Beer has historically been made with grains (wheat, barley or rye) containing gluten proteins. In recent years, naturally gluten free beer brewed with alternative grains like sorghum, millet and rice has become available in the marketplace.

There is another new category of beer called “gluten-removed;” these beers are made from barley in the traditional brewmaking style, and are not allowed to be labeled "gluten free" in the U.S., although local state laws may differ when the beers are not crossing state lines. Experts caution against celiacs and those with gluten sensitivity drinking these beers, since no scientifically validated testing yet exists which can adequately detect gluten in beverages like fermented beers.  

A new research study conducted by the Gluten Intolerance Group (GIG) shows that beers labeled “gluten-removed” may indeed not be safe for those with celiac disease. A first of its kind pilot study titled, “The Celiac Patient Antibody Response to Conventional and Gluten-Removed Beer,” was published online by the Journal of AOAC International, and was conducted by GIG at the University of Chicago’s Celiac Research Center. 

Two authors of the study, Cynthia Kupper, CEO of the Gluten Intolerance Group and a registered dietitian diagnosed with celiac disease, and Laura Allred, Ph.D. and GIG's Regulatory and Standards Manager, join Jules on the show to discuss the impetus for the study, how the study was conducted, study results and what this means for celiacs and others sensitive to gluten as they search for safe gluten free products.

For years, oats were considered unsafe for those with celiac disease and gluten sensitivity. Over time, we learned that oats in fact do not contain gluten, but they are so heavily contaminated during growth, cultivation, processing and packaging, that they almost always contain too much gluten to be considered gluten free under the FDA's new less than 20 parts per million of gluten standard. 

Thankfully, some growers embraced the idea of a "purity protocol" whereby they would only grow oats on certain fields and they would harvest, process and package these oats apart from any gluten containing grain like wheat, barley and rye. These dedicated gluten free oats have offered a safe, high fiber, nutrient dense food to add into the gluten free diet.  

Recently, some mainstream food manufacturers in the US have begun to offer oat-based products to GF consumers, sold as "mechanically separated" oats, not using the purity protocol. These products are said to test to less than 20ppm gluten and are being labeled as gluten free. The subject of testing and safety of these beers has remained in the news, most recently due to questions around labeling laws. The Craft Brew Alliance, a popular American brewing group out of Oregon, has launched its own de-glutenized barley beer called Omission. It has received much fanfare and praise for its true beer flavor and unique batch test numbering on bottles. Today's guest is Joe Casey, senior director of brewing at Craft Brew Alliance Inc. Joe worked for six years to develop a good-tasting beer that his wife could drink after she was diagnosed with celiac disease. Led by Dr. Alessio Fasano, the Center is responsible for the epidemiological study that found 1 in 133 people has celiac disease, and recently established the diagnosis of non-celiac gluten sensitivity. The Center has also been at the forefront of the effort to pressure the FDA to issue gluten-free food labeling regulations. The Center has always been located at the University of Maryland School of Medicine, but has just announced that it is moving to Mass General Hospital in Boston, Massachusets. Based on data and scientific literature available now, the FDA is not recommending that consumers change their consumption of rice and rice products at this time, but is recommending that people eat a balanced diet containing a wide variety of grains. The announcement this week, that Domino's Pizza has released a new gluten-free pizza, has grabbed everyone's attention. The fact that this pizza is not designed for those with celiac disease or "severe" gluten sensitivity though, has upset many in the gluten-free community. Domino's worked with the National Foundation for Celiac Awareness (NFCA) to devise a gluten-free crust and to train its employees on giving their disclaimer, in efforts to educate consumers on whether this pizza will be a safe choice for them. The NFCA's "Amber Designation" was given to Domino's, symbolizing "the restaurant is using gluten-free ingredients and has completed staff training to understand the health needs of those with gluten-related disorders. However, these restaurants cannot guarantee an environment free of cross-contamination" In this special hour-long episode, Ms. Bast will take a limited number of questions on this issue, and will explain the NFCA's "GREAT" program, as well as how Domino's fits in. Under Ms. Levario’s leadership, the ACDA has fought for many policy initiatives on behalf of those with celiac disease. Most recently, the independent organization 1in133.org selected the ACDA as its partner group to push for finalization of FDA gluten-free food labeling standards. Together, they have achieved this goal, with the FDA’s release Wednesday of its Safety Assessment, just 3 months after 1in133’s Gluten-Free Labeling Summit. Ms. Levario will be on with Jules to discuss what happens next with these proposed regulations and how the gluten-free community can best respond to the FDA’s proposed standard so we may all enjoy safer gluten-free labeling in the United States as soon as possible.

This week Jules is joined by Chef Aaron Flores, a pioneer in safe gluten-free dining. Chef Flores spent twelve years with The Walt Disney Company in hotels such as the Disneyland Hotel, Disney’s Pacific Hotel and finally as Opening Sous Chef for the Five Diamond Disney Grand Californian Hotel. He has since worked with hotel restaurant groups around the country, ushering in safe gluten-free dining practices everywhere he has gone.  Chef Flores has worked with both the Celiac Sprue Association and the Gluten Intolerance Group of North America as a chef demonstrator and as their executive banquet chef for national conferences. He is currently the Executive Chef at the Embassy Suites Convention Center in Washington, DC, the site of the 1in133.org "World's Tallest Gluten-Free Cake." Chef Aaron was part of the team who built this cake to pressure the FDA to set gluten-free food labeling standards.
