“We produce flavour.” That’s a very nice mission statement from Killer Condiments’ Nathan Creary, a southern Sydney shopfitter turned farmer turned butcher turned condiment king. We dig in with Nathan and learn the story of the homestyle chimichurri that customers loved so much that he turned it into a jarred product, first as a side hustle and now as a growing business.

This is the fourth episode in a special series of The Producers. Agricultured 2023 celebrates the farmers and produce of northern Tasmania. In five conversations, we celebrate farmers caring for both land and community. Along the way you’ll hear how strong local food systems and ethical farming not only foster delicious food. They also benefit farmers, eaters and the world we all share. Geoff and Louisa Anderson moved from the Northern Territory to take on Truffles of Tasmania, the state's largest truffle farm. It was a romantic vision with family as a priority - the farm is blessed with rainfall, extremely pretty and trained truffle dogs came with the purchase. But farming is tough…has it been a dreamy treechange?

This is the first episode in a special series of The Producers. Agricultured 2023 celebrates the farmers and produce of north-western Tasmania. These stories come from Kanamaluka - the Tamar River - in Lutruwita. In five conversations, we celebrate farmers caring for both land and community: a cattle farmer, cheesemaker, vegie growers and a winemaker. Along the way you’ll hear how strong local food systems and ethical farming do much more than create delicious food. They also benefit the farmers themselves, people eating at home and in restaurants, and the earth as a whole. From good dirt comes good beef. That’s the motto at Glen Torrie Pastures, where Pippa Mills grows Black Angus beef for the local market. The farm is a deliberately small family enterprise run with sustainability and accountability - to the land, customers, the next generations, the world we share - at front of mind.

Jake Wolki and his wife Ann run Wolki farm and butchery in Albury in New South Wales. They started the farm in 2019 on a hobby block that his dad used for conventional cattle. Things changed very quickly, thanks to YouTube rabbitholes and a deepening commitment to doing things differently. The Wolkis farm according to five principles: animal welfare, environmental backbone, healing food, community and profit. It’s been a radical life shift for Jake from fast food and poor health to regenerative farming and vitality. He couldn’t love it more.

When the pandemic landed, it forced most in the food industry to re-think offering. With a handful of successful restaurants, the likes of Dear Saint Eloise, Love Tilly Devine and Ragazzi a young dynamic group began making fresh pasta to heat and serve at home. Cam Birt, a professional in the realms of artisan, bespoke food products saw an opportunity, not just as a stop gap, but to create a whole new brand and business, Fabbrica, and it has become one of the best quality retail heat and serve pasta offerings in the country.

Third-generation farmer Catherine Velisha is the managing director of Velisha Farms, based in Werribee South on the outskirts of Melbourne. She’s also the founder of VegEducation, a training organisation that promotes the diverse opportunities in farm work, as well as extolling the virtues of veg to the broader community. The way she sees it, horticulture is nourishing in every way: a great business that’s good for the people who work in it and those who consume its products. In fact, according to Catherine, vegetables are going to save the planet.

Other than water, tea is the most popular beverage in the world. We drink our share of tea in Australia but we are far from a major grower. Given that, it’s a surprise to learn that Nerada Tea in Queensland grows enough tea to make 750 million cuppas every year. Managing director Tony Poyner fell into the industry but working at Nerada soon swept him up and he became happily steeped in tea culture.

Ed Nolle brews sour beer at Dollar Bill Brewing in the Australian beer capital of Ballarat. In 1870, as Australia’s gold rush tailed off, Ballarat had more than 500 pubs - panning for gold is clearly extremely thirsty work! The gold is mostly gone but Ballarat is still a beer centre, with a culture of brewing nurtured by local Federation University which offers courses in malting and brewing. Ed and wife Fiona are the people behind Dollar Bill Brewing - it’s craft beer by name and it’s also crafted with love, care and passion.

For farmer Angela Argyle (Argyle Australian Saffron), location was vital for the success of their foray into saffron. The regional New South Wales town Orange is perfect for Saffron, which demands four distinct seasons to thrive. In just five years Angela and Brendan are not only producing some of the best saffron in the world, but are living proof that belief, grit and determination fosters the most fruitful outcomes.

Doug Brooke is owner and brewer at East Bendigo Brewing Company, an independent beer manufacturer in central Victoria. Some producers look for broad distribution networks and national - even international - acclaim and success. Doug prefers to think local: if you live here, or if you visit, he wants you to encounter and enjoy a beer that expresses and honours the region.

If one thing defines Jonas Widjaja (Fair Game Wild Venison), it's a passionate dislike for waste. After discovering he was unable to donate excess meat after a hunting trip, he realized he could make a difference. With wild deer being culled and left in the field to go to waste in Northern New South Wales, he embarked on a journey to bring wild venison to the plates of diners down under.
