Rachel Harper shares about how her school, followed by the Parents’ Associations at her school and further schools in her district of Greystones in Wicklow (through the It Takes A Village initiative), agreed to a “no smartphone voluntary code” until children start secondary school. Jay’s Irish story began at just aged 19 when he moved to Ireland from living in poverty in Croatia – he arrived with less than 1euro in his pocket – which meant he arrived here homeless and had to sleep rough on the streets of Dublin.
Since then Jay’s gone on to have a life-changing journey, going on to obtain 2 college Masters degrees, to becoming Irish Red Cross Young Humanitarian of the Year for his own work now serving the homeless and those most in need, and working as manager with Tiglin, the charity that first provided him with hope and a pathway out of his own homelessness.

Ingredients
6 Tbsp Plain Flour 100 g Cocoa Powder 50 g castor Sugar 1/2 Tsp Salt 120 ml oil neutral 120 ml water 1 Tsp Vanilla extract Snicker bar bits
Method
1 - In a bowl mix together the dry ingredients flour, Cocoa powder, salt, and sugar till combined 2- In a separate bowl mix together water , vanilla extract and oil and once combine add to dry ingredients and mix well 3-Spoon mixture into Small Ramikins and fill two thirds up each Ramikin Top each Ramikin with snicker bar bites 4-Place Ramikins into Air fryer and put setting at air fryer and bake @ 170 degrees for 4 mins Remove and let cool a little Serve with fresh cream or ice cream

BBQ STEAK WITH RED ONION And CHILLI JAM ON CHARRED CIABATTA BREAD
Ingredients
1x 4 oz sirloin steak
Rapeseed oil for rubbing
Salt and black pepper
1 x Ciabatta loaf
Barbecue spice rub :
2 teaspoons paprika
2 teaspoons dried chili flakes
2 teaspoons caster sugar
2 teaspoons light soft brown sugar
1 Teaspoon ground cumin
1 teaspoon cayenne pepper
2 ground black pepper
2 teaspoons salt
Mix all ingredients together
RED ONION AND CHILI JAM
Rapeseed oil for frying
4 red onions sliced
1 garlic clove sliced
1 birds eye red diced
100 ml (3 1/2 fl oz ) red wine vinegar
125 g (4oz) Demerara sugar
Salt n pepper
WHOLEGRAIN MUSTARD
4 tablespoons of good quality mayonnaise
2 tablespoons of wholegrain mustard
1 handful of rocket and watercress leaves
METHOD
1- Rub steak 1-2 hours before cooking with BBQ rub and chill
2- let steak come up to room temperature
3- For the jam , heat a little oil in a pan and fry onions , garlic and chili for at least 10 mins until soft and sweet
add vinegar and sugar , turn up heat and boil for 5-6 mins to thicken to a jam , simmer for 10 mins more
season well and leave to cool
4- Rub steak with oil and place on hot barbecue, cook for 3 mins on each side or to temperature of your liking and take off heat and
leave to rest
5- Toast ciabatta and spread wholegrain Mayo on bottom layer ,top this with some leaves and then slice the delicious steak on top
Add a spoonful of the fiery jam and pop on top the other piece of ciabatta , enjoy

Roast Leg of Lamb with Rosemary and Garlic, Potato Gratin , Maple Roasted Vegetables served with a Redcurrant and Mint Roast Gravy
Serves 6-8 people
Ingredients :
1 – Leg of Lamb ( 2.5kg-3kg ) 5-6 lb , bone In
50 g (2oz) fresh rosemary
6 garlic cloves peeled and sliced
Fresh black pepper
Sea salt
2 tablespoons Rapeseed oil
Gratin Potatoes
900 g ( 2lb) potatoes , cut in to thin slices
400 ml ( 14 fl oz ) Milk
300 ml ( 1/2 pint ) double cream
Good pinch of freshly grated nutmeg
100 g ( 4 oz ) mature cheddar cheese
4 cloves garlic crushed
Maple Roasted Vegetables
2 courgettes cubed
2 carrots ( medium size ) trimmed , peeled and cut into cubes
2 parsnips ( medium size )trimmed , peeled and cut into cubes
2 red onions , peeled and wedged
1 tablespoon Maple syrup
Sea salt
Freshly ground black pepper
4 Thyme sprigs
4 fresh Rosemary sprigs
Roast Redcurrant and Mint Gravy
1-tablespoon of plain flour
300ml (1/2 pint ) lamb stock / chicken stock
1- tablespoon of Redcurrant jelly
50 g (2 oz ) Fresh Mint leaves
Salt and freshly ground black pepper
METHOD ;
Pre-heat oven to 200 c / 400f / gas 6
Prepare Leg of Lamb
Using point of sharp knife or skewer, make deep holes all over the lamb about 2.5 ( 1 inch apart ) ,
Place 2 slices of garlic and 1 rosemary sprigs into each hole , when all holes are filled , drizzle over rapeseed oil and sprinkle sea salt and freshly ground black pepper over the Leg of Lamb ,
Place Leg of Lamb on to roasting tray and place in pre-heated oven . Reduce the heat to 180c / 350 f / gas 4 after 20 mins. Cook for 1 hour more for very rare lamb or 1 1/2 hours – 2 hours for well done
Take out when done and leave to rest for 15 mins before carving .
Roast Redcurrant and Mint gravy
To make gravy , place roasting dish directly onto hob and stir in flour into fat and juices . Cook for 1 minute , stirring continuously , then gradually add stock , whisking until smooth after each addition and scrapping the bottom of the tin to remove any caramelized juices , transfer to a small pan and whisk in the Redcurrant jelly and add chopped fresh mint , then simmer gently until you have achieved the desired consistency, carefully strain into a gravy boat
Gratin potatoes;
Peel potatoes and slice them into thin slices ( I use mandolin for this ) rounds 3 mm ( 1/8 in thick ) . Do not wash them but dab dry with a cloth, season with salt and pepper . Pour milk and cream into a pan and add the garlic and nutmeg. Season to taste and just heat through but do not allow the mixture to boil, then quickly remove from the heat . Arrange a third of the potatoes in a greased ovenproof dish that is 23 cm (9 in ) x 18 cm(7in) and at least 5cm(2in) deep . Season to taste , sprinkle some grated cheese over potatoes and then add another third of potatoes in an even layer , season to taste and sprinkle some more grated cheddar cheese over potatoes and arrange the rest of the potatoes on top in an attractive overlapping layer and carefully pour over the milk and cream mixture .
Cover with foil and bake in oven for 1 hr 15 mins until cooked through . Sprinkle on top some grated cheese and place back in oven for a further 10 mins till golden crisp on top . Take out of oven , ready to serve . These can be prepared and cooked the day before and then reheated till pipping hot .
Roasted Maple roasted Vegetables
Place chopped prepared Vegetables into roasting dish , drizzle with rapeseed oil and season with salt and pepper . Pour over 1 tablespoon of maple syrup and combined till all coated with Maple . Add Thyme and Rosemary sprigs and combine. Pre-heat oven 180c / 350f / gas mark 4 Bake in oven for 30-40 mins until tender and just beginning to caramelize, serve at once.

Two hundred and fifty years later, Amazing Grace is the world’s best loved hymn and one of the most-recorded songs of all time.
In this special anniversary year, we are delighted to invite you to share this remarkable story by hosting a performance of “Forever Mine.” Forever Mine is an original stage play and costume drama explorig the two great loves of John Newton’s life – his love for God and his love for “Polly” (his nickname for his wife Mary). Based on their love letters and on letters, diaries and historical writings, Forever Mine is a true story of separation and reunion, death and new life, loss and redemption. Although set in the 18th century, this moving narrative will resonate with modern audiences.
While focusing on Polly and Newton’s love story, Forever Mine also looks honestly at John Newton’s role in the slave trade even for six years after his conversion. It traces his slow journey to repentance and his later work supporting the campaign for abolition as mentor to William Wilberforce. Forever Mine elevates the lesser known voices of the abolition movement such as black writer Olaudah Equiano and the poet William Cowper.
