Steven started his journey into growing food as an urban market gardener where he would grow tons of veggies on as little land as possible and sell it at farmer's markets.
But he has moved beyond simply growing vegetables in recent years. Steven now manages his own homestead on 16 acres that includes animals and even a forest.
I have a previous episode with Steven from several years ago called Lessons In Regenerative Urban Farming. In that episode, we talk all about his time as an urban farmer in California. But in this episode, we get more into homestead management.

This episode is a conversation with Dr. Miki Ben-Dor, a Paleoanthropologist at Tel Aviv University. His area of study examines the causal relationship between Paleolithic nutrition and human evolution. Figuring out what our ancestors ate can help inform us how we should eat in this day and age.
Miki and I sat down to explore his findings on humans being much more adapted to eating meat than plants. Now I'm not against eating plants and Miki’s findings dont claim that we should only be eating animal foods…but he has uncovered a lot of evidence that points to humans being meateaters for a great length of our evolution.

Burbot are amazing predatory fish that exist in the northern hemisphere. And the best part about them is that they are a very FINE food resource! He earned his PhD in Kinesiology and Community Health & received post-doctoral training at the Center for Human Nutrition in the Washington University in St Louis School of Medicine. Dr. van Vliet also holds a Masters in Nutrition Science. He performs clinical and translational studies to evaluate the effects of whole food ingestion and physical activity interventions on body composition, physical function, inflammation, insulin action, and intracellular signaling pathways involved in regulating muscle mass with advancing age. His work has been published in the American Journal of Clinical Nutrition, the Journal of Nutrition, and the Journal of Physiology. Currently, his newest research studies the impact of agricultural production systems on nutrient density, and metabolic health of consumers as well as animals.

This episode is a conversation with Tom Volk who is a world-renowned mycologist and professor at the University of Wisconsin - La Crosse. He teaches numerous courses such as Medical Mycology, Plant-Microbe Interactions, Food & Industrial Mycology and even Lating & Greek for Scientists. Tom runs a popular web page called Tom Volk's Fungi, which features a host of fungi species and is an extensive introduction to the Kingdom Fungi. He has worked in mushroom cultivation and is intimately familiar with the genera Morchella (morels), Cantharellus (chanterelles), Hydnellum (a tooth fungus), Armillaria (honey mushrooms) and Laetiporus (chicken of the woods, or sulfur shelf). He also has conducted fungal biodiversity studies in Wisconsin, Minnesota, Alaska, and Israel. Having lectured in 35 states so far, Tom is a popular speaker at many amateur and professional mycological events throughout North America, including many NAMA and NEMF forays. Tom was also the president of the Mycological Society of America.

Victor and his friend were the first people to start a Syntropic farm in Australia and he currently runs the website syntropicgardener.com. Syntropic farming is all about creating life through systems that bring together landscapes, flora, fauna and humans in harmony. Unlike industrial agriculture, where biodiversity and human engagement are largely being removed from the system, Syntropic farming aims to utilize biodiversity to encourage healthier ecosystems from which we can harvest delicious food ingredients. Personally, knowing exactly where my food comes from is something I place a lot of value on. This is one of the reasons why I hunt, fish and forage for wild foods. This fall I have really been trying to learn about duck hunting, so I decided to have my friend Drew Klabon on the podcast to share some of his duck hunting experience and stories. Drew has been hunting ducks since he was a young boy and has a wealth of knowledge to share.

The new episode is all about the King of Herbs, “Basil”. I am fascinated by all the different kitchen herbs that are found in cuisines around the world. Therefore, I decided to explore them in more detail. My grandmother from Italy once told me that herbs can make or break your dish and this saying has stuck in my head ever since. She is an amazing cook and knows a host of old traditional Italian recipes, which she learned from cooking with her mother. Sometimes I wish that I could experience what it was like in a traditional Italian kitchen back then. In my grandmother's kitchen, you will stumble upon many different herbs. She uses them in every dish. Yet, the usage of kitchen herbs is not limited to Italian cuisine. Every cuisine I know of uses some sort of herb or spice to add flavor; the best part is that many of these herbs are loaded with nutrients!
It was hard to choose the first herb to learn about since there are so many that I love. Yet, I decided to go with Basil, because most people probably already have a basic understanding of it.
