2 oz. gin or vodka (according to taste)
1 dash Yuzu bitters or other citrus bitters
In shaker, muddle 3 sprigs of thyme, ginger, sugar, and lemon juice. Pour gin or vodka into the mixture, add ice, shake until well chilled. Double strain into coupe glass. Garnish with a sprig of thyme and lemon chip. Finish with a dash of bitters.
