Whisk together 1/2 cup tequila (or Mezcal), 2 grated garlic cloves, zest and juice of 1 lime, pinch of Kosher salt, 1/2 teaspoon of paprika and dried oregano. Add about 2 pounds of skinless, boneless chicken thighs and toss to coat, marinating for at least 30 minutes.
Grill chicken on charcoal grill for 2-3 minutes per side or until charred, then flip over and cook for another 2 minutes until outside is charred.
Once done, remove from grill and let rest before slicing.

Let's Cook Together: Anything Goes Frittata
It's brunch time! On this week's episode I bring you in the kitchen with me where we'll be cooking an "anything goes" frittata. Have leftover roasted vegetables? throw them in! your favorite cheese? Great! Whatever you mix in, you'll have a fantastic brunch dish done in nearly 15 minutes.
Zucchini Arugula Frittata
2 tablespoons butter
1 zucchini, curt into 1/2 inch cubes
2-3 cups arugula
4 whole eggs, whisked
2 tablespoons heavy cream or milk
Salt and pepper
1/2 cup shredded Gruyere cheese
Cubed avocado
Fresh basil leaves
Preheat oven to 400 degrees Fahrenheit and bring a medium sized cast iron skillet over low-medium heat.
Melt butter in skillet, add zucchini and saute until lightly golden brown, about 5-6 minutes. Meanwhile whisk eggs and cream in a bowl and season with salt and pepper.
Turn heat off and add arugula, stirring so most of the arugula wilts. Pour in whisked eggs and top with shredded cheese. Place the skillet in the oven and cook for 15 minutes, until eggs puff up and are set. Remove from the oven and garnish with cubed avocado and fresh basil leaves.

Let's Cook Together: Leek Fritters
Description: On this week's episode we're doing something a little different and will be cooking together, live and making a childhood favorite, Turkish leek fritters.
A simple recipe and utterly delicious with fresh lemon juice and cool yogurt.
Recipe: (Turkish) Leek Patties called Keftikas or Keftes
Ingredients:
Grapeseed oil
2 large leeks, chopped and cleaned
3 eggs, whisked
Salt and pepper
1/2 teaspoon ground turmeric
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
Chives, chopped
Fresh thyme leaves, chopped
Zest of 1 lemon
Saute leeks in oil over medium heat until soft, about 5 minutes. Let cool slightly.
In another bowl, whisk together eggs, spices and herbs and add cooked leeks.
Give everything a good stir and fry a spoonful of the mixture until golden brown, about 4 minutes per side. Repeat with the rest of the mixture.
Once done, remove to a paper towel lined baking sheet and serve with lemon juice and yogurt.

1/2 jar sundried tomatoes with oil
1 roasted red bell pepper
1-2 anchovies
2 garlic cloves
2 mint sprigs (or other tender herbs such as parsley)
1/2 tsp cayenne
1-2 tbsp red wine vin
Salt and pepper
2 tbsp olive oil
Blend all ingredients in a food processor or blender and serve on the side of your favorite proteins or vegetables.

On this episode we are talking about one of my childhood favorites, chicken francaise. An Italian American, more well known on the east coast but we're making it priority to bring it to the west coast!
I walk you through how to make the most delicious, tender, lemony and buttery chicken francaise that is perfect for any night of the week and done in nearly 30 minutes.

How to make Chicken Francaise:
Ingredients:
2 skinless and boneless chicken breasts
2 tbsp grapeseed or olive oil
2-3 tbsp unsalted butter
1 leek, sliced thin and cleaned
2 garlic cloves, chopped
1 cup flour seasoned with salt and pepper
2 eggs, whisked
3/4 cup white wine
1/2 cup chicken stock or water
Zest and juice of 1 lemon
1 lemon, sliced
Chopped parsley
Place chicken breasts on a flat cutting board and slice through lengthwise, creating 2 chicken cutlets per breast. Place a sheet of plastic wrap on top and use a mallet or bottle to pound the chicken to thin cutlets.
Get the dredging station ready by adding flour, salt and pepper to 1 wide bowl and whisk eggs in another bowl.
Get a wide skillet hot and add grapeseed oil and 1 tablespoon of butter, while butter melts, dredge cutlets in flour, then egg and place in pan.
Fitting 2 cutlets at a time, cook for 2-3 minutes then flip over and cook for another 2 minutes.
Remove cutlets to a baking sheet and keep in a slightly warmed oven while you make the sauce.
In the same pan add leeks and sauté for 5-7 minutes until very soft. Add garlic and cook for another minute.
Pour in wine and stock and cook for 2-3 minutes to reduce slightly. Stir in lemon zest and juice and season with salt and pepper and add the other 2 tbsp of butter.
Taste the sauce for seasoning and then add chicken cutlets back in the sauce, spooning the sauce so all of the chicken is coated.
Garnish with lemon slices and fresh parsley.
Today my very special guest and I chat about making the perfect chicken cutlet and what's currently simmering away on the stove right now. Hint: they call it "hole in bone", a delectable Italian dish that's braised low with aromatics, herbs and wine. And for dessert, the easiest puff pastry and berry concoction that was whipped up in minutes. Recipe included below!

Easy Puff Pastry and Raspberry Dessert Recipe:
Thaw puff pastry and unfold. Fill center with cream cheese, frozen raspberries (or other frozen berry), chocolate chips and a few tablespoons of brown sugar.Fold puff pastry so it's one giant pocket and cut slits on top for the air to escape.
Brush the top of puff pastry with beaten egg and sprinkle white sugar all over the top.
Bake at 400 degrees Fahrenheit for about 30-35 minutes until golden brown.
Cut in large slices and serve with ice cream or whipped cream.
