Take 3 chipmunks (or squirrels, or 1 rabbit) chopped into pieces; salt and dust with flour. Fry in an inch of olive oil in a Dutch over or other heavy lidded pot. Once browned, let piece drain on paper towel while you cook the sauce. Sweat an onion, then add tomato paste, 1 c. white whine, ¼ c. apple cider vinegar, plus oregano and paprika to taste. Bring to simmer and add back the chipmunk; let cook uncovered for 90 minutes, or until the meat falls off the bone. Serve with a hearty hunk of bread and side salad of dandelion greens, while listening to this week’s episode of SFR.
