Butter chicken has to be one of the most popular and well-known Indian dishes out there. This dish is the real deal and, best of all, it contains no preservatives, or additives and is the easiest butter chicken dish to make. This must be eaten with steamed rice and fresh garlic naan, or straight out of the pot!
Ingredients 1 Jar of India Base 2 pieces boneless skinless chicken breast, cut into small pieces (1 full breast) 1 tsp Kashmiri red mirch, red chilli powder or paprika 2 tbsp fresh lemon juice 1/2 tsp of salt 4 large ripe red tomatoes (diced into small pieces) 1 tbsp of cumin seeds 1 tbsp of honey 250 ml whipping cream or half and half or yogurt if you are watching your calories
Directions
Place cut chicken, 2 tablespoons of India Base, 1 teaspoon of paprika or Kashmiri red mirch and 2 tablespoons of lemon juice into a bowl. Marinate for 3 hours in the refrigerator. Take the chicken and put on a greased foil sheet and bake the chicken at 350 degrees for about 15 minutes, until cooked, do not brown the chicken, keep it moist. Set chicken aside.
Put 2 tbsp of olive oil into a pan, add cumin seeds and sauté for 30 seconds. Add the rest of the India Base jar, red tomatoes, pinch of salt, cover and sautee until nice and soft (15-20 mins).If you would like a little more heat, add a green chilli sliced in half and place in the sauce and remove once done. (you can strain the sauce to create a silky texture)
Now take the butter chicken sauce mixture out of the pan and put into a blender until complexly smooth. Then put back in the same pan and add 1 tbsp of honey. Add the cooked chicken to the saucepan and add the whipping cream. Put on low for about 5 mins. You can add 1 tablespoon of butter for more richness.
