I started baking as a hobby after paying attention to ingredients in the foods that I ate, primarily baked goods.I noticed ingredients that I’ve never heard of and thought to myself, “Are these even necessary?” The answer was no, they weren’t needed.That’s when I started this journey to bake for myself. Heavy On The Baked is my journal of recipes that I find achievable as a self-taught baker. Carrot Cake

The Heavy On The Baked way!

You will need:

- two 9 inch round cake pans

- Rubber spatula

- 2 mixing bowls

- whisk

Ingredients

- 2 cups all-purpose flour

- 3 cups grated carrots

- 1 cup crushed walnuts

- 3/4 cup sugar

- 1/2 cup brown sugar

- 1/2 cup crushed pineapple

- 2 teaspoon baking powder

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 2 teaspoon cinnamon

- 1/4 teaspoon nutmeg

- 1/4 teaspoon of ginger

- 4 eggs (room temperature)

- 3/4 cup melted coconut oil

- 1 tablespoon vanilla extract

- 1 tablespoon lemon extract

Icing

- 8 tablespoons butter (soft)

- 8 ounces cream cheese (soft)

- 3 cups powdered sugar

- 1 teaspoon lemon extract

Directions:

Cake

- Preheat oven to 350 degrees

- Grease and flour both cake pans

- Add flour, baking powder, baking soda, cinnamon, nutmeg, and ginger to a bowl and whisk it all together until well combined

- In the other bowl, add white sugar, brown sugar, crushed pineapples (drain juice), lemon extract, vanilla extract, coconut oil, and one of the eggs

-with an electric hand mixer, blend at a medium speed, just until combined

- Add another egg and mix until combined and then repeat for the remaining two eggs (one at a time)

- Once all four eggs have been added and combined, add ⅓ of your flour mixture to the batter and continue to mix at a medium speed, just until combined

- Add half of the remaining flour and continue to mix until combined, then add the remaining flour and mix until all of the flour is combined.

- Add your carrots, walnuts, and raisins to the batter and stir it in

- Grab the two greased and four coated cake pans and evenly split the batter between the two

- tap the pan on the side and on the counter a few times to get the air out

- place in oven for about 35 minutes

-make icing (instructions below)

- remove from oven and let cool in the pans for at least 20 minutes

- remove from pan and let cool on rack until completely cool before applying icing

- Put soft cream cheese and butter in a bowl and mix it on a medium speed with your electric hand mixer, until it is nice and fluffy

- Add powder sugar and lemon extract then mix again until fluffy

- place in refrigerator until it is time to apply to cake

- before applying to cake, mix it again

  • 3 ripe bananas (1 cup mashed)
  • 1 cup whole wheat flour
  • 1 cup dark chocolate chips
  • 1 large egg (room temperature)
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 ½ cups of flour
  • 1 cup of instant old fashioned oats
  • 1/2 cup of sugar
  • 1/2 teaspoon of salt
  • 2 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 large egg
  • 3/4 cup of milk
  • 1/3 cup of vegetable oil

  • small saucepan
  • spoon
  • 1 large mixing bowl
  • 1 medium mixing bowl
  • electric hand mixer

Ingredients

Topping: 

  • 2 apples
  • 4 tablespoons of butter
  • 2/3 cup of brown sugar
  • 1/2 teaspoon of cinnamon

Cake:

  • 1 ½ cup of all-purpose flour
  • 2/3 cup of sugar
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of whole milk
  • 2 eggs
  • 8 tablespoons of butter (soft)
  • 1/2 teaspoon of vanilla extract
