Ulogs #10 - How to make COCONUT CREAM and COCONUT MILK at home

Nowadays, we widely buy ingredients in the market which are ready to use.

Powdered Coconut Milk and Coconut milk usually seen in can. Using coconut cream and milk in its raw ingredient are much better to use than with the ready to use. Gladly it is easy to do at home.

Most Filipinos or other Asians already know how to make coconut milk or cream.

For those who are not familiar with coconut milk or cream, see procedure below to make it.

HOW TO MAKE

COCONUT CREAM and

COCONUT MILK AT HOME

1.First thing we need is grated mature coconut (niyog in Filipino). You can buy it on a wet market.

2.Put the grated coconut on a basin or large bowl. If you bought one coconut, pour 1cup of warm water

3.Mash it with your hands until the milk goes out of the pulp. Repeat the process several times

4.Then scoop out a handful of the pulp and put it in a piece of clean cloth and grip it with your hands until the milk pours down the basin.

5.Transfer the extracted pulp to another container. Repeat the process until there are almost no pulp left on the basin.

6.Strain the remaining pulp to a container.

7.You now have the Coconut Cream(kakang gata in Filipino).

8.To extract coconut milk or the second press, put the extracted pulp again on the basin and pour 1 cup of warm water and repeat step #4, #5 and #6

You now have the Coconut Milk(gata in Filipino)

COCONUT CREAM or COCONUT MILK?

COCONUT CREAM is the creamier, thicker version. While COCONUT MILK is usually the thinner or the second press from the extracted pulp.

Whenever you use coconut milk in a recipe, it adds a certain sweetness, creaminess, and overall delicious flavor that is unique to the coconut.


**Just to add about the coconut milk (gata).

The coconut tree is called the tree of life for good reason. Buko juice or coconut water has already gained prominence worldwide but that's where the popularity of eating the coconut has ended.

Our Asian neighbors know the value of the coconut-and not just for its buko juice-and thankfully, so do we.

My mother used to cook puto as her extra income as a housewife. She sell her puto on some of our neighbors back when I was small. As I grow seeing her cooking makes me learn also on how to cook puto.

As the General Community Quarantine extends. Me and my brother starts to sell puto here in our subdivision as our extra income. Up to now we cook it for breakfast and merienda during afternoon.

PUTO PANDAN

(FILIPINO STEAMED CAKE)

WHAT IS PUTO

PUTO is a Filipino steamed cake snack that is served anytime of the year. Puto is perfect for breakfast with your usual coffee or chocolate drink, and also for merienda during afternoon. It is traditionaly made from ground rice, water and sugar, and can be eaten by itself, or with butter. This can also be topped with cheese or salted egg.

However this puto recipe is adapted using cake flour instead of ground rice. And to have a twist, I add color and flavor of pandan from the the usual puto.

INGREDIENTS

8 cups All purpose flour

1 pack Baking powder (CALUMET) 50g

250g Butter and Margarine 250g

1 can Condense Creamer 390g

5 cups Water

4 tbsp pandan flavor

3 drops of food color

Oil for greasing puto molder

PROCEDURE

​Fill the steamer with water and set over high heat.

​In a bowl, Using a strainer sift all purpose flour to remove lumps. Add baking powder and sugar.

​Using a wire wisk mix it well and set aside.

​In a small pan, melt the butter and margarine over medium flame. (I mix it with margarine to have additional aroma and flavor.)

​In a separate bowl put the melted butter and water. Mix well

​Add the wet ingredients gently into the batter mixture.

​Add the condensed creamer.

​Put 4 tbsp pandan flavor.

​Add 3 drops of green food color

​Mix well, but slowly (don not overmix). Avoid using high speed when mixing the batter as this crates more air bubbles that can be trapped in the batter as this creates more air bubbles that can be trapped in the batter and will form holes when steamed.

​Pour in molder. Fill only 3/4 of the molder as it will rise as you steam.

​Arrange in steamer.

​Put the steamer when the water starts to boil. Bring the water to simmer then turn the heat to the lowest as possible. Just enough to keep the steam forming but do not let the water boil. High temperature will result in an even rise of the batter instead of forming a perfect dome.

​Cover. Put cloth in the lid to prevent the steam from dripping to the batter. This will result in an even cooking and disformed top.

​After 5 minutes, put the cheese on top.

​Steam for another 10 minutes. Do a toothpick test if cook, if it comes out clean, it's ready.

​Let it cool a little before removing form molder.

​Enjoy eating! Serve hot with a coffee or hot chocolate.
