Ventilation – PodCast 3 Last two podcasts we talked about one of my favorite appliance companies – BlueStar. American owned – American made with American parts and materials. Been around since 1890 and They only made cooking equipment for commercial and professional use until 2002. In fact, they are celebrating a huge milestone which is 140 years of continuous operation. But, with all that commercial power, ventilation must be considered when you are designing your BlueStar kitchen. For that matter, I think ventilation – for the most part – people do not put enough thought into pro-type range really needs to properly design efficient ventilation. With Ventilation, there are many things to consider: What should you look for in a wall hood to properly take care of smoke and odors? Motor CFMS – Cubic feet per minute - THERE IS A RULE FOR CFM PER BTU - Also “capture” – the deeper wall hoods are better than the “designer” low profile hoods need the right size duct – a 6” is not going to give you 1200 CFM - needs to be smooth galvanized pipe – not plastic or according to type ducting for dryers. 1200 CFM is really two motors? Lighting – halogen now going to LED – bright light or not? N ever adds heat to kitchen – long lasting WALL HOODS WILL GIVE YOU BETTER DRAFT CAPTURE THAN ISLAND INSTALLTION THE RULE OF 3” ON EACH SIDE – IS THAT REALLY IMPORTANT? GOOD IDEA IN ISLAND APPLICATION Lighting – halogen now going to LED – bright light or n ot? no heat to kitchen – long lasting In selecting the proper height to mount the hood, take into consideration the stature of the person or persons who will be cooking. A minimum height of 30” off of the cooking surface to a maximum height of 36” will suit most users. It is recommended but not required that the hood be 6” wider than the cooking appliance to provide a proper capture area for heat and grease You always see commercial type wall hoods with Baffle filters instead of mesh filters Scale of wall hoods over the BlueStar ranges - T shape hood with 6” canopy has been very popular for the industrial or farm house look with a more modern twist INTERNAL MOTOR KIT REMOTE MOTOR KIT INLINE MOTOR KIT – SILENCERS Top or rear discharge – recirculating Microwave ovens over a BlueStar – too low Proper installation of ducting is extremely important for optimal performance of your ventilation system. It is a basic requirement that the kitchen is provided with an air intake to ensure good air circulation and therefore proper operation of the hood. Without this incoming air a depression could form that would reduce the efficiency of the ventilation system. All CFMS are based on tests at 0.1 static pressure. Without static pressure all CFM’s would be overstated. Color – straping – rivets – accessory rail – plating
