It’s one thing to run a successful craft brewery. It’s an entirely different beast to open a restaurant.
For Episode 398 of UnCapped, I headed out to Westminster to sit down with Brewery Fire founder and co-owner Jesse Johnson. It’s been about two years since Jesse was last on the show, and his team just crossed a massive milestone: opening the doors to the brand-new Brewery Fire Taphouse.
The transition hasn't been without its growing pains. Jesse gets incredibly candid about the chaos of their opening weekend, the shock of dealing with brutal Google reviews, and the eye-opening realization that hungry people are significantly angrier than drunk people. We talk about the mental toll of hospitality, the importance of setting boundaries as a small business owner, and what it actually takes to get a new kitchen off the ground.
Beyond the behind-the-scenes struggles, we cover what makes this new location worth the trip. The kitchen is putting out elevated bar food (including a phenomenal shrimp taco and house-made tater tots that I will forever argue are just hush puppies), but the real surprise is the cocktail program. Lead bartender Gordon is bringing serious mixology to Carroll County, building drinks from scratch with dehydrated garnishes, house-made syrups, and local spirits from McClintock Distilling and Covalent Spirits.

We talked all about Rye Curious—a special collaborative Maryland rye whiskey blend created by these three distilleries. In this episode of the Uncapped Podcast, we visited Bier Bath in Sykesville, Maryland, interviewing co-founders Greg and Hector. The idea for Bier Bath came from Hector's visit to a beer spa in Iceland. He and Greg, who initially considered a brewery, partnered to bring the concept to the US.
The "beer bath" uses beer ingredients (hops and barley), minerals, and Epsom salt in water, not actual beer, yeast, or alcohol. Benefits include vitamin B and antioxidants good for the skin. The experience involves a soak, infrared sauna, and shower.
Bier Bath features a separate spa and a large taproom with a rotating selection of nearly 100 beers, mainly from microbreweries. They have a flight club and are introducing their own house lager. Future plans include potential expansion and a take-home version of the beer bath experience; they will also be adding cocktails to their offerings.

Melissa Aellen, director of winery operations at Simple Theory Wine Company, joined us in this episode to discuss her new venture. As a third-generation winemaker from the family behind Ligonore Winecellers, Aellen explained that Simple Theory is a modern expression of Maryland winemaking, focusing on dry wines made possible by climate change and sustainable practices. The new downtown Frederick tasting room aims to showcase the quality of Maryland wines and make them more accessible to a broader audience, contrasting with Ligonore's established sweeter offerings driven by historical local demand. Aellen also shared insights into her background, winemaking processes, and the recent fire at her family's Red Shedman Brewery, highlighting the unique challenges and passions within the Maryland alcohol industry. Her goal with Simple Theory is to demystify wine and connect with both novice and experienced drinkers.
This episode features an interview with Lucy Devlin, Naked Wines' vice president of wine. Naked Wines operates as a marketplace connecting independent winemakers directly to consumers, bypassing traditional distribution systems. We discuss the company's business model, challenges in navigating US alcohol regulations across different states, and the current state of the wine industry, including the rise of non-alcoholic options. Finally, we touch upon the winemakers' passion and Naked Wine's unique customer engagement model.

This week's episode is with Jessee Johnson from Brewery Fire, we talked about all of the exciting changes happening at the brewery. It's been a few years since we last chatted, and a lot has happened. Dave, the previous partner, has moved on, and Jesse brought on a new partner, Deep, who has a strong business background. They're also in the process of rebranding with a new logo designed by a friend of Jesse’s, and they’re looking at new properties to expand.
We talked about a bunch of Brewery Fire’s beers, including their core beers, the new Mexican hot chocolate stout aged in single malt whiskey barrels, and their rye lager.
We talked about the importance of having a good food truck, and Jesse mentioned that they are working on getting a food truck full time at their current location. He also mentioned that they are hoping to increase their social media presence but need to find someone to manage it for them.
Of course, we also had a little fun with my stupid questions. I learned that Jesse's go-to gas station is owned by one of his best friends, and that he wishes he was better at playing guitar. It was great catching up with Jesse, and I can't wait to see what the future holds for Brewery Fire.

Caroline Sisson, Director of Marketing and Hospitality at Heavy Seas Brewing, discussed the brewery's 29-year history and plans for its 30th anniversary. She highlighted the rebranding from Clipper City to Heavy Seas in the early 2000s and the success of flagship beers like Loose Cannon and Winter Storm. Sisson also mentioned the challenges posed by COVID-19 and the importance of the taproom for fresh beer experiences. The brewery, which distributes in 16 states, is planning significant events and new beer releases for its 30th anniversary. Sisson also serves as the current president of the Brewers Association of Maryland.

Finally, they announced that they will be donating 50 thousand dollars to the Brewer's Association of Maryland as well as hosting an annual beer festival with Maryland breweries during their anniversary to benefit BAM, the first one will be in 2024.

This week Chris joined up with Jim Bauckman from the Brewers Association of Maryland to interview Earl Holman, one of the founders of Crocked Crab Brewing. We talked about how Crocked Crab got started, beer trends, and so much more. We also discussed Wham Bam!, the beer they brewed to benefit the Brewer’s Association of Maryland. They will be hosting the grand opening celebration of their new taproom on Saturday February 15th from noon until 10pm. Way back on April 1 Keith Marcoux, co-founder of Olde Mother Brewing Company, sent me a text that said “Do you want to do a culture podcast with American brewers from Sweden and Germany?I know both and they are here on vaca at the same time!”. Once I figured out he wasn’t trying to pull some sort of lame April Fools joke on me I jumped at the opportunity. A few days later David Renninger (owner of Libertus Craft Brewing in Germany), Peter Lincoln (owner of Brewing Koltur in Sweden), Keith, and I met up to record an episode about craft beer culture in Sweden and Germany.
It took 136 episodes, but we finally got all three founder of Union on the same podcast. Chris met up with with Adam Benesch, Jon Zerivitz, and Kevin Blodger at the brewery to talk about what is going on at Union. We talked about Jon’s background, their seventh anniversary party that is taking place on July 27th, and the exciting things they have going on.

“The only thing silent about Peter Franchot is the T at the end of my name.” Over the last couple of years we have spoken with Comptroller Peter Franchot several times about legislation to reform alcohol laws in Maryland. This year we are discussing legislation that has been introduced to strip the comptroller’s office of the responsibility of regulating alcohol, tobacco, and fuel. The comptroller as well as many others believe this legislation was introduced purely as a personal attack on him for being outspoken about the craft beer industry.

Micheal Clements, founder and brewmaster of Idiom Brewing Co., stopped by the studio to talk about his recently-opened brewery along Carroll Creek in downtown Frederick, Maryland. Listen in to learn how he went from home-brewing to opening his own brewery and everything you could possibly want to know about idioms. Micheal also let us in on their plans for expansion.
Colin Marshall (co-founder), Tom Foster (co-founder & brewmaser), and Zack Kaiser (Sales and Marketing) stopped by the studio to update us on their Baltimore based brewery. Last year Diamond Beer started to place an emphasis on “slow beer” and started producing several lagers and barrel aged beers. We also their upcoming collaboration with Guinness and they explained to Chris what raw ale is.
We headed out to Baltimore to talk to Max Lents, co-founder of Baltimore Spirits Co, about bort. What is bort you ask? Well you will just have to listen and find out. We also discussed their name change and settling into their new distillery. As an added bonus we were joined by the elusive Eli Breitburg-Smith, BSC’s other co-founder. We also had a brief discussion about their upcoming collaboration with McClintock Distilling Company.

Brooke Brown and Ryan Sulchek came by the studio to talk about cocktails. Brooke is mixologist and runs the company she created, Bashes by Brooke Brown a business that event coordinates, business consultant, and hosts mixology classes around Southern MD. Ryan is the owner of Araza Natural Purees, they offer a line of frozen and aseptic fruit purees. We talked about making cocktails, smoking out the studio, and how awesome owning a speakeasy would be.
Chris was joined in studio by two of the three founder of Checkerspot Brewing Company. Judy Neff and Steve Marsh discussed the opening of their Baltimore based brewery, using local ingredients, and how they got into brewing.
In this bonus and out of order episode we are joined by the co-founders of McClintock Distilling for their 2nd annual anniversary episode. Braeden Bumpers and Tyler Hegamyer stopped by to talk about their 2nd Anniversary party taking place on December 1 from noon till 8pm. Dan Messeca, co-founder of Crooked Crab Brewing Company, joins us in the studio to talk about his Odenton, Maryland, operation.
UnCapped is on the road again. On a recent trip to Pittsburgh, Chris recorded three episodes. This was the third one to be recorded but is the first in the series to be released. Chris talked to Andrew Witchey, founder and owner of Dancing Gnome, about how he got into brewing, where the brewery’s name came from, and its need to expand already. They also talked about Lustra Day, a festival that’ll take place at the brewery August 4.

We headed out to Laurel, Maryland to stop by Jailbreak Brewing Co. to talk about the numerous exciting projects they have going on. Brewmaster Ryan Harvey filled us in on Wunderground (their barreling and sours program), the 4th anniversary party with DJ Biz Markie, and various new beers coming out, including Funk Sway (formerly named after an 80's tv show that took place in Florida- wink wink.) Then Fred Malinis gave us details on the grand opening of their new restaurant Jailbreak FoodWorks.
We headed down to Brunswick, Md to talk with Greg Nichols, David Blackmon, and Jake Blackmon about Smoketown Brewing Station. The filled us in on some upcoming beers, their first canned beer, the soon to be opened event space, and their two year anniversary hootenanny. We also had time for some ghost stories.
We packed up studio and headed out to Halethorpe, MD to sit down with Peter Wiens, the brewmaster for the Guinness Open Gate Brewery & Barrel House. Peter described how he has had the dream of brewing at Guinness for a long time. We also talked about his time at Stone Brewing, starting a brewery with his nephew, and working at Budweiser.
