Afro-Hispanic women, known as dulceras, could be seen roaming the streets with freshly made pastries, cookies, cakes, and pies balanced on their heads to sell. Slaveholders would send dulceras out to sell sweets in exchange for the majority of their profits.
Doña Josefa Marmanill, an enslaved Afro-Peruvian cook, whose legacy continues to tantalize our taste buds and inspire our hearts.
Enslaved Brazilian women cooks used vitamin- and fiber-rich ingredients that originated in Africa, like okra and coconut milk, which contributed to the development of the unique and rich Afro-Brazilian cuisine that continues to influence Brazilian food culture to this day.
Brazilian food has strong African influences due to the importation of enslaved Africans starting and ending in the country. This can be seen in their dishes, like vatapá, a seafood gumbo.
Enslaved Afro-Brazilian women sold prepared food, like acarajé in the streets of Brazil. Originally a popular West African dish, Afro-Brazilian have continued to sell acarajé long after slavery was abolished in 1888.

She founded the Freedom Farm Cooperative, which provided food and economic opportunities to Black Mississippians. Marcus Garvey's United Negro Improvement Association (UNIA) had more than 700 chapters in 38 states alone in the early 1920s, including hundreds of more chapters throughout the world. The UNIA championed Black nationalism, self-determination, and Black entrepreneurship. Garvey founded the Negro Factories Corporation (NFC) in 1919 and offered stock in it to African Americans as a means to help Black people to achieve economic independence. Among its many activities, the NFC ran grocery stores and restaurants in the early 1920s.
Today we dive into the history of African American Cooperatives. George Schuyler, founder of the Young Negro Cooperative League, and Ella Baker, assistant of the Young Negro Cooperative League, organized food co-ops and Black-owned and operated grocery stores throughout the U.S. during the Great Depression to aid the Black community in economic independence and food self-sufficiency.

Dr. Frederick Douglass Opie discusses Zora Neale Hurston’s early twentieth-century ethnographic research and writing. It emphasizes the essentials of food in Florida including everyday meals as well as special occasions and looks at what shaped people’s eating traditions in early twentieth century Florida. Opie shows that Hurston did for Florida what William Faulkner did for Mississippi—both provided insight into a state’s history and culture through various styles of writing and contributed to a larger southern canon. Dr. Frederick Douglass Opie shares oral histories from Harlem residents about Father Divine. Every Sunday during the Great Depression the controversial New York-based evangelist Father Divine (aka the Reverend General Jealous Divine and aka George Baker) fed starving interracial groups by the hundreds for free in Harlem, while many other black preachers ignored their flocks’ hunger pains. Most African-American urban clergy avoided sermons that addressed racism, poverty, and the social conditions of blacks in America. Instead, their sermons focused on the need for spiritual conversion and life after death. Let’s talk about rice. West Africans cultivated two types of rice (one coarse and red, the other very small and white). The Portuguese introduced Asian rice from the Far East, which most likely complemented rather than substituted for the two types of rice indigenous to Africa. Groups between Cape Verde and the Gold Coast cultivated so much rice that they became known as the people of the Rice Coast. The African slave trade introduced rice cultivation to the British controlled Carolinas and Georgia. From their rice exports sent the cash crop around the world before the American Revolution. In 2006, the Yankees announced plans to build a new $800 million dollar stadium. In order to do so, the administration of former billionaire Mayor Michael Bloomberg doled out public welfare to the privately owned lucrative sports franchise. The welfare included $444 million in rent and tax breaks, free land in the form of 28 acres of city-owned public parks, ball fields and tennis courts, state-subsidized parking garages, and the construction of new Metro-North commuter rail station in front of the new stadium something local residents have been requesting for years. In exchange for the public welfare, the Yankees signed a community benefits agreement in the form of promises. South Bronx activists and self-proclaimed Yankee fans mobilized in opposition to the original deal and Yankee’s broken promises thereafter. Hoppin’ John, collard greens, and dumplings are popular New Year’s Day dishes among black southerners. Black-eyed peas were believed to represent coins and the greens dollars that, if eaten, would bring economic prosperity for the New Year. In other parts of the world, folks have traditionally eaten lentils on New Year’s with a similar rational. Today Hempstead is a predominately-lower working class black suburb of New York City. But it had not always been that way. Hempstead had been a diverse but largely white middle and upper class city that thrived on the economic vitality of Mitchell Airforce based started in 1918. The town had a nationally recognized High School for its academic and athletic excellence. The closing of the Mitchell field in 1961 resulted in a gradual economic decline of the city over the next thirty years. This show is a documentary history of Hempstead 1960s-1990s based on the oral history of 4 of the schools legendary student athletes who all played lacrosse in high school and college. The documentary is done in celebration of former Tiger Al Hodish who will be inducted into the Long Island Lacrosse Hall of Fame in January 2019. Brothers James and Robert Paschal opened a restaurant adjacent to the Atlanta University Center (AUC). Atlanta city officials gave Paschal’s a “colored only” Jim Crow restaurant seating designation. However, the restaurants famed fried chicken and other menu items attracted white dinners who made up some seventy percent of its regular customers. The brothers had committed to employ as many AUC college students as they could knowing that many of them needed the money. What role does food play in social movements? The “People’s Kitchen” at Occupy Wall Street (OWS) at Zuccotti Park, in New York City served 3,000 meals a day for free from October 2011 until a police eviction in November 2011 ended the occupation of the park. Dr. Alvenia Moody Fulton is not well known as a pioneer in the holistic health movement which championed whole grains, unprocessed foods, juicing, and vegetarianism. Interviews newspapers, magazines, autobiographies, and some ethnography are used to tell her story. Dick Gregory learned most of his holistic health expertise from Fulton starting back in the 1960s. McPherson is a native of Long Island played who was an outstanding Quarterback at Syracuse University. He was an All-American and runner-up to the Heisman trophy, the award given to the top US collegiate football player. McPherson is a member of the National College football Hall of Fame. After a professional football career, He went on to become an activist and entrepreneur. Today he is in demand as a public speaker and trainer on the topic of preventing violence against women, demystifying the term feminist, and redefining what it means to be a man and what men say that is condemning to women. This is an excerpt of a talk I gave at the Institute for Advance Study in Princeton, New Jersey on The similarities between African cooking and Jazz. Improvisation is creating as you go along. Jazz musicians play by ear and from printed music, and then they improvise or give solos. Similarly, so do cooks particularly those of West and Central African heritage on the continent and throughout the Americas. These cooks come from cultures steeped in oral histories in which griots taught a communities’ history from one generation to the other. Recipes passed from one generation to another in a similar way; from one woman to another woman, from one generation to another generation. The following is an excerpt of an ArtScience talk on New England Foodways held in Cambridge, Massachusetts. Leah Mennies, Senior Food Editor at Boston Magazine organized and hosted the event which consisted of a Panel discussion. Panelist included Babson Food Historian Fred Opie, Irene Li, chef/owner of Mei Mei, and Marc Sheehan, chef/owner of Loyal Nine. Both are Cambridge based restaurants. The theme of the talk is the future of New England Foodways--How do we define them now? How should that change? What are the challenges? What does a regional sense of place through cuisine look like? How does the past inform this? How can the storytelling surrounding New England cuisine be stronger/better/more informed? What does that look like here in Boston/Cambridge vs. in the region as a whole? Mac Ford earned All American honors at the Gilman School in Maryland before attending UNC where won a national championship in 1982. Is individual honors include the 1985 ACC Player of the Year, North/South All-Star Game MVP in 1985, All Club honors, 1990 US national team selection and Best Attackman at the 1990 games. He also played on two U.S. national teams in the 1980s. Many consider Schneck one of the greatest players of all time. He was named to the NCAA's 25th anniversary team in 1985. This week’s show is an excerpt from a talk I (Host Fred Opie) delivered at the McDonogh school in Baltimore. School officials invited me to speak to the schools FCA group, a history class, varsity lacrosse teams, and the school’s Sankofa Club (an organization that supports the concerns of the school's African-American students but it's not restricted to black students). The topics you will hear include what's it like to be the first and/or one of the few African Americans and why have African-Americans struggled with food related illnesses. Enjoy some African-American barbershop talk where you learn about my experience from childhood until adulthood and about the strategies I have used to thrive in uncomfortable situations. My tips are helpful for students, parents, teachers, coaches, and high school and college school administrators. It's African-American history month and I thought that this show would be appropriate because it contains lacrosse stories, school stories, and my own oral history. Part 1 A native of Victoria, British Columbia, Hall of Famer Kevin Alexander (AKA Alexander the Great), has been called the greatest goal-scorer in Canadian lacrosse history. He played the majority of his pro-indoor career with the Victoria Shamrocks of the Western Lacrosse Association. He led his club to Mann Cup (Canadian indoor championships) in 1979 and 1983. In addition, he helped the Buffalo bandits of the Major Indoor Lacrosse League win championships in 1992 and 1993. Alexander was a four-time Canadian field lacrosse selection earning best midfielder of the 1986 world championships. She was an exceptional soccer player at UMASS. She played on two US National teams and served as the head coach of the University of New Hampshire’s Women’s Soccer and Lacrosse Teams. Both the Women’s Soccer and Lacrosse Teams at UNH won ECAC titles and competed in NCAA Tournaments. Anderson is the founder and director of the Connecticut based Spirit Sports Camp for girls. Syd “the squid” Abernethy gained his nickname for his patented head and shoulder fake at the attack position that allowed him to blow by defensemen and score bunches of points during his lacrosse career. A lot of young players today of all stripes know nothing about him. I witnessed his game first hand and I think his story is important for serious fans and students of the game. A tall well-built attackman with powerful legs and blinding speed, Abernethy was born at John’s Hopkins University Hospital in 1958. He grew up in Annapolis, Maryland where he first played middle school lacrosse at the Key school and then later for a Hopkins’ lacrosse alum, Dave Roberts, at Annapolis High School located down the street from the U. S. Naval Academy. He would go on to become the second African American to earn first team All American honors in the Division 1 lacrosse after Jim Brown and before Kyle Harrison. Rick Sowell the head lacrosse coach at the United States Naval Academy talks about his time serving as an assistant coach under Hall of Fame Coach Dave Urick and Urickisms and provides great career advice for young coaches. But first Fred’s response to questions from listeners: Jayson, what’s appropriate to teach U 11 athletes about a settled offense? Byron, when do I put my child on a more competitive team? Jayson, my response would be the same for basketball, soccer, ice hockey, or lacrosse, and I’ve coached all these sports to U 11 athletes. Keep it Simple—teach the players to prevent traffic jams, move the ball, keep possession, be a double threat to score a goal or assist a goal. 1. Move to open space to prevent traffic jams 2. Be a threat to shoot or assist a goal in open space 3. Keep passes and shots 5 to 7 yards 4. Shoot or pass within 3 to 5 seconds 5. Back up shots on goal to maintain possession 6. It’s harder to cover people who move then those who don’t 7. Pour on praise when they execute desired outcomes In summary: Shoot or pass within 3 to 5 seconds, be a double threat to score or assist a goal, and it’s hard to cover someone who moves in those who stand still. Finally, a parallel principle is that as in life, great offensive players hustle and make things happen instead of watching things happen and the best offense is a great defense. Byron if your son or daughter is fanatical about a sport and you have the ability to do it with cash, enroll them in a one or two day clinic attended by kids who are competitive and skilled and under the supervision of great coaches. Check the websites of top high school and college programs in your area and or ask people in your network who are in the know for suggested clinics. Watch your child play at the beginning of the clinic and before the end and read his or her body language to see if they are having fun. Ask them for their feedback about what they want to do next in terms of playing in a more competitive environment and/or team. This should give you the information you need to make an informed decision. Above all be sure your child is pulling you and you’re not pushing the child.

Hempstead grads continued to attend some of the finest schools in the country including West Point. He is in his fourth season as the Director of Football Operations and Player Personnel at Boston College. For more than two decades he has been in the business of evaluating prospects and recruiting them for universities as well as for five seasons for the NFL’s Arizona Cardinals. Terry was a scholarship athlete at Syracuse where he played linebacker for the football team. He was a two-time Big East Conference Academic All-Star.
