Hey Rock - I really love that you express yourself. I know that non-professional podcasts can sometimes get a lot of eye rolls, and I bet you feel just like another rock on the ground, and why should anyone listen to what you have to say? - but I want you to know that it's great to make things, and even if the only people who listen to your show are the friends you make it with, that's still connection and creativity, and that's still special. The trick of the world is that every rock is special: they're all made in crazy ways and go on long journeys and, in the end, make up this beautiful wonderful thing we call Earth.
Unfortunately, the other trick of the world is that I don't have a ton of space for rocks that don't sparkle, or time for podcasts with poor audio quality. I'm sorry, I won't subscribe, and I won't add you to my rock collection. Know, though, that you are special, and I'm glad you're out here. <3

This week’s episode is a sort-of little brother to last week’s episode - we talk about the little brother to the Restaurant, the Café!
- We had a big argument about the origin of nicknames for Chicago! All said and done, it turns out the origin of the nickname Windy City is highly disputed. It has nothing to do with the fire, as Kathryn falsely remembered. However, what she was remembering is the idea that the nickname referred to the full-of-hot-air politicians of historic Chicago. End of the day though, there are a bunch of possible origins.
- The Second City nickname is a slam from New Yorker columnist A. J. Liebling who found himself in Chicago for a couple years and decided he hated the place and missed New York. It’s also worth noting he was having some personal life troubles, so maybe he was in a bad mood…

- 4 egg yolks

Whisk egg yolks and lemon juice together
- Boil a pot of water and pour eggs/lemon mix in mixing bowl and set over boiling water
- Keep whisking. Mix melted butter and sour cream together and add slowly

Kathryn's Hubris Guacamole
About enough for 1 bag of chips, how many people that serves is your deal.
- 4 Large Ripe-but-not-too-ripe Avocados
- 1 Lemon
- 1 Lime
- 5 Gloves of Garlic, Crushed or Minced
- 1 Medium Jalapeno, minced & seeded
- 1/3 Bunch of Cilantro, minced
- 1/2 Yellow Onion, diced
- 1 Small Roma Tomato, diced
- 1 Tablespoon Garlic salt
- Optional - Tajin
In large bowl, combine avocado flesh, garlic, jalapeno, cilantro, yellow onion, and tomato. Juice lemon and lime into the bowl. Blend together with an immersion blender until well mixed. No more big avocado chunks, but mixture should sill be fairly chunky. Add garlic salt. Add Tajin to taste. I like to keep a couple extra limes and extra garlic salt on hand and I continue to add those to taste as well, but I might be the opposite of a supertaster. A subtaster? Anyway, chill and serve.

Functionality was based off of how many tasks the pet can perform for you (guiding, herding, fiber, etc.) that will not lead to the pet's premature death (i.e. fighting, meat). Finally, maintenance is based off of boarding/mat'l costs we found online. Argue away gang!

Some population graphs:
This graph starts after the gold rush, but you can see that population increase is already in full swing. There's also a big jump right around World War II because of the military and the support economy that followed it. Why does the population more or less level off from there? My guess is that the city just ran out of space.
It's easy to forget that Los Angeles didn't become a major city until less than 100 years ago. Here we see that San Francisco was the major city in California until right around 1920, at which point Los Angeles pretty much exploded.
By the way, I love Wolfram Alpha. Easy data gathering? Automatic graph generation? Indefinite integral solving? Yes, please.

We didn't have a chance to talk about this in the podcast, but Sutro Tower is a giant, three-pronged broadcast antenna situated at one of the highest points in the city. Before the tower went in, the city's hills made television reception spotty at best. Because it was designed to broadcast clearly with no blind spots, it can be seen from almost anywhere within city. - Imperial San Francisco: Urban Power, Earthly Ruin - Author Gary A. Brechin paints the city as far more exploitative than it usually is. It comes off pretty negative, but it's nice to read a perspective besides "Wow! What a city!"
- Infinite City: A San Francisco Atlas - A really cool book full of maps viewing the city in all different ways. There's one showing the density of coffee houses in the city, and another juxtaposing the numbers of murders in different areas in the city with number of trees planted. Oh how I love interesting maps!
