisserie chicken.
We started today's show trying to identify a mystery ingredient, that turned out to be fresh wasabi - yum! Why not try it as we did, grated into soy and served with raw tuna. Awesome.
From Japan to Japanese Hawaiian fusion, we spoke to Charlie Rothery from Windsor's Tokyo Tina about the fact that Poke fish is the new cool kid on the block. We sampled his tropical-style don dish featuring Poke, and spoke about the evolution of Japanese cuisine in different countries.

Vanessa and Mat from Melbourne City Rooftop Honey joined us in the studio and spoke about their new honey processing and educaton centre. They'll be running sessions on all aspects of beekeeping as well as having a shiny new home for their honey. We also spoke about a recent discovery of verroa in two beehives in Townsville, which unfortunately means we'll probably see it distributed around Australian hives in the coming months.
On today's show we caught up with Cam who is off the leash this weekend, and he's ended up in Bendigo for the 2016 Bendigo Festival of Lamb.

Who is going to grow our food in 20 years? We also chatted about getting into farming, and his WOF-work on farms around the world, and how to balance farming ethics with profitability. The Age Good Food Guide's editor Roslyn Grundy joined us next and spoke about some recent bad luck she's had with her chooks. We chatted about the upcoming 36th edition of the Good Food Guide, which will now also incorporate the Cheap Eats and Bar guides in the one book. The entry point for inclusion into the guide has risen from 12 points to 14 points, as the number of restaurants in Melbourne continues to grow.
To finish today's show, one of Melbourne's true culinary legends Philippe Moucheljoined us to speak about his new bistro Philippe. We spoke about his period being mentored by the great Paul Bocuse, his discovery of Japanese cuisine, and how the local produce scene has grown in the twenty years that he's been based in Melbourne. On today's show we spoke to food columnist Richard Cornish about the recent crisis in Australia's dairy industry. It's a very complex issue that's been triggered by a drop in global milk solid prices, and seen many farmers - who were already in debt after borrowing to increase their herd sizes - retrospectively owe money to the bodies that purchase their milk.
We also chatted to professional food forager Elijah Holland whilst he was in town collecting ingredients for a special dinner at Oakridge Estate. We chatted about his time collecting local ingredients for Rene Redzepi's Australian outpost, as well as the importance of knowing the origins of ingredients and sourcing locally where possible.

The first ever Melbourne Tea Festival is coming up on May 29, and we spoke to organiser Corinne Smith about how tea is becoming sexy again. The whole point of the festival is to get people out of the teabag, and to learn about the various single origin teas and the best way to prepare them. Plus you get a free teacup, what's not to like?
One of our favourite Melbourne events is the Darebin Homemade Wine and Food Festival, which starts tomorrow and culminates on Saturday May 14. Carmelina Di Gugielmo is one of the festival organisers and MC for the day, and we spoke about how imported cultural traditions have been absorbed into Australia's social fabric, as well as the Secret Italian's Business of homemade grappa.
Another regular at the Darebin festival is Ingrid Phyland, who has taken out the best olives award two years running. We chatted about how the olive trees planted by immigrants 50 years ago are still bearing fruit and providing us with food today, as well as what she marinates the olives with to achieve such a yummy result.

Kellybrook is a second-generation cider producer, and we discussed different varieties of cider, the different apples that go into it, and what exactly it means to "scrump".

He's just released a new book called Not Just Jam that covers all kind of preserves, and we discussed the origins of preserved goods and why they are still relevant despite modern food technologies.
We then were joined by Melbourne-based French Chef Florent Gerardin, who chatted about his time working in kitchens alongside Joel Robuchon, Alain Ducasse, Shannon Bennett, and Mark Best amongst others. He is opening a new restaurant in Flinders Lane called Oter, and we spoke about how the new space is coming together and what they'll be serving. There's been a lot about sugar in the news recently, so we decided to ring Dr Rosemary Stanton and see what was actually happening. Recently the UK have joined a few other countries by introducing a tax on sugary soft drinks, which in places like Mexico has achieved a reduction in overall consumption. Other than the (subjective) benefit of flavour, there really is nothing good at all in softies like Coke or Pepsi, and even their "diet" versions can still have adverse health impacts.

We finished by jumping into the time machine and speaking to Jane Lawson about her upcoming book Milkbar Memories. The book documents the treat food we enjoyed back in the 70s, from mixed bags of lollies through to the ubiquitous Chiko Roll. We spoke about the various influences that multiculturalism has had on Peruvian cuisine, his time cooking at different restaurants around the world, and even his genuine love for Vegemite.Continuing with the Peruvian theme, The Pisco People's Josie Healy popped in to explain a little about Peru's native spirit, the various grape varieties that are used, and how to drink it if you find yourself with a bottle.
Today we chatted with Tammy Jonas from Daylesford's Jonai Farms & Meatsmiths about their move to the country to breed pigs and the various smallgoods they now produce. We also spoke at length about the challenges they face as a small micro-producer in a world that's geared to large corporations. We think Victoria should be proud of its increasing number of independant boutique producers, however many are finding it very hard - or even just giving it up - due to some onerous legal requirements.
Are you weirded out by the prospect of eating bugs, worms, and insects as part of a normal meal? Perhaps we shouldn't be, as LadyBoy Dining's Fran Leaper would attest. Many South East Asian countries have been chowing down on bugs for decades, and they are a really nutritional and environmentally friendly way to form a meal. We spoke about how he got into dessert-making, how each separate course is named, and what his top-tip is for creating a kick arse dessert at home: crumbles.

It's around this time of year that our thoughts turn to sparkling wine, and specifically wines from Champagne. Rita Erlich knows a thing or two about that particular drink, and walked us through the history of the big Champagne houses and differences in styles. She also brought us some actual real-life Champagne to drink, so what's not to like?

We started today's show with a lengthy chat to legendary Melbourne chef Guy Grossi. Guy's annual tomato harvest and passata creation has grown into what is now know at the Melbourne Tomato Festival, which is happening in a couple of weeks time. We talked about how traditional Italian cultural traditions persist in Melbourne, as well as some of the history of Farm Vigano where the festival will be held.
Next up Storm In A Teacup's Hannah Dupree joined us in the studio to talk about tea. First up, did you know that all the tea you buy - Earl Grey, Oolong, etc etc - is all the same plant? Differences in processing the leaves is what creates up to 20,000 different recognised varieties of tea. We also spoke about boiling vs not boiling water, cold infusions, and what to avoid (answer: teabags).
Chef Scott Pickett took some time out from running the kitchens at Estelle and St Crispin to talk us through the recent renovation - and tweaking of culinary direction - of Estelle in Northcote. We also chatted generally about the pressures and commercial realities of running a modern restaurant. We finished the show discussing some ingredients that are currently in season, and some of the best ways to prepare them.
Yeeeeaaaaah our first show back for 2015 and we had a quick chat about some of the culinary highlights of our summer.
Our first guest for the year was Dr Rosemary Stanton. Over summer there was a tragic death of a child who had recently consumed raw milk, and there have been subsequent changes to Victorian law regarding its production and sale. But why do people consume it in the first place? Rosemary outlined the fact that there are no tangible health benefits from its consumption, and a lot of the claims you'll hear about its wondrous health properties are entirely apocryphal. Rosemary (and us here at Eat It) does support the craft cheese industry being able to use it to create more interesting boutique cheeses so long as it is used with care and the product is clearly labeled. But there is no real reason to consume the milk itself, and this is especially true for children and the elderly.

To finish today's show, winemaker Duncan Buchanan joined us via phone to talk about the 2015 vintage. Despite the cooler weather an "on-average" yield is still predicted for most areas of Australia. In fact, South Australia is looking at one of its earliest vintages ever. We also chatted about the danger presented by powdery mildew with all these cloudy days, the fact that Duncan is about to pick some Riesling grapes off vines in Halls Gap as early as this week, and certain other wanky wine topics like "pruning regime" and "canopy management".
To finish a big year of food on Triple R we were joined in the studio by Joost Bakker. According to Joost, we should make 2015 the year of composting - in fact, over 100 restaurants in Melbourne are already sending their organic waste back to growers where it can make a positive difference rather than just ending up in landfill. And it's not just for restaurateurs; you can get a small version of the same compost systems they use from Closed Loop(and probably some other places too!)

We chatted about the lean profit margins experienced by most restaurateurs, how some of the trendy ingredients are becoming passe ("we've reached Peak Quinoa") and some of the best food experiences they've had this year.
To finish up wine guru Jane Faulkner joined us to talk about the increase in different grape varietals in the Australian wine industry, what's happening with wine prices in general, and some of the broader trends in the industry. Australian Gin? Tick. Tasmanian Whisky? Tick. Continuing rise of craft beer? BIG tick. Growing acceptance of Sake as a match for various cuisines? Tickerooney.
On a packed show we spoke with Melbourne dining legend Matteo Pignatelli, owner of two-hatted Matteo's, about the odd spectacle of restaurant reservations being "scalped" to high bidders due to such a high demand for Heston Blumenthal's Fat Duck restaurant opening in Melbourne next year. How much would you pay for concert tickets, or an expensive seat at a sporting event? That style of dining is similar, and it's no huge surprise that people are clamoring to get a table.

To finish this week we spoke to the head chef at Melbourne dining hot spot Mamasita, Andrew Logan. We talked about how a traditionally trained skippy Aussie ends up cooking soulful Mexican food, his travels to Mexico, and the long history of Mexican cuisine. Andrew has also contributed some recipes to an amazing tome simply titled Mexico - The Cookbook. It clocks in at 700 pages and is THE word on Mexican food.
We started today's show with a cross to the Yarra Valley, where Oakridge Estate's head chef Jose Chavez was watching his board slowly fill with orders. We spoke about the effect of the recent weather on the local produce, and what he's currently sourcing for his kitchen.
Next up we focussed on technology, with Brad Giblin running us through the recent developments with 3D printing. It turns out that people are already using these devices with food, and whilst currently there are really only single ingredient printers being used, there is really no limit to what can be achieved in the future. Maybe it's molecular gastronomy 2.0? It's even backed by NASA!
To finish today, we spoke the the man behind Bacash restaurant, Michael Bacash. We chatted at length about the new proposals to ban commercial fishing in Port Phillip Bay, and what effect that will have on the restaurant supply chain. We also spoke more generally about how to treat your seafood with respect, and how it is entirely different to preparing and cooking other proteins.
