Pumpkin Job

(aka Pumpkin Gob, aka Pumpkin Crockpot Pudding)

1 can (16 oz) pumpkin

2 1/2 tsp pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp nutmeg, 1/2 tsp salt)

2 tsp vanilla

1 can sweetened condensed (or 1 can evaporated milk + 3/4 cup sugar)

1/2 cup bisquick (or other baking mix)

2 T butter (melted and let cool off for a moment)

2 Eggs (beaten)

Mix all together, transfer to greased/lined crock.

Crockpot: 6-8 hr low / 3-4 high

Oven: 350 - 45 min

Meredith's notes: I reduce the amount of sugar in mine and it's still sweet (esp from cooking for so long) but maybe healthier - warmed up a little, this makes excellent leftovers for breakfast
