- RAZA PET NAT
Pet Nat is an abbreviation for Petillant Naturel, a naturally sparkling wine. The fermented wine is still bottled in the bottle, which stops the fermentation there, so a little CO2 and yeast precipitate is formed in the bottle. The wine is not filtered or sweetened (no dosage) and the wine is now closed with a regular crown cap. The wine is made with natural yeast and uses minimal sulphites. Spontaneous fermentation ends in the bottle, as a result of which a pleasantly natural cloudy layer remains in the wine. This refreshing, sparkling wine is full of fruity and lively orchard flavors. The natural sediment makes the wine cloudy, while adding many interesting nuances to the taste, the wild yeast makes the wine tasty and easy to enjoy. * STOCCO PROSECCO
Refined, elegant bouquet. Fine on the palate with typical Prosecco preservation of quality, floral and fruity hints of white peach. Excellent as an aperitif and for the whole meal, excellent with delicate first courses. Glera grape grown on the flat with gravelly substrate covered by earthy material with low density - 3500 plants to hectare. Soft pressing, static decantation, fermentation in stainless steel tanks, second fermentation according to the Charmat method in autoclave with selected yeasts at a controlled temperature.
Tinned pear and peach aromas with a little mineral inflection. Great party wine.

A rounded dry white with citrus blossom and pear aromas over a crisp palate that reveals lemon, almond and green olive notes. This flavoursome Pinot Grigio is from Italy’s famed Veneto region, where winemaker Anselmo Martini sources grapes from prime hillside vineyards.

This Malbec is smooth with sweet and spicy aromas and rich flavours of plum and cherry. Enjoy it with barbecued foods or richly flavoured dishes.

Bellante Prosecco
Elegant, creamy, dry sparkling Prosecco, made from Glera grapes, with white peach and jasmine notes. It is delicious as an aperitif with party foods.
M&S Collection Gavi di Gav
Unoaked, intense and mouth-watering, this wine has citrus and stone fruit flavours with a hint of floral notes. Cortese grapes, grown in a designated zone around the town of Gavi in Piemonte, are classified as Gavi del Comune di Gavi and these vineyards produce wines of great finesse. Father and son team, Claudio and Carlo Manera make this example from fruit grown in various estates using sustainable viticulture practices.

The wines are from Northern Spain, specifically Castilla Y Leon, a region famous for mushrooms and truffles. This week's two red wines will match meaty umami dishes with beef, lamb or mushrooms - but also with truffles - and yes we had a truffle in studio...

- Altamar Sauvignon Blanc - €14
A lively, crisp, refreshing white wine with flavours of lime, lemon, gooseberry.
A delicious Sauvignon Blanc from Chile's premium, cool climate Leyda Valley with intense aromas of grapefruit and lime, a hint of black pepper and delicate floral notes. The harmonious and refreshing citrus flavours pair so well with grilled salmon, chicken dishes or creamy pasta.
2. Guia Real Rioja - €14
Back in the 1970s when we were all a lot poorer if you were served wine in Ireland it was generally sweet German wines or dodgy French vin de table with added sugar to make them drinkable. The exception on our shelves in those days was Rioja. We took to Rioja early and we still love it. Tempranillo aged in oak barrels to give juicy fruity wines with a background of cedar and spice.
An easy-going Rioja made from Tempranillo grapes, with floral aromas and flavours of fresh red cherries. Mellow enough to enjoy on its own, this rich and fruity, medium-bodied wine is perfect with lighter meats, pizza and pasta dishes. Suitable for vegans.
- Salentein Malbec - €23
Ahh Malbec, the Irish love Malbec! I've never met a butcher that didn't want to tell me how good Malbec is with a fine big lump of steak, and they are not wrong. From sunny high altitude vineyards that get loads of heat in the daytime but at night cool down to give the grapes a rest and preserve acidity. This gives big juicy black fruit flavours but crucially also freshness. I actually like to serve this a little cool - around 10-12 degrees or so to bring out those fresh black berry and liquorice flavours.
A rich, flavourful and complex wine with flavours of dark fruits, violets and spices.

- 2022 Ben Marco Plata Special Edition Malbec €12.00
The grapes for the Ben Marco Plata are grown in Uco Valley in Mendoza at an altitude of 1,050 metres (3,445 feet) above sea level, which is what gives this wine its elegant finish. It was aged in French oak barrels for 8 months.
With red fruit aromas and a hint of mocha there is also a lovely spiciness from the oak ageing. It bursts into life when you taste it, red cherry with a hint of chocolate and ripe firm tannin, the perfect wine to serve with beef. It is also a good match for hard cheeses like Parmesan, Emmental, or goats cheese.

- 2019 Portia Crianza €18.00
This superb red is made from 100% Tempranillo aged in French Oak. This is a serious high-quality red wine, the judges tasting notes state: Ruby red in colour with a hint of garnet, lively juicy fruits. An inviting nose of vanilla and black fruits with good structure, soft tannin, and length. Best in Show!! Easy to see why this is the overall winning wine. Superb!

- Alsace Gewurztraminer
Gewurztraminer is one of those grapes everyone should try at least once. Only to be found in Alsace (and Germany), this is intensely aromatic with rose petal and lychees scents and a lush palate. These exotic tropical flavours make this an excellent match for Asian dishes such as Thai or Chinese food but also with dishes containing pumpkin, sweet potato or parsnips.
- M&S Quintessence Méditerranée
France has always had the world's most famous Rosés from Provence to the Loire to the Rhône (Tavel AOC in the Rhône is exclusively Rosé). This is made in the Provence style so pale in colour, floral and fragrant, and of course dry on the palate - making it perfect for matching with shellfish, pizza or even spicy food.
- Classics Claret
Claret simply means red Bordeaux - the English coined the term and it originates from the word "Clairet" which is a light style of Bordeaux which is closer to pink than red. This is a blend of Merlot and Cabernet Sauvignon with a little Cabernet Franc - the three classic Bordeaux red grapes. Ripe and fruity with blackcurrant fruits and a touch of chocolate, perfect for a nice steak.
Clairet still exists as a style but has fallen out of popularity a little as the world looks to paler rosé.

This is from rom the rolling countryside of Gascony in South West France, a wine which elegantly blends Sauvignon Blanc's naturally tangy, herbal character with a deliciously soft succulence from the region's sunny climate..

Originally these vineyards would have been focused on Armagnac Brandy which is still produced and is more interesting than Cognac. Fino is the lightest style of sherry and is BONE DRY with a salty and almond taste. Made in solera protected from oxygen under a layer of ‘flor’ which gives it a unique taste. Nice story about the most popular brand. Ideally paired with savoury nibbles, olives, fried fish, Spanish ham. Serve well-chilled, this style is made to be drunk in its youth while very fresh it doesnt keep at all once open.
This style outside of Jerez in southern Spain is slowly becoming more popular Julia Childs Cocktail – Fino Sherry & Gin
Fernando de Castilla Amontillado €23 approx

Slightly off-dry sherry. This wine has deliberately been allowed to be in contact with oxygen so the colour is chestnut. The nose displays more intense nutty aromas. Best paired with salted almonds and charcuterie and olives. Amontillado is a stepping stone into some of the more complex styles of sherry.

The white Villa Des Croix Picpoul de Pinet Languedoc, France. It is a lesser known white grape from the Langedouc region in France approx €17.00
Picpouls are light, fruity and great with simple food. Widely available in independent wine merchants.
The red is Castro Ventosa El Castro de Valtuille Mencia Joven a Spanish wine and also a lesser known grape called Mencia from the Bierzo in Spain. It is a young red wine, lighter in style so can be chilled and enjoyed on its own or with charcuterie, approx €16.00
Widely available in independent wine merchants.
Menica's can vary in style this is the perfect style for someone new to the grape. This particular wine has notes of black cherry, spice and is delicious.

Today’s Pale Ales are listed below.
Moosehead Pale Ale is an English Pale Ale of 5.0% A.B.V and is brewed in St. John, New Brunswick, Canada. Moosehead Pale Ale presents as pale straw gold beer with a solid white head. At 5% a.b.v., this beer is an incredibly easy drinking beer, but it has substantial complexity. It does not ‘punch the drinker in the face’ with flavour, but it most definitely has many layers of flavour.
Interstellar Pale Ale is an American Pale Ale by Outer Place Brewing brewed in Kildare and collaborating breweries. Interstellar belongs in the American Pale Ale style. Brewed with American hops – Cascade and Strata, this beer combines the essence of a West Coast IPA with a juicy New England IPA, but is brewed as an American Pale Ale (rather than as an IPA) – with an a.b.v. of 5% and a less assertive but notable hop bitterness.

Combel la Serre Pur Fruit - This is a Malbec from the Cahors region in the South West of France. The original home of the grape before Argentina stole the mantle. This is a delightfully refreshing example, particularly when chilled, and shows blackberry and violet aromas, the hallmarks of this grape variety. This wine is done in the Beaujolais style and sees no oak to keep it light and bright.
Craven Cinsaut - By Mick & Jeanine Craven in Stellenbosch. Cinsaut was once the workhorse grape for South African fortified wine production. When young the vines give a huge bounty of average quality fruit. As the vines age the complexity of the aromas go up as the harvest size goes down. This is a complex, but light & refreshing example. Delicious out of the fridge and it’s low alcohol makes it perfect for any occasion.

Prosecco Rose
All Prosecco comes from Northeast Italy. Prosecco Rosé is a relatively new category with the Consorzio the Italian regulatory body permitting its production from Nov 2020. M&S were the first major retail to launch Prosecco Rosé. The M&S Prosecco Rose is made by a family winery based in the Del Bianco family located in the heart if the Prosecco near the town of Conegliano. The grapes are Glera a white grape and Pinot Noir (or Pinot Nero in Italian) max 15%. Glera makes lively floral wines and Pinot Noir adds the strawberry red fruits. Prosecco Rosé as with all Proseccos is made by the Italian/Martinotti/tank method, where the still wines undergo a second fermentation in big, pressurised tanks to produce the lovely creamy bubbles. Proseccos are all designed to be drunk you and fresh to enjoy all the lovely floral fruity flavours.
Classics Pinot Grigio
M&S Classics range aim to have wines which truly represents the best quality and typicity of the region or grape. Italian Pinot Grigio can get a bad wrap as lacking flavour and insipid, but it Northeast Italy it can be made into a really flavoursome wine. The M&S Classics Pinot Grigio is made for us by a lovely family winery which is based in a repurposed brick making factory. M&S work closely with the family to make our own wine blend. We visit it them every year in November after the harvest to agree which wine parcels will go into our blend. We aim to get the wine to sing with fresh pear and white blossom notes, round and full flavoured but a wine that can be sipped on its owned or paired with fish and just about any Italian dish
Lisboa Bonita
This wine is made exclusively for M&S by Casa Santos Lima, based 25kg from Lisboa in Portugal; a country that makes the full range of wines from Sparkling, Red, White, Rose and sweet but are less visible on our shelves as they have a healthy home and tourist market. Portugal has a rich myriad of the local indigenous grape. This wine is made from a selection of these and includes Caladoc, Castelao, Tinta Roriz, Alicante Bouschet, Touriga Franca and Touriga Nacional. This blend gives to a rich full bodied oaked wine that has flavours of ripe black berries and bergamot. There are vanilla notes as well that come from the 6 months ageing in French and American oak for give this complex wine. The label reflects the beautiful blue and white tiles often seen in Portugal particularly buildings in the old town of Lisboa. This hearty wine is perfect for BBQs from the full meaty versions to the creative vegan dishes now being seen. The wine of course is vegan as all M&S wine are.
