The 11th February 2018 marked 28 years since the release of the late Statesman Nelson Mandela from the Victor Verster prison (later renamed Drakenstein Correctional Centre) on the outskirts of Paarl and was driven the 60 km to Cape Town by African National Congress'(ANC) Rose Sonto along a route lined by thousands of supporters.
Mr. Nelson Mandela was released unconditionally from prison after 27 years, on the day he was accompanied by his then-wife Winnie, he left.

We celebrate Kedidimetse Rossy Rakgoale who is a farmer and was the overall winner of the 2017 DAFF Female Entrepreneur Awards. Mme. Rakgaole founded Selame Poultry in 2013. The farm consists of 6 broiler houses fully equipped with a capacity of 45 000 chickens each, control rooms and a dam. Each broiler has its own computer and connected to the central computer in the office. Each house has two feed silos of 18 tons and 12 tons from where the feed automatically pump into the feed pans in the houses.

We host Mogau Seshoene better known as the Lazy Makoti who teaches us how to prepare Tshotlo. Spotting a gap, Seshoene registered the business and currently has three employees that assist with cooking classes and administration. The business has also created employment opportunities for five female entrepreneurs who manufacture handmade Lazy Makoti kitchen accessories in Mamelodi, Pretoria.
Today we honour a woman who can succeeded in a male dominated industry, Mantwa Chinoamadi has been at the helm of the T-Musicman since its initial forays into the world of live music promotion and production in 1989 when she was offered the role of Artist Liaison. Her first assignment in the role as Project Manager came in the form of the country's first democratic election processes in 1994 when T-Musicman was tasked with co-ordinating a campaign, Voter Education Rally, for the education of the masses prior to the historical democratic elections in 1994. Her clients included the likes of as Queen, Jonas Gwangwa, Rebecca Malope and Brenda Fassie, all of whom placed the marketing and promotional necessities of the career in the hands of Mantwa and T.Musicman.
Last we caught up with Chef Lerato Miza who was on a 7 day trip to Phuket,Thailand, she kept a journal of her daily experience and on her first day there she opted to have Briyani with pickled parsley and couscous salad which tasted beautiful. The spices were infused so well in the rice. Not to spicy but very kind to my palate. She said she could taste the cumin, coriander, fennel, cinnamon, bay lead, cardamom salt and pepper. Lerato has assured us that the recipe is coming back with her home.

Raspberry Tiramisu and Ice cream served with frozen mixed berries & Fresh figs
Raspberry Tiramisu
Ingredients
2 egg yolks 2 1/2 tablespoons sugar 1/2 teaspoon vanilla extract 1 cup mascarpone cheese , at room temperature 2/3 cup heavycream 5-6 ladyfingers 1/4 cup cold-brewed coffee 1 1/4 cups fresh raspberries cocoa powder , for dusting
Instructions
In a heatproof bowl mix the egg yolks and sugar together until they become pale yellow. Set a heatproof bowl over a saucepan of simmering water. Make sure the water doesn't touch the bottom of the bowl. Cook on low heat, stirring and whisking constantly, until the mixture thickens and forms a ribbon trail on the surface when the whisk is lifted (5-7 minutes). Remove from the heat and let cool.
Whisk in vanilla. Beat in the mascarpone until smooth. In a separate bowl, beat the heavy cream until stiff peaks form. Carefully fold into the mascarpone cheese mixture.
Using a pastry brush, brush tops of each ladyfinger with coffee and cut them into 3-4 pieces. Place a layer of ladyfingers in the bottom of 2 serving glasses. Add a layer of mascarpone cheese mixture and a layer of raspberries and repeat, ending with a layer of mascarpone cheese mixture. Dust with cocoa powder, cover and refrigerate for 1 hour before serving.
