I and my co-workers visited Hokkaido last month. We took the early flight from Osaka to Hokkaido and headed to Niseko by bus. We stayed at Panorama Niseko. We rented the whole house that it was very comfortable, there was everything. It was my first time for snowboarding. This time I got the a great experience.

I went to Arashiyama in Kyoto after the Covid-19 situation. I started from Osaka and took the train there. My destination is the Bamboo forest where is the landmark of Arashiyama. Cooking Vlog #4: Thai Chicken Green Curry (แกงเขียวหวานไก่)

Hello everyone,

In this post I would like to share a recipe for Thai green curry that I often cook and is my favorite dish. Let's start.

Serves: 1-2 people

Ingredients

1.Chicken, 150 grams

2.Coconut milk, 250 ml

3.Chili paste, 50 grams

4.Red capsicum or red chili, 3 pieces

5.Eggplant, 1

6.Sugar, 1 Tablespoon

7.Thai basil, 1 branch

8.Water, 50 ml.

Preparation Method

1.Cut chicken into small pieces about 2-inches in length.

2.Cut eggplant and soak in some water mixed with salt to prevent it from turning black.

3.Cut Chili about 1-inch lengthwise.

4.Pick Thai basil leaves and set aside in a bowl.

How To Make Thai Green Curry

1.Put coconut milk into the pot and cook over medium heat.

2.Add green chili paste and mix them together.

3.When the mixture starts to boil, add chicken and stir together.

4.When the chicken meat is done, add sugar and cut eggplant and stir.

5.Add cut chili and Thai basil leaves.

6.Serve on a dish with rice or fine white noodles.

Each brand of chili paste has a different level of saltiness. If it is too salty, you can add more sugar to taste.

Last week I got some parsley from my friend. She grows it at her house. I can honestly say that I don't know what to cook with parsley. Parsley is used in Italian food, which I'm no expert on. But today I would like to share a recipe for garlic bread that has parsley and garlic as the main ingredients. This post is my entry for Chef Hive's challenge/garlic.

Ingredients

  1. French bread, 1 loaf
  2. Chopped garlic, 3 tablespoons
  3. Butter, 50 grams
  4. Salt, 1/3 teaspoon
  5. Pepper, 1/2 teaspoon
  6. Sugar, 3 teaspoons
  7. Chopped parsley, 2 tablespoons

How To Make Garlic Bread

  1. Cut French bread into 1-inch thick slices.
  2. Put butter, salt, pepper, sugar, and chopped parsley in a bowl and mix together.
  3. Spread the mixture on the cut bread.
  4. Bake the bread with an air fryer at 180 degrees celsius for about 6 minutes.
  5. Serve on a dish with coffee or milk.

I don't have an oven for baking bread, so I used an air fryer instead. It is not bad for this dish. The garlic bread is very crispy and smells good.

Do you like celery? What can you make from it? I have a Thai dish to share with you called Stir-fried Fish with Celery. It's delicious and healthy, too. Let's start.

Serves: 1-2 people

Ingredients

  1. Salmon or any fish, 2-3 pieces
  2. Celery, 1 stalk
  3. Green onion, 1
  4. Red capsicum or red chili, 1-2 pieces
  5. Light soy sauce, 1 teaspoon
  6. Soybean paste, 1 tablespoon
  7. Sugar, 1 teaspoon
  8. Oyster sauce, 1/2 teaspoon
  9. Garlic, 2 pieces
  10. Cassava flour
  11. Vegetable oil for stirring, 1 teaspoon
  12. Oil for frying

Preparation Method

  1. Coat salmon with cassava flour and fry in a pan.
  2. Cut celery and green onions about 1-inch lengthwise.
  3. Chop garlic

How To Make Stir-Fried Fish With Celery

  1. Put frying oil in the frying pan and heat over medium-high heat and then add chopped garlic. Stir until it turns slightly yellow and starts smelling.
  2. Add in fried fish, cut celery, and stir them together.
  3. Add soybean paste, light soy sauce, sugar, and oyster sauce, and stir them together.
  4. Put in cut green onions and red capsicum and stir them again.
  5. Serve on a dish with rice.

This dish is not spicy, and is suitable for any age. You can use any whatever kind of fish you like.

As the summer is approaching, I have a cool dish to recommend to you. It's a traditional Thai dessert called "Crispy Dried Fish with Watermelon" or "Pha Haeng Taeng Mo". It's easy to make. Let's start!

Serves: 2-3 people

Preparation Method Ingredients 1. Dried fish, 1 2. Fried Onion, 80 grams 3. Sugar, 100 grams 4. Half a Watermelon 5. Salt, 1/4 teaspoon

How to Make Crispy Dried Fish 1. Grill a fish with the air fryer at 180 degrees celsius for about 10 minutes or until done. 2. Separate the fish meat, skin, and bones. We will use fish meat only and mince it. 3. Fry minced fish in a pan at about 160-170 degrees celsius until it turns yellow and starts to smell and turn off the heat. 4. Let it cool in a bowl. 5. Mix the fried minced fish with the fried onion, sugar, and salt and mix together. 6. Prepare the watermelon by cutting into small pieces. 7. Put the mixture on top of the cut pieces of watermelon. 8. Serve on a dish.

This is a great summertime dessert which you can cook at your home.
