He was also President of the American Society of Brewing Chemists from 2005-2006. * We start with a discussion on how Greg got interested in the history of American Adjunct Lagers. * Greg explains how in the US we often discount our rich American Lager heritage, even though it is the dominant beer style in terms of volume both in the US and around the world. * He tells us a bit about how the style originated in Germany and was brought to the US in the mid 1800's. * We discuss the German influence on the style but also how it became the dominant American beer style quite quickly in the late 1800's. * Greg tells us what some of the early American lagers were like and how the style has evolved over the past 100+ years. * We discuss "ice cold beer" and how this turned out to be an American innovation in itself. * Greg covers the major myths associated with American Lagers. * We also talk about how consumers drove demand for American Lagers and not the big breweries. * We discuss the first volume in Greg's trilogy which covers the WWII period in the 1940's and also lingering effects of prohibition. * We talk about some of the factors surrounding the rise of craft beer which has eaten into US beer market share since at least 1980. * Greg discusses the three volume trilogy and his books and shares his closing thoughts.

  • This week I welcome Scott Janish. Scott is author of the recent book "The New IPA: A Scientific Guide to Hop Aroma and Flavor” (Amazon affiliate link) and also co-founder of the Sapwood Cellars brewery in Columbia, Maryland.
  • We start with a brief discussion about Sapwood Cellars.
  • Scott explains his interest in dry hops and some of the latest research in this area.
  • Scott recently put together a MBAA article on "Dry Hop Best Practices" and we begin with a discussion on what is actually being extracted in dry hopping.
  • We walk through the major groups of hop oils starting with hydrocarbons which includes oils like myrcene.
  • Next we discuss Monoterpene Alcohols which chiefly includes linalook and geraniol. The two seem to be important in creating fruity/tropical flavors in the finished beer.
  • We discuss Thiols, which despite their tiny quantities, are perhaps among the most important hop oils.
  • Scott talks briefly about esters that come from the hops.
  • We discuss dry hop temperature and times and some of the tradeoffs to be made between time and temperature when dry hopping.

He’s also partner in two breweries near Chicago Five Rabbit and Forbidden Root. * We start with a short discussion of the new book Randy's working on as well as the re-opening of his two breweries Five Rabbit and Forbidden Root. * Randy starts with a discussion of hops and how hops itself can be used to promote fruity flavors and aromas in an IPA. * We talk about the recent research into hops thiols, geraniol and linalool and how they can be used when dry hopping to promote tropical fruit flavors in IPAs. * Randy provides some advice on fruity IPA hop selection as it is critical for getting the flavor profile. * We next switch to the use of fruit in an IPA and how you can approach the correct flavor balance with an IPA. Randy also mentions citric fruits which do well with IPAs. * We discuss how fruit flavors change dramatically during fermentation which drives your fruit selection and also the level of sweetness needed in a beer to achieve balance. * Randy talks about acidity and how it can provide structure but can also easily upset the flavor balance especially in an IPA * We talk about backsweetening and the use of ingredients like lactose to sweeten a beer to replace sugars lost during fermentation. * Randy provides advice on using fruit in the primary vs secondary and also his preference for fruit juice versus whole fruit or puree. * Randy gives his closing thoughts on fruit beers.

Partake specializes in producing high quality non-alcoholic beers. * We discuss a bit about Ted's story and how he got into making non-alcoholic beers. * Ted tells us about his experience with the commercial non-alcoholic beer market and how he started originally with a web site selling non-alcoholic beers. * He explains some of the factors that motivated him to start producing his own non-alcoholic beers. * Ted shares his early days home brewing in an effort to perfect recipes for his brewery. * We discuss briefly Ted's use of "Gypsy brewing", which is a specific brewing term (not related to Gypsies) which means that he sources his brewing to an existing commercial brewery where they produce Partake's recipes on their equipment. * We talk about some of the methods a homebrewer could use to produce non-alcoholic beer at home including arrested fermentation and also alcohol separation. * The simplest method involves heating the beer to a temperature below the boiling point of water, but above that of alcohol so the alcohol will boil off. Unfortunately heating the beer also affects the flavor. * We discuss how you can try to maintain the right flavor balance in the beer in the absence of alcohol. * We briefly discuss bottling options, though most non-alcoholic beer makers will force carbonate (keg) their beer. * We discuss the styles that work best for non-alcoholic beer and challenges working with the delicate flavors. * Ted finishes with a bit more about Partake brewing including how much beer they produce and where you can find their products online.

Ron also runs a blog titled Shut Up About Barclay Perkins where he regularly publishes articles on historical beer brewing. * We briefly discuss Ron's return from Thailand last week as the Coronavirus breakout began. * Ron introduces the new book he's working on called "Blitzkreig!" which covers the history of British beer brewing in WWII. * Ron explains how beer brewing was much different in WWII vs WWI where we saw a drop in production. * We talk about the drop in beer gravity combined with rising production of beer during the war. * Ron explains beer taxes, which rose during WWII but not nearly as much as they did during WWI. * We discuss the role Churchill played in maintaining beer production. * Ron tells us how recipes evolved in response to ingredient supply including large changes year-to-year in brewing recipes. * We discuss hops, which largely were kept in supply during the war though hop content did drop slightly in recipes. * Ron explains shortages in new equipment, coal and other items which also made brewing a challenge. * Demand for beer remained high during the war which was good for breweries. * Ron talks a bit about bombing around London which hit many breweries, but also how the breweries often had fire brigades which helped them manage the damage. * We talk about his blog and where people can learn more about beer brewing in WWII.

White labs is one of the largest producers of brewing yeast worldwide, and Chris oversees operations at two locations in the US and one in Europe. * We start with a brief discussion of the COVID-19 virus and how it has impacted commercial brewing and Chris' yeast production. * Chris starts by explaining the white lab yeast bank which is stored at cryogenic temperatures to assure there is no change to the core yeast cells. * We talk about how cells drawn from the yeast bank are grown in the laboratory up to useful sizes and also how purity is maintained along the way. * Chris explains how they use 10x the volume of sterilized wort every two days to increase each generation by approximately 5-6x until they reach a reasonable starter size. * We talk a bit about his yeast production equipment which at one time was stainless steel but now uses a polymer film much like that used in the pharmacy industry. * Chris discusses how low gravity wort is used to grow yeast, and also how his wort is sterilized in an autoclave to assure purity. * We talk about the critical importance of yeast packaging as well as some of the advantages of White labs pure pitch packaging. * Chris explains how he harvests and concentrates yeast for packaging as well as the difficult challenge of separating the trub. * We discuss what the commercial packaging looks like compared to the smaller homebrew packets. Topics in This Week's Episode (40:09) * This week I welcome Scott Ungermann, Brewmaster at Anchor Brewing, which is one of the oldest small breweries in the United States. * We discuss a bit about Scott's background which brought him to Anchor brewing around 1987 for a tour, and led to him starting home brewing. * Later he attended UC Davis and worked 18 years at Annheiser-Busch before joining Anchor Brewing as brewmaster in 2014. * We start with a bit of the history of Anchor Brewing which started during the California Gold Rush. The current "Anchor Brewing" name dates back to 1896 * Anchor was one of the few small breweries to survive prohibition as well as industry consolidation in the 1950's and 1960's. * We talk about the 1980's when both Scott and I were introduced to Anchor Stem Beer. * Scott discusses Anchor Steam beer which was preserved by Anchor and is now known widely as the "California Common" beer style. We also talk about how steam beer is still fermented in open fermenters. * Scott provides some advice for those looking to create the perfect steam beer at home. * We discuss the "micro brew" years in the 1970's and 1980's when Anchor moved from brewing steam beer into other styles like Anchor Porter and made some of the first American Pale styles. * Scott briefly discusses Ninkasi beer which was made from bread in 1989 by Anchor * We move forward to today and discuss how Anchor's lineup has changed. * Scott shares a few beers added after his arrival including Bay Keeper and Fog Breaker * We talk about Anchor's 45'th annual Christmas Ale which creates a unique holiday ale every year. * Scott share his opinions on where he thinks craft brewing is going next after a decade of extraordinary growth * We talk about Scott's advice for home brewers

Randy is the author of Radical Brewing, Mastering Homebrew, Tasting Beer (all Amazon affiliate links) and partner in two Chicago area breweries: Five Rabbit and Forbidden Root. * We start with Randy defining what he means by a "Specialty Beer" typically built around special ingredients. * Randy provides some basic principles for brewing a beer centered around specialty ingredients. * We discuss how to get layers of flavor rather than a one dimensional beer by using complementary flavors. * Randy shares his thoughts on the psychology of beer and how it can often trick us into experiencing flavors that may not precisely be there. * We talk about ingredients - including the importance of understanding flavors for the basic beer ingredients. * Randy talks about working with herbs and spices which can be very powerful cues for certain flavors. * We discuss working with fruits including different forms of fruit available and how to best brew with them. * Randy shares his thoughts on ingredients that don't fall into the fruit or herb/spice cateogry. * We talk about prototyping beer to get the appropriate flavor balance up front and how the prototype can be scaled up to create a final beer. * Randy shares his closing thoughts on working with specialty beers.
