I can’t believe we’re already onto episode 3 of Uncommon Ramen y’all! Today we will be making one of my favorite cozy winter meals: Thai Yellow Chicken Curry with Potatoes and a Spicy Garlic Butter. This may sound like a mouthful, but this is ALL made in ONE skillet! Need I say more? You know the drill, click that “play” button, and meet me in the kitchen!

Ingredients

·       2 Tbsp. Extra virgin olive oil

·       3/4-pound baby potatoes, quartered

·       1 Yellow onion, chopped

·       1 1/2 pounds boneless Chicken breasts, cubed

·       2 Tbsp. Thai red curry paste

·       2 Tbsp. Yellow curry powder

·       1 Tbsp. Thai Seasoning paste

·       2 cups canned full-fat Coconut Milk

·       2 tsp. Fish sauce

·       1/3 cup chopped fresh Cilantro (approx.)

·       juice of 1 lime

·       4 Tbsp. salted butter

·       4 cloves garlic, chopped

·       ¼ tsp. chili flakes (or more if desired)

·       2 tsp. honey

Welcome to episode 2 of Uncommon Ramen! Today we will be making my famous Frito Pie recipe. Not only is this a scrumptious upgrade from the traditional Frito Pie. But it’s a fabulous, easy party favorite to bring to gatherings especially during football season. So, click that “play” button, grab your Fritos, and let’s get to it!

Ingredients

White Queso

8 slices White American cheese

2-4 slices Pepper jack cheese

1 C. Heavy cream

¼ C. Jalapeno juice from jar

1/8 C. Diced pickled jalapenos

1 Tbsp. White distilled vinegar

1 tsp. Salt

Frito Pie Meat Sauce (Divide ALL ingredients below IF you make a half portion)*

2 lb Hamburger meat

1 whole(small) Red onion, diced

1 (6 oz.) can Tomato paste

2/3 C. Worcestershire

Seasoning mix: (2 tsp. each)

·       Cumin

·       Cayenne

·       Garlic powder

·       Onion powder

·       Salt

·       Pepper

·       4 tsp. Chili powder

For Assembly/Toppings:

Fritos

Queso

Meat

Sour cream (optional)

Cilantro (optional)

Fresh Jalapenos (optional)
