Tess Taylor lives in El Cerrito, California, where she raises artichokes on the sidewalk median strip, has four chickens in the backyard, and is working to restore a community orchard. Her work as a writer deals with place, ecology, memory, and cultural reckoning. She published five celebrated poetry collections: The Misremembered World, The Forage House, Last West: Roadsongs for Dorothea Lange, Work & Days, and Rift Zone. She has also been the on-air poetry reviewer for NPR’s All Things Considered for over a decade. Herwork as a cultural critic appears in Harpers Magazine, The Atlantic, The Kenyon Review, Poetry, Tin House, The Times Literary Supplement, CNN, and The New York Times. Have you ever had days that were starting to feel or taste like a soup that was missing a crucial spice? This episode was inspired by my recent feelings of blandness that started to set in. March 22 is World Water Day. The holiday, initiated by the United Nations in 1993, serves as a reminder that we must protect and conserve this limited vital resource.
Water scarcity is too real for many people on the globe. Did you know one in three people around the world lacks access to safe water? That’s 2.2 billion people who do not have access to clean water as many of us do. And according to Charity Water, women and girls around the world lose 200 million hours every day walking or water. And it is predicted half the world's population will experience water scarcity, a situation expected to result in the deaths of millions and an unprecedented rise in military conflicts.

RIO DEL NORTE TO HOST “COMPOST TEA PARTY” TO SAVE WATER ON WORLD WATER DAY
More than 500 students and community volunteers will come together MARCH 22, 2023 to learn how to create pesticide-free landscapes that sequester carbon and save water and will be treated to a special pesticide -free lunch.
Oxnard, CA. — In response to global warming and the mega-drought gripping most of the Southwest, Rio Del Norte School students will participate in a school-wide “compost tea party” on Wednesday, March 22, World Water day, to shower their school grounds with an all-natural soil-enriching brew. Community experts and volunteers will guide 500 pre-kindergarten to 5th grade students to douse the school’s landscape, gardens, orchard and play areas with the “tea” in order to build pesticide-free, nutrient-rich soil that will better sequester carbon from the air and save water. Students will also participate in 19 nature-based climate solution workshops led by experts from within the community. We will also have the River Song Band performing some of their smash hits led by Dr. John Puglisi, Rio School District’s Superintendent.
“The goal of the compost tea party is to engage the community to eliminate petroleum-based fertilizers and glyphosate pesticides, which the World Health Organization concluded in 2015 probably cause cancer in humans,” said Florencia Ramirez, Oxnard author of the book Eat Less Water, podcaster and director of the Pesticide Free Soil Project, a youth-led organization.. “Playgrounds, parks, and gardens are part of the solution to save water on this planet , because healthy soil that is untreated with chemicals can hold water up to 1,000 times more than treated soil. The compost tea party is an event to empower young people who want to turn their hope for a healthy environment into action. ”
In addition to preparing the compost tea and applying it to the school’s landscape and garden, students will learn about soil science from David White, PhD., Executive Director of the Center for Regenerative Agriculture in Ojai, beneficial bugs from Ron Whitehurst, owner of the world-renowned Rincon-Vitova Insectaries in Ventura, and other topics related to soil, organic food, compost, and decomposition from seventeen additional workshop leaders across the county from Ventura County Farm to School, Rio School District’s Farm to School, Oxnard Union High School District’s Farm to School, Master Gardeners, Oxnard High School Culinary Arts, Once Upon a Watershed, etc.
The Oxnard High School Food Service & Hospitality students, led by teacher Ms. Debra Gallagher, are looking forward to working with the younger students. “Teaching kids how to prepare healthy snacks using garden vegetables while conserving water will be a fun challenge,” says student chef Harley Louis, junior. “When we run the blender bike workshop for the students we will be teaching them about alternative forms of energy and how to make a healthy drink at the same time,” says Elisa Barragan, senior Food Service student. This will be the second time the Food Service students have volunteered for the Compost Tea Party. Alumni and current college tutor for the program, Ms. Paula Perez, remembers her experience at the Compost Tea Party as “ exciting to be able to teach the students and see how well they retained what they were learning.”
Students, staff and volunteers will eat lunch made with locally-sourced ingredients planned and prepared by Rio School District’s Child Nutrition Services.

Thanksgiving is fast approaching. And right about now is when I’m thinking about the guest list, menu, and shopping list. And while this holiday is my favorite with the focus on gratitude, cooking, and sharing food, we collectively throw away more food on Thanksgiving than any other day of the year.

I know that we can all do better. I can do better. I have reinstated the Sunday dinner. What that simply means to me is it's a day when I make dinner more of a production. I think it's really important to have one day of the week set aside to make more elaborate dishes. These are the days that you make those recipes that you say, I'll make it when I have more time. These are the meals you set aside to make those more elaborate meals remembering that what is considered "elaborate" for one home cook is different for another.
So for me, elaborate is the day that we make lasagna or empanadas or homemade pasta.
When we carve out one time a week or month to gather for a special meal, we are building deeper relationships while at the same time growing well-being for the planet.
In this episode, I offer a few ideas to get you started to reinstitute the "Sunday" dinner, regardless of what day of the week or month it falls on.

September marks the beginning of Hispanic, Latin X Heritage Month. Each year Americans observe this time from September 15th to October 15th, to celebrate the histories, cultures, and contributions of Americans whose ancestry comes from Spain, Mexico, the Caribbean, and Central and South America.
In this podcast episode, I celebrate the contributions of farm workers as 83% of farm workers in the United States are Latino. In California, where I was born and raised, the percentage is much higher. 92%.
I am so proud to have the endorsement of Dolores Huerta, the co-founder of the United Farmworkers union with Cesar Chavez printed on the cover of my book, Eat Less Water. She dedicated decades of her life to fighting for basic protections for farm workers.
But there's still much more work to do. The food we choose has the power to contribute, to clean and abundant water systems around the world. So much of the way food is grown and cultivated around this nation and the world causes harm, not only to the river as nearly half the rivers in the U.S are too polluted with nitrates to support aquatic life. But to the people who work to cultivate and harvest the food that makes its way into our refrigerators and pantries.
You and I may be able to wash off the residue of chemicals sprayed on our food but it can't be washed away when it is ingested by the farm worker that must work on the land.
My appreciation for the contribution and continued plight of farm workers is due in part to my father. He worked as a farm worker as a child. He took me to marches and actions to stand in solidarity with the United Farm Workers. I didn't eat grapes for most of my childhood because of the grape boycott. I invited my father onto this episode to share some of his stories with us as he inspires so much of the work I do.

Episode SummaryNow imagine you are at the grocery store in the milk section. You have many choices from organic to non-organic, and non-dairy alternatives. Which do you reach for?
Whether you are drinking milk from dairy cows or the dairy alternative, like soy, almond, or oat, the action tip for today’s episode is to reach for the organic option always. Even better, reach for the organic option that comes from small-scale dairy farmers like one of my favorite brands, Organic Valley.
Right before I recorded this podcast episode, I looked up the price for a half gallon of conventional or non-organic milk and the organic variety, specifically Organic Valley. The price difference was $2.00. And the difference in price between conventional milk and organic soy milk was 0.75.
What you gain in that .75 cents to 2.00 more you pay for organic milk is huge.
At the individual level, paying the extra money means your glass of milk will not contain, trace chemicals from pesticides. Nor will you be drinking down growth hormones or antibiotics, both practices are restricted in organic certified food.
But why does that matter? In this episode, I will examine a few of the differences (there are many others I will discuss in future episodes.)

Last week I introduced the concept of meal planning. In that episode, I said, Some of you already have a meal planning, practice, which is great. And some of you don't have a meal planning practice. Once you start meal planning, you're going to wonder what took you so long.
But what does it take to build a new habit? At its essence, activism is getting oneself to do things differently, to create new habits. But why do some habits stick and others fail? What are the blocks that stand in the way?
In this episode, I explore these questions with Michele Nevarez, author of the book “Beyond Emotional intelligence: A Guide to Accessing Your Full Potential. She coaches clients around the world on this very topic with her team of Beyond Emotional Intelligence (BEI) certified coaches.
During this interview, Michele, an expert on EI and its practical application, will answer these and other questions and walk us through the proven action steps she designed to help us move from where we are to where we want to be. She offers us simple exercises to take out the “head trash,” so we can turn our hope of a better environment into action.
In the interview, we use food and specifically meal planning as the example, but the exercises she provides can be used for any habit we want to build from eating more sustainably, to meal planning, and beyond.

Episode Summary:According to government stats, we eat a lot of bread, about 55 loaves of bread a year per person. In the average lifetime, those loaves of bread add up to about 87,000 slices in a lifetime. How much water are we eating in all those loaves?
If the water footprint of bread, that is how much water it takes to grow the grain to make one slice is 11 gallons and we multiply it by 87,000 slices, that is 957,000 gallons of fresh water we will each eat.
This total doesn’t include the additional 5,000 hot dog rolls and 12,000 hamburgers the average person will eat over a lifetime taking the water footprint total past a million gallons of fresh water.
In this episode, I share three steps you can implement today to reduce your bread water footprint while still enjoying your daily bread.

Recently I sent my teenage son, Joaquin to pick up flour tortillas for dinner. He handed me the package and said without prompting, this is the only brand that didn’t have palm oil. It has become second nature to look for this ingredient for all of us in the family. But it hasn’t always been the case. I didn’t connect the dots between palm oil, and global water systems until I did the research for the chocolate chapter in my book Eat Less Water.
When I was immersed in the research for cacao farming it brought me to tears. Palm plantations are devastating not only to water systems, but to groups of people who are displaced, to animals now facing extinction, and to our global climate.
Palm oil is the most popular vegetable oil on the planet because it's cheap. The cheap oil can be found in over half the items found in any grocery store from chocolate to toothpaste.
The true cost of the popular cheap oil is best explained through the story of peatlands and forests.
If you don't know what peatlands are I didn't know until I did the research for my chapter. Peatlands are essentially layers of soggy plant debris. They act as freshwater reservoirs like wetlands. Formed over 10,000 years, these layers of plant material can reach depths of 70 feet.
These saturated land filters the water for animals and humans living downstream and are critical in regulating global climate. Peatlands hold 30% of the world's carbon. More than all the forests combined.
Over the ages, peatlands absorbed 1.2 trillion, tons of carbon dioxide. And to get a sense of what that looks like. It is the amount emitted from 34,000 coal plants in a year.
But as I explain in this episode, illegal fires are downing these virgin forests draining the peatlands of freshwater to make way for the orderly rows of palm trees that now engulf the tropic landscape. This is especially true in Indonesia, the largest producer of palm. The 18,000 islands that comprise this nation are lush in biodiversity and host to one of the most extensive peatlands in the world. But 2 million palm plantations grow on former peatlands in Indonesia and the number grows as the palm oil keeps flowing to our favorite food brands.
The damage to the peatlands to clear the terrain for palm is irreversible. When peatlands are drained and burned, carbon, the leading contributor to climate change is released into the atmosphere.
Peatlands are necessary, not cheap palm oil. But as I explain in this episode, there are actions we can take during our next trip to the store to turn the tide.

Eating and shopping for organic food is an integral component to eating less water and growing well-being for the planet. BUT quite frankly, the one thing we can all do regardless of our food budgets is to waste less food. That one action would make waves in water systems around the world.
We throw away so much food at every stop of the food chain. The statistic I've come across is we collectively throw away between 30 to 50% of all food. And food waste is not a United States problem. These totals are mirrored around the world.
While plenty of the food waste happens at the farm, grocery store, restaurants and cafeterias (think school cafeteria), amen of us don’t have direct influence over the policies in these spaces. I can tell you where we have complete control to implement strategies to waste less food— our own kitchens.
And focusing on places we can control feels empowering. The anxiety tied to the massive problems we face in our environment creeps in when the focus is on things we have little control over.

Episode SummaryCoffee is such an important ingredient to discuss because for many of us it's part of our daily routine. At my coffee grinding, and brewing is a morning ritual. How often do we really think about what's served in our mugs? And did you know coffee is the third, most heavily sprayed crop in the world behind cotton and corn with chemicals so toxic they are banned for use in the United States. But in areas where coffee is grown outside Hawaii, these chemicals are widely used and likely served in your cup of Joe.
Coffee needs high elevation, a temperate climate, and upwards of 60 inches of rain to flourish. The state of Hawaii is the only place in the United States that meets all of those requirements. This is why when I wrote about coffee in my book, EAT LESS WATER, I found myself on the dormant volcano of the Mauna Kea and met with Hillary and Eric who are the owners of the Hawaiian Cloud Forest Coffee Farm. They were a phenomenal introduction on coffee growing, coffee roasting, and set out a blueprint of how to be stewards of the forest.
Coffee is an understory tree. Just like the cacao bean scientists and farmers realize if they remove the coffee tree out from under the shade, the yield would increase. But when coffee is grown as its intended, which means under the shade of another tree the quality is better, the fruit is bigger, lusher and tastier. And the tree is better positioned to naturally defend itself against pests.

Episode Summary
The refined and processed foods that make up the Standard American Diet (SAD) has extracted a heavy toll on our health. How many people do you have in your family who have difficulty regulating blood sugar levels, reduced immunity, and struggle with chronic ailments such as obesity, diabetes, cardiovascular disease, and cancer.?
Our declining collective health comes more into focus when you examine these numbers.
And our nutrient density had decreased by 40-60 percent. According to the USDA nutritional composition tables, fruits and vegetables have fewer vitamins and mineral than they did in 1975. Broccoli has lost 54% of its calcium. Iron levels are down 60% in cauliflower and apples, bananas have 485 less phosphorus. These are overall decline on every fruit and vegetable.
What is happening to our human health is mirrored in the health of the planet too. Soil health has diminished on farms across America because of pesticide sprays and petroleum based fertilizers.
The good news, is we hold the solution. You and I can reverse the SAD food trends beginning in our kitchen starting NOW.
It requires us to return to the best practices from our grandmothers and great grandmothers kitchens, like cooking from scratch and using organic seasonal and local ingredients from the farmers market, grocery store, or your own garden.
To achieve this means we need to slow down, to be intentional with the shopping, planning, and preparation of our food. We are attracted to fast food because it mirrors a fast lifestyle. A lifestyle that offers little time to spend time choosing our fruit and vegetables at the farmers market, little time to map out our meals each week, and forget cooking from scratch because we are collectively too tired by the end of the day.

The goal is not perfection but to do more than what you do now. Small changes all add up and will be reflected in your health and the health of the planet.

Tomorrow is world chocolate day, July 7th. I don’t need much reason to celebrate chocolate I always have bars of chocolate in my pantry ready for an afternoon nibble. When my kids, who are now teenagers, were babies, I held their tiny hands within mine and rubbed them together like they held the wooden handle of a molinillo, a chocolate whisk. We sang the same Spanish nursery rhyme my mother sang with me, cho-co-late cho-co-late bate bate chocolate.
I think it's safe to say we each hold our own precious chocolate story. It is one of those foods that that has the power to incite emotion, and to elevate an ordinary moment, especially when you take a square of chocolate, place it on your tongue, resist the urge to chew and instead let the flavors wash over your taste buds. It reminds me of another song I love by the Wood Brothers, the chorus goes, If I die young at least I got some chocolate on my tongue.

Many of us are setting out on road trips this summer. I’m getting ready for my own. I will travel 900 miles stretching from where I sit now in Oxnard, California to Santa Fe New Mexico. It takes about 15 hours and three meals to get there.
The roads that lead us from here to there regardless of where are dotted with fast food joints. They serve food that is not the best for water, you can even argue fast food chains represent some of the worst foods for water, as the food relies on big corporate farms whose concern is not to grow wellbeing but to grow big yields and big profits.
But there you are on your road trip, starving, with few options. Believe me I’ve been there. And will likely find myself there again. But when I do just a little planning on the front end, I don’t find myself stranded along the road with nothing good to eat.

Consider this one glass of white wine is equivalent to 29 gallons of water. And one glass of red wine is 32 gallons of water.
If you look at the entire wine region area in the U S wine grapes sipped a little over 1 trillion gallons of water from wells and rivers in one year alone.
Climate change is going to increase the need for irrigation. We're already beginning to see that as summers become longer and hotter, and the winters become colder. One study found worldwide viticulture acreage will not be suitable for wine production by 2050.
In California, where most of our grape-growing occurs in the United States. It's predicted wine grapes will decrease between 50-63% by 2050.
The good news is there are ways to farm wine grapes that use less water and are more climate resilient. I learned this when I spent the day with Mike Benzinger, who was my tour guide and the founder of Benzinger family wines.

Build meals on the food you already have in your kitchen. This seems like a no-brainer, but I know that unless I'm intentional about building my meals based around the things that I have, I don't do it. Create a night every week for a catch-all recipe, a recipe to use up all the must eats in your refrigerator, especially the produce drawer. Every culture has these recipes like quiche, tacos, and pizza. These meal ideas are a great place to use the food that you have leftover in the refrigerator to waste less food, water, and $$.
In this podcast I share with you how I built a pizza night based on the ingredients I had on hand for a spontaneous dinner party. I also share with you how I approach cheese, which has a water footprint of 414 gallons per pound on my pizza.

We each eat on average between 500-1300 gallons of water every day. Understanding the virtual water footprint of our food is a great starting point to begin Eating Less Water.
Water footprint totals of some popular foods:
1 almond = 1 gallon of water
1 slice of bread- 11 gallons of water
1 pound of lettuce = 10 gallons of water
1 orange = 21 gallons of water
1 apple =33 gallons of water
1 dozen eggs = 276 gallons of water
1 cup cooked rice = 50 gallons of water
1 pound of pasta = 230 gallons of water
1 pound of chicken = 468 gallons of water
1 gallons milk = 720 gallons of water
1 pound of cheese = 414 gallons of water
1 pound of beef = 1800 gallons of water
1 pound of butter = 3602
Show action tip: Serve more foods on your plate with lower water footprint totals (i.e. more plants on your plate). It’s better for you and for a river.

Why a HOW TO EAT LESS WATER podcast? In this first episode I share with you how I came to move my water conservation from the shower after selling 80K shower timers to the kitchen. Every drought we are told to focus on the water we can see like the water from our sprinkler heads, our showers, and water hose. Those actions are important but a drop in the bucket in comparison to the water stored in our refrigerators and pantries. Seven out of every 10 gallons of water is used to grow and produce our food and we each eat on average between 500-1300 gallons of virtual water everyday. I understood if I was going to be the most effective at saving water I had to move out of the shower and into the kitchen.
Can I as an individual eater make a difference on water systems around the world? I took my question directly to farmers and food producers around the nation, traveling the distance of 16,000 miles. What I learned I wrote in the pages of my book EAT LESS WATER:THE SOLUTION TO WATER SHORTAGES IS IN THE KITCHEN. I speak to groups of all sizes, deliver food workshops, host events, have found myself on radio and television, and always I get the same set of questions: What should I buy? Where should I shop? What are the things I should be doing in my kitchen to eat less water?
So this podcast is answering those question.
