A crumbling Ybor firehouse. Three brick walls and a floor of dirt. A bronze bat that sparked a movement. We sit down with Danielle Vergnaud-McKinnon of Sky Puppy Brewing for a vivid look at how design, community, and patience turned near-ruins into one of Tampa’s most thoughtful taprooms.
Danielle shares how her retail and visual design background shaped the brewery’s “brewhouse vista,” a mezzanined stage that lets guests see stainless, follow the process, and connect the dots from mash to pint. We dig into Sky Puppy’s rotating gallery wall—where 100% of sales go back to local artists—and the monthly nonprofit partnerships that make the space more than a bar. From a wildlife photographer’s owl showcase with Owl’s Nest Sanctuary to a year-long artist reunion, the taproom doubles as a welcoming gallery that lowers the barrier to both art and craft beer.
We explore the brand story behind the bat, inspired by sculptor Copper Tritchiller’s humanized forms and a serendipitous act of generosity that pushed the brewery dream forward. Danielle walks us through the naming ethos, sky-and-bat label art, and the curated 13-tap lineup at 1313 E 8th Ave. Expect crisp lagers, pilsners, and West Coast IPAs alongside Scotch ales and side-by-side American and English barleywines—served with education-first hospitality: samples, aroma coaching, and palate mapping that build trust. We also get into the gritty build: excavating 21 inches of earth, bracing historic brick, and the hilariously stubborn reality of moving grain upstairs before the stairs existed.
If you care about brewery design, Ybor City history, community-building, and style education, this conversation is loaded with insights. We talk growth without distribution, why Sky Puppy remains direct-to-guest, and how a neighborhood brewery can become a civic gallery where curiosity thrives and culture compounds. Subscribe, share with a beer-loving friend, and leave a review to help more listeners find the show.

The history of a city lives in its landmarks—some beautiful, some painful, all part of the collective story. For Khris Johnson, head brewer and co-owner of Green Bench Brewing in St. Petersburg, reclaiming one such symbol became the foundation of a brewing philosophy that balances exceptional beer with social responsibility.
Green Bench draws its name from the 3,000+ green benches that once dotted downtown St. Petersburg, marketed as symbols of community but tainted by segregation policies that prohibited Black residents from using them. Khris explains this wasn't a name chosen lightly: "These were some serious conversations we had internally... We have to understand what we're actually saying to our community." By acknowledging this difficult history, Green Bench commits to creating a truly inclusive space that delivers on the original promise of community.
This commitment extends beyond symbolism. Khris serves as a founding board member of the National Black Brewers Alliance of America and the Michael James Jackson Foundation, working to increase diversity in brewing industry ownership and production. His involvement with these organizations reflects Green Bench's holistic approach to building a more inclusive craft beer culture.
The technical aspects of brewing receive equal attention as Khris offers a masterclass in decoction mashing—a traditional technique that creates distinctive flavors impossible to achieve through simpler methods. His passion for these time-intensive processes speaks to a broader philosophy: "I find tradition to be quite innovative... It's not something that most people understand because they don't do it anymore."
From the development of their flagship Sunshine City IPA to their pioneering lager program, Khris demonstrates how Green Bench has evolved with the craft beer market while maintaining a clear identity. As lager grows in popularity, their commitment to traditional brewing methods positions them at the forefront of this trend.
The conversation culminates with Johnson's most profound lesson from beer: "This industry is so much better with more people in it, with a more diverse crowd, with an inclusive group of ideas, histories, influences, and characters." It's a philosophy that makes both better beer and a better world—one pint at a time.

What happens when rare treasures become everyday finds? Jimmy DeFrank, beer buyer for Lukens Liquors since 2001, takes us on a journey through craft beer's evolution from obscurity to mainstream and beyond.
When Jimmy convinced his boss to let him stock $9.99 Belgian beers in 2001, skepticism quickly turned to amazement as weekend beer sales surpassed typical weekly numbers. Those early days—when Sierra Nevada Pale Ale constituted a "good beer section" and outdated bottle laws prevented European imports—feel almost unrecognizable compared to today's saturated market.
The conversation explores watershed moments that transformed Tampa Bay from a craft beer backwater to a destination—particularly Cigar City Brewing's launch and the explosion of local breweries that followed. Jimmy paints a vivid picture of the symbiotic relationship between retailers, breweries, and passionate consumers that fueled craft beer's growth. Perhaps most fascinating is his perspective on beer hunting culture's decline: "There was a time where I would post on Facebook that we had Prairie Bomb, and I would walk up to my cashiers and say, 'Hey, 11 or 12 people are going to come in looking for this beer. I'm just going to put it behind the counter and give one per person.' And then it's hard to pinpoint at what point that just stopped, but it just stopped."
Today's reality presents new challenges as beer competes with THC beverages, ready-to-drink cocktails, and bourbon for consumer attention. Yet Jimmy remains adaptable, carefully curating selections across eight locations while staying attuned to neighborhood preferences. His greatest lesson from 24 years in beer? "You've got to roll with the tides. You can't be stuck in your own ways."
Whether you're nostalgic for craft beer's heyday or curious about where the industry is heading next, this conversation offers invaluable perspective from someone who's witnessed every twist and turn. What's your take on craft beer's journey? Subscribe and share your thoughts!

Jack Hendler of Jack's Abbey Craft Lagers shares his journey from an ice manufacturing family to becoming a pioneering force in American craft lager brewing. His vision goes beyond recreating European styles, challenging American brewers to develop their own lager identity using local ingredients and innovative techniques while honoring traditional processes.
• Family background in ice manufacturing shaped Hendler's commitment to quality and manufacturing excellence
• Jack's Abbey initially brewed eccentric lager styles like IPL to establish craft credibility before transitioning to more traditional offerings
• Naming and marketing of beer styles significantly impacts sales, with "IPL" struggling while terms like "Cold IPA" and "West Coast Pilsner" resonate better with consumers
• Oktoberfest provides a crucial marketing opportunity for lager brewers due to its strong positive associations and consumer understanding
• Hendler emphasizes the importance of heritage barley varieties and maltsters in creating distinctive lager flavors
• Using American-grown malt varieties and American brewing techniques creates uniquely American lagers rather than simply copying German styles
• The formation of Hendler Family Brewing Company maintains craft independence while expanding portfolio diversity
• Jack believes the craft beer industry needs lager as a strong second option to IPA for long-term health and sustainability

Tampa Bay's beer scene continues to evolve in remarkable ways, with the Halfway There Beer Festival marking its 11th year and an exciting new Cask Festival joining the calendar. Sean Nordquist of the Tampa Bay Brewers Alliance shares the vision behind both events, detailing how they showcase the region's maturing craft beer community.
Halfway There transforms the historic St. Petersburg Coliseum each August into an air-conditioned beer lover's paradise. This year features a creative new layout with brewery alcoves previewing major Tampa Bay Beer Week events, creating a festival-within-a-festival experience. Most exciting is the dedicated Belgian beer section, highlighting the classic imports that shaped Tampa's beer culture before being somewhat overshadowed by the local craft explosion.
"I was drinking a Chimay White recently and had forgotten how incredible this beer is," Nordquist shares, highlighting the importance of reconnecting with brewing heritage. The festival balances these classics alongside innovative offerings from Tampa Bay's thriving brewery scene, all with presenting sponsor Visit St. Pete/Clearwater showcasing the region's beer tourism appeal.
October brings something entirely new with the first-ever Tampa Bay Cask Festival at Yuengling Brewery. This outdoor evening event celebrates the unique experience of traditional cask-conditioned ales - what Nordquist describes as "living beer" with distinctive flavors and mouthfeel. Approximately 30 breweries will participate, with Yuengling sending special casks from their Pottsville brewery. The festival will feature live Celtic music, traditional pub fare like scotch eggs, and beer-stein shaped pretzels to complement the diverse cask offerings.
What makes this festival particularly special is the variety of approaches - from authentic English-style mild and brown ales to experimental craft styles like double IPAs conditioned in casks. "It's a totally different sensory experience," explains Nordquist, noting that these lower-alcohol, subtle beers create the perfect atmosphere for gathering with friends.
Don't miss these celebrations of Tampa Bay's beer culture! Tickets for both events are available through tampabaybeerweek.com, but capacity is limited to around 800 people for each festival, so early purchase is recommended for these showcase events highlighting the region's world-class beer community.

What if brewing beer the traditional way wasn't just nostalgia, but the path to superior flavor? Chip McElroy, founder of Live Oak Brewing Company, has been proving this point since 1997 in the heart of Texas.
When most craft breweries were chasing new flavors and shortcuts, Live Oak doubled down on decoction mashing, traditional European brewing techniques, and styles that have withstood centuries of scrutiny. "These beers have already been crowd tested for a couple hundred years," McElroy explains with characteristic straightforwardness, "if you make them properly, you've got good beer." This philosophy has guided the brewery through nearly three decades of operation, from humble homebrew experiments to becoming one of Texas's most respected brewing operations.
The conversation takes unexpected turns through brewing history, revealing how Live Oak's Hefeweizen—now their bestseller—initially struggled to find an audience until they reduced its bitterness following feedback from none other than Georg Schneider himself. McElroy challenges common misconceptions about adjuncts like corn in American beer history and smoke beer characteristics, demonstrating how thoughtful brewing transcends trends. His annual pilgrimages to Germany and collaborations with Polish brewers have deepened Live Oak's connection to brewing traditions while refining their approach.
Despite losing 60% of their business overnight when COVID shut down bars and restaurants, Live Oak persisted, eventually transitioning from 28 years of self-distribution to partnering with a major distributor in April 2025. Through it all, their commitment to flavor-driven authenticity has never wavered. Whether you're a brewing history enthusiast, a dedicated craft drinker, or simply curious about what makes traditional beer special, this conversation offers refreshing wisdom from someone who's never compromised on quality in an industry often defined by its latest trend.

Brad Clark, the brewing mind behind Private Press Brewing Company, pulls back the curtain on his remarkable journey from homebrewing enthusiast to barrel-aging virtuoso in this deeply personal conversation about craft beer evolution, artistic brewing philosophy, and entrepreneurial courage.
From his teenage experimentation with imported beers to his formative years at Jackie O's Pub and Brewery in Athens, Ohio, Brad reveals how a scrappy brewpub in Appalachian coal country became nationally renowned for boundary-pushing barrel-aged creations. The pivotal moment came in 2007 when Chicago brewers at Goose Island and Rock Bottom shared their barrel-aging techniques with him—knowledge that would forever change his brewing trajectory and eventually transform American craft beer.
What truly distinguishes Brad's approach is his poetic understanding of barrel aging as an intimate dialogue between brewer and barrel. "Barrels are like windows—they open and then they close," he explains, describing the critical importance of recognizing when a barrel reaches its peak expression before oxidation takes hold. This philosophy guides Private Press Brewing's distinctive blending process, where Brad meticulously combines different recipes, barrel types, and ages to create harmonious compositions that showcase his nearly two decades of barrel-aging expertise.
The conversation delves into Brad's bold decision to launch Private Press as a members-only brewery exclusively producing barrel-aged beers—no IPAs, no flagships, no compromise. "I knew that my strengths lied within barrel aging and with multi-beer, and that's what I love making," he reflects on establishing his niche in California's crowded beer landscape. Now operating with just 80-100 barrels at a time and producing less than 100 barrels annually, his intimate brewing approach stands in stark contrast to industrial craft beer trends, offering a refreshing reminder that sometimes smaller truly is better. Discover why beer enthusiasts from around the world join waiting lists for a chance to experience Brad's remarkable liquid artistry.

In the bustling St. Petersburg craft beer scene, Grand Central Brewhouse has carved a unique identity by embracing tradition in an industry often chasing trends. Join host Mark DeNote as he sits down with Zach Collins, Eric Trinosky, and Travis Rebstock to uncover how this relatively new brewery is making waves with its focus on lagers and classic beer styles.
The conversation begins with each brewer sharing their unexpected journeys into professional brewing—from homebrewing experiments to career-changing opportunities. With candor and humor, they discuss the challenges of opening during the pandemic and how they've adapted their business model to thrive in an evolving market.
What truly sets Grand Central apart is their commitment to community. Their "Brew Good Program" has donated over $150,000 to local charities in five years by giving 15% of their top beer sales each month. This philosophy extends to their brewing approach, using domestically-grown Riverbend malt and building relationships with the farmers who grow their grain.
The team offers fascinating insights into their partnership with the Tampa Bay Rowdies soccer team and how they've embraced their customer demographic, which skews older than many craft breweries. This has allowed them to successfully brew styles other breweries might avoid—from smoked beers to brown ales—while maintaining a core lineup of consistent, high-quality offerings.
Perhaps most refreshing is their humility and genuine passion for beer. As Eric notes, "Every day that we wake up is the most exciting day of this industry because there's new hop stuff, new yeast stuff, new research." It's this enthusiasm, combined with their community focus, that makes Grand Central Brewhouse worth watching—and drinking—as they continue to pour their way into St. Petersburg's heart, one traditional style at a time.

From late-night homebrew sessions to downtown Tampa's newest craft beer destination, Jordan Copher's journey with Late Start Brewing embodies the passion and persistence that defines Florida's craft beer scene.
The name "Late Start" began as a joke about how Jordan and his cousin Tyler Sankey would begin brewing after 9 PM, continuing until sunrise. Over time, it evolved into a wry commentary on their decade-long path to opening a brick-and-mortar location. Now, as the current brewer at Late Start's permanent home on Cass Street, Copher and Late Start are redefining what a neighborhood brewery can be in Tampa's competitive market.
What makes Late Start unique isn't just their diverse beer offerings but their approach to community building. Opening at 8 AM with coffee and breakfast tacos, the brewery transforms throughout the day, becoming an extended living room for downtown residents. "We have people who will close the bar on Friday night and then be here for coffee and breakfast eight hours later on Saturday," Jordan explains, beaming with pride at creating a space where regulars feel at home.
Though currently contract brewing through industry friends at Angry Chair and Magnanimous while finalizing their in-house system, Jordan's brewing philosophy already shines through. He values subtlety over excess, finding more creative fulfillment in the nuanced balance of a West Coast IPA or lager than in trendy hazy IPAs. This thoughtfulness extends to their diverse tap list, which includes everything from classic styles to fruited sours like their standout mango Thai tea sour.
The partnership with food provider Mighty Fine, helmed by chef Nathan Harden, offers what Jordan confidently calls "the best smash burgers in town," providing another reason for guests to linger. This holistic approach to hospitality reflects Jordan's observation about changes in the craft beer landscape: "You have to provide non-beer drinkers a reason to come, sit, and stay."
As Late Start prepares to begin brewing on-site, Jordan looks forward to reviving beloved recipes from their homebrewing days and repaying the many collaboration brews they owe to fellow breweries. His greatest lesson after years in the industry? "Not every beer needs to be perfect. Some beer is just meant for utility, and even if I don't think it's perfect, it might be somebody else's favorite beer."
Ready to experience Tampa's newest craft beer destination? Visit Late Start Brewing on Cass Street and be part of the community they're building—whether you're a craft beer aficionado or simply looking for a welcoming space to enjoy excellent food, drinks, and conversation.

When Em Sauter began drawing beer cartoons fifteen years ago, she had no idea it would transform into her life's work. As an advanced Cicerone and certified beer judge, Em brings a wealth of knowledge to her visual creations, but it's her unique ability to translate complex beer concepts into approachable cartoons that has connected with audiences worldwide.
"I'm a visual learner and I love to draw," Em explains, describing how Pints and Panels originated as a study tool for her Master Cicerone exam. What started as personal notes blossomed when she shared them online: "I just put them on my website and immediately people were like 'I love this!'" That enthusiastic response launched a journey that would lead to two published books, a Spanish-language beer guide, and a career traveling the world to share her beer knowledge through art.
The power of Em's work lies in its accessibility. Her cartoons break down barriers that often make craft beer seem intimidating or exclusive. "It makes beer—some of the most complex topics in beer—very accessible and easy to break down for new learners," notes podcast host Mark Denote. This approach is particularly evident in Em's library classes, where she creates safe spaces for beginners to ask questions they might feel embarrassed to ask in trendy breweries. These sessions often incorporate fun pairings like beer with ice cream or chips, helping people think about beer beyond traditional contexts.
Beyond pure education, Em has developed creative "lifestyle pairings" matching beer styles with everything from NFL teams and Star Wars characters to presidents and TV shows. These playful connections follow principles of climate, coolness, and cherished preferences, making beer appreciation part of broader cultural conversations. When a drawing of Guinness blends went viral, it sparked important discussions about international beer terminology and the cultural sensitivity around names like "Black and Tan."
Whether you're a certified beer judge or someone who's never ventured beyond mass-market lagers, Em's visual approach to beer education offers something valuable. As she continues drawing her way through the beer world one cartoon at a time, she reminds us that learning should be as enjoyable as the subject itself.

What does it really take to succeed in Florida's craft brewing industry today? Attorney Trevor Brewer pulls back the curtain on the business challenges facing brewery owners across the Sunshine State in this revealing conversation with Florida Beer News editor Mark DeNote.
Trevor's journey into beverage law began when he noticed a local brewery's prolonged "Coming Soon" sign and later learned the owner had sold his prized toy collection to finance his dream. This entrepreneurial spirit captivated Trevor, who has since advised approximately 40% of Florida's breweries over the past decade through his practice at Brewer Long in Longwood.
The discussion dives deep into market analysis using Trevor's monthly "Brewer's Report," which tracks production numbers and tax data. His findings reveal a sobering reality: Florida brewery sales peaked in March 2022 and have since declined to March 2020 levels despite a growing number of breweries competing for market share. This challenging landscape requires brewery owners to be increasingly adaptive, with many diversifying beyond traditional beer into distilling, wine production, and non-alcoholic offerings.
Perhaps most valuable are Trevor's insights on what truly differentiates successful breweries. While adequate capitalization remains critical, he emphasizes that strong community connections—both externally with customers and internally among owners, staff, and even landlords—often determine which breweries thrive long-term. The most resilient operations have established themselves as neighborhood fixtures, constantly evolving to meet the needs of their specific communities while maintaining financial discipline.

Sean Sasser invites us into the evolving world of Cigar City Brewing, where tradition meets innovation in Tampa's iconic brewery. As technical brewing manager, Sean's journey from college homebrewer with a Mr. Beer kit to brewing leader traces the fascinating evolution of craft beer itself.
Over pints in CCB's historic Tampa tasting room, Sean pulls back the curtain on what he calls the "Wild West days" working alongside Wayne Wambles, when the "rule of cool" trumped everything else. Those early years cultivated CCB's reputation for boundary-pushing beers that defined Florida's craft scene. But the conversation doesn't shy away from tough questions about ownership changes and the criticism that followed Monster Beverage's acquisition.
"We're not going to stop what we're doing because of outside opinion," Sean explains with quiet confidence. "If there's ever a time for us to be really putting our best foot forward, it's absolutely now." This philosophy has guided CCB through transitions that would have derailed lesser breweries.
What stands out most is Sean's thoughtful evolution as a brewer. Once focused on creating beers that "punch you in the face" with flavor, he now pursues nuance and subtlety: "I want to make beers that, after three pints, they're wondering if they can have another one and call an Uber." This shift reflects broader industry trends while maintaining CCB's distinctive voice in an increasingly crowded marketplace.
From insights about the legendary Hunapuʻ to his current love for Czech dark lagers, Sean's perspective balances reverence for brewing tradition with forward-thinking creativity. After 12 years at CCB, his passion remains undiminished: "It's exclusively driven by pride and love I have for what we have done and what we will do."
Ready to experience what Sean calls "the best beer we've ever made"? Visit Cigar City's Tampa tasting room where everything's brewed on their original 2009 system—a perfect blend of heritage and innovation that defines modern Florida beer.

In this episode of the BeerWise Podcast, I am joined by Tim Ogden, owner and brewer of Deviant Libation, one of Tampa’s newest brewers helmed by one the area’s most experienced brewers.
Tim has been a part of the Tampa Bay Brewing scene since the Hops Brewpub chain hired him early on in Florida’s craft beer renaissance. Then his job shifted from brewing beer to closing brewpubs as the chain lost momentum and had to close its restaurants. From there, Tim’s journey has led him to brew at influential Florida breweries like Cigar City Brewing, the Cigar City Brewpub, Cigar City Brewing at TPA, Tampa Bay Brewing Company, and now his own operation, Deviant Libation.
Tim’s love for music and his devotion to music venues has also led the tiny confines of Deviant to become a music venue while other local venues are having a difficult time keeping their doors open. Deviant is now welcoming shows from metal bands and other artists as a way to support a beloved venue.
Tim talks about these and other issues during our talk that was recorded in January 2024 at Deviant.
Here's our conversation.

This podcast was recorded on Monday, February 26th, so I’m happy to release it faster than a hazy IPA.

Hello, and welcome to the BeerWise podcast, I’m your host, Mark DeNote, and I am the editor of Florida Beer News.
It’s great to be back and bringing you new episodes of the podcast. Due to some unforeseen personal circumstances, the podcast ended 2023 somewhat abruptly. But, I’m back for 2024 and ready to roll with some new guests, new ideas, and new horizons.
This episode, I am joined by Gilly Woolfolk, the brewery manager and Ryan Freeman , head brewer of Dade City Brewhouse in Dade City, Florida.
I was tipped off to this brewery when passing through Dade City, a small town north of Tampa near Saint Leo University. Dade City has just over 7,600 residents and is mostly known for its kumquat groves. In fact, each year Dade City celebrates these little citrus fruits with a festival in their honor. Due to delays in opening time, DCBH happened to open during the 2021 kumquat festival. Thousands of people were right outside and wandered in for a beer. Gilly and Ryan discuss this and other ways that this small brewery has connected with its community as our talk goes on.

Hello, and welcome to the BeerWise podcast, I’m your host, Mark DeNote, and I am the editor of Florida Beer News.
This episode, I am joined by Brad Dahlhofer of B Nektar Meadery.
In 2008, Brad and his wife Kerri had both been laid off from their jobs and were enjoying Brad’s homemade mead when they decide to go all in on the idea of opening a craft meadery. Brad and Kerri’s ideas continued to evolve and morph until B. Nektar’s deep blue bottles were introducing new audiences to mead all over the Midwest and leapfogging a few states into my home state of Florida.
Brad talks about the early days of B. Nektar, why he and Kerry decided to go all in on mead, the world’s oldest, yet widely forgotten beverage. How he began to build a meadery and how much diligence and luck it took the team to get where they are today.

Before we get to our guest for this episode, I wanted to take a minute and thank those of you who carve out time to listen to this podcast every few weeks. It is a labor of love for me – and I get to have some great conversations with the fine people in the world of craft beer and beverages, but it is not my day job and it takes time to create this show.
Recently, the BeerWise Podcast brought home a Gold Crushie – an award for “crushing it” in the field of craft beer marketing. According to the Craft Beer Marketing Awards organization, a gold Crushie is given “To award a 2023 CBMAS Gold Crushie, the judges' panel will be seeking entries that meet or exceed the defined category objectives by using strategy, creativity, and innovative production techniques to achieve a perceived, higher level of uniqueness.”
I am extremely proud to have earned this award from those currently marketing in the beer industry, and excited to keep bringing you the words and stories of the amazing and awesome people in the beverage industry and beyond.
Speaking of the great people in the beer industry and their stories…
In this episode, I am joined by Ryan Sentz of Funky Buddha Brewery in Oakland Park, Florida.
Ryan is the founder and soon-to-be-owner of Funky Buddha Brewery – a brewery that made a name by bringing intense flavors into beer that many could not believe. The beer that introduced many people to the brewery was Maple Bacon Coffee Porter, a beer that did not contain actual bacon, but made many wonder how such flavors were possible. From small beginnings, brewing beer in a lounge in Boca Raton to an expansion that brought the brewery into their current home, a 54,000 sq-ft facility with a 30-barrel brewhouse.
In 2017, Constellation Brands, the international company who imports Corona and Modelo beer brands, had recently bought Ballast Point Brewing in San Diego and then news broke that Funky Buddha Brewery was being acquired as well. Funky Buddha Brewery remained entrenched in their local community with Ryan and his team still running the brewery with Constellation Brands as the brewery's owner.
Fast forward to 2023 and Ryan and KC announce that they will be buying back Funky Buddha Brewery from Constellation Brands. Constellation Brands sells their craft breweries and exits the craft beer business, focusing on other brands of beer that they own.
Ryan and KC re-enter the world of brewery ownership in one of the most competitive times in history for craft beer. This was one of the focuses of our conversation. Ryan was also nice enough to give me his hot take about other news that broke this week – the news that Sapporo, the Japanese brewer who owns San Francisco’s Anchor Brewing, will be cutting back Anchor’s distribution to California only and will be discontinuing Anchor’s storied Christmas beer called Our Special Ale. I wanted his opinion on this topic as someone returning to brewery ownership after a hiatus.
Here's our conversation.

Hello, and welcome to the BeerWise podcast, I’m your host, Mark DeNote, and I am the editor of Florida Beer News.
In this episode, I am joined by Nile Zacherle, the President and Master Brewer of Mad Fritz Brewing Company in Saint Helena, California.
I was introduced to Nile via one of his beers sent by a friend. The beer was so close to the line between wines and beers that I was intrigued, so I looked up the brewery.
I was able to get some time with Nile to speak about Mad Fritz Brewing and the philosophy of “Origin Beer.” Mad Fritz and their beers, according to Nile, is a reflection of the beer’s ingredients, not the recipe. In addition to making the beer, Mad Fritz malts their own barley and sources water from different wells and springs, often close to the brewery. Nile feels that the beer that emerges from this process is a reflection of the land it was grown on and the people who had a hand in making it.

In this episode, I am joined by Reve Brewing Company owner and brewer Eric Luman. Eric is a veteran brewer of the Jacksonville craft beer scene. He began his career in the 1990s and has been brewing at various breweries around Jacksonville ever since. After a stint at Jacksonville Beach's Green Room Brewing Company, Eric decided to open his 'dream brewery' where he could focus specifically on brewing the styles of beer that make him happy. The exploration of those styles includes an expansive barrel-aging program that leads to almost weekly releases and adjunct ingredient combinations that are a bit unorthodox. Eric is candid about his goals with Reve Brewing and he talks with excitement about the future of the brewery.

This episode I am joined by Kelly Hanseth of Lumberyard Brewing Company and Beaver Street Brewery in Flagstaff, Arizona. Kelly’s parents, Winnie and Evan Hanseth opened Beaver Street Brewery, Flagstaff’s first craft brewpub, in 1994. Kelly was a young girl when the brewery opened and has grown up with the brewery as her family’s business. When the city of Flagstaff was looking for ideas on what to do with their historic lumberyard, the Hanseth Family pitched the idea of turning the facility into a production brewery and restaurant. Lumberyard Brewing Company opened its doors in 2010, after the family remodeled and converted the facility.
Kelly is now the Marketing Manager for both breweries and the Vice President of the Arizona Craft Brewers Guild.
We discuss growing up with a brewery in the family, marketing two breweries, converting a lumberyard into a production brewery, and more.

This episode, I am joined by Michael Marquess, the founder and president of Mother Road Brewing Company in Flagstaff, Arizona. Mother Road Brewing was the first stop on a tour of Flagstaff breweries that I recently took courtesy of Visit Flagstaff. Michael was nice enough to sit down with me in the brewery’s taproom and talk about Mother Road and the brewery’s history over pints of Sunday Drive, Mother Road’s crisp lager.
We discuss Mother Road’s name, Tower Station IPA, the Flagstaff beer scene and more.

This episode, I am joined by Aardwolf Brewing Company owner Preben Olsen and head brewer Michael Payne. Aardwolf Brewing has been a mainstay in the Jacksonville, Florida beer scene since 2013 when they opened as a beer bar and progressed to brewing their own beer. Preben and Michael discuss Aardwolf’s origins and how they came to start brewing in an historic ice factory in the San Marco area of the city.
Preben is also on the executive board of the Florida Brewers Guild, so I could not resist asking him about some of the initiatives that the guild has going on during the current legislative session.
As a side note, the brewery is built very close to the train tracks, so there is periodic train noise. The brewery was also opening the tap room, so there is ambient brewery tap room noise throughout the interview.

This episode, I am joined by Corey Adams of Southern Swells Brewing. Southern Swells just celebrated 6 years in the Jacksonville, Florida beer scene. Through it all, their beer lineup has been anchored by New England IPAs, especially their Karate In The Garage made with cryo Mosaic hops. Aside from that one particular beer, Southern Swells lineup changes continually. During this visit, Southern Swells still had Where the Citra Things Are, a session IPA made with every form of Citra hops available to purchase.
Cory sat down and discussed the idea of keeping the Southern Swells lineup fresh, what six years has taught him, as well as what is coming for this Jacksonville Beach Brewery.

Cigar City Brewing founder Joey Redner joins us in this episode of the BeerWise Podcast.
Joey Redner built one of the most iconic breweries in Tampa's history, but that is not what he intended when writing Cigar City Brewing's initial business plan. Joey insists that he never intended for the brewery to grow as big as it did, and Joey shares what he has learned and some business thoughts on craft beer. Joey and Mark also talk about Joey's origin story in craft beer and the early days of Cigar City Brewing up to the day that Joey sold the brewery and a little bit on what he's been doing since the sale.

It was a fortunate coincidence that I had my recorder handy during August's Florida Brewers Guild Conference, as both men were in attendance and had some time to sit down and talk about their journeys as brewers and record some of the names of brewers who have come and gone from Florida breweries. Ron and Madison talk about what it was like sharing information between breweries before email and the internet and other differences between their start in brewing and their current state of affairs.
Ron Raike is the brewmaster at Playalinda Brewing Company and Madison Roane is the Vice President of Production at Florida Avenue Brewing Company. The two brewers have each been brewing beer professionally in the Sunshine State since the 1990s and have traveled worked with and worked for many other brewers and breweries in Florida History. Ron began his career brewing in the Orlando area, including a stint at what may have been the first airport brewery that brewed beer onsite at an airport - the Shipyard Brewpub in Orlando International Airport - and has transitioned between several breweries to his present position at Playalinda Brewing. Madison began brewing at McGuire's Brewpub in Destin and "followed a girl down to Tampa" and worked at Cigar City Brewing for years until transitioning to his current position at Florida Avenue Brewing in Wesley Chapel.
The initial interview was Ron's idea - except this was before COVID, and it took several years to get both of these guys in the same room. The interview is worth a listen if only for the banter about hard seltzer and milkshake IPAs.

In this episode, I am joined by Jim & Brittey Barrie of Barriehaus Beer Company
Barriehaus is a lager-focused brewery in the heart of Tampa Bay, located one block off of 7th Avenue in Ybor City and 5 minutes away from some of Tampa's premiere breweries and meaderies. Barriehaus Beer Company has made a name for themselves by focusing their energies and their tap list almost exclusively on lagers.
In this interview, Jim and Brittney talk about the formation of the brewery and Jim's unique history with lager brewing as a fourth-generation brewer following in the steps of his family. Jim and Brittney are forthcoming about why they chose to open a brewery in Tampa, what continues to inspire them and what happens when their brewing dreams ran headlong into the COVID-19 pandemic.

Florida Aquarium's Brews by the Bay is back – and it’s being turned up a notch!
For years, The Florida Aquarium has hosted a successful beer, food and music festival called Brews by the Bay. After a two-year hiatus, the Aquarium is bringing back the event with a twist – a musical twist, that is. Newly named Rhythm and Brews by the Bay, the hit event will now incorporate a concert headlined by ‘90s alternative rock band, the Gin Blossoms, and opened with an acoustic set by Ken Block and Drew Copeland of the band Sister Hazel.
Known for popular songs like “Until I Fall Away”, “Found Out About You”, “Hey Jealousy”, "Follow You Down" and their five-time Platinum breakthrough album New Miserable Experience, the Gin Blossoms are a staple alt-rock icon you don't want to miss!
Ken Block and Andrew Copeland, co-founders of the platinum-selling band Sister Hazel, hail from our very own Sunshine State. From the same genre, they are known for Billboard hits like “All For You” and "Change Your Mind."
As with Brews by the Bay, guests can enjoy endless brews from local craft breweries as they take in all of the amazing views The Florida Aquarium has to offer – be it their 500,000-gallon Coral Reef gallery or the aerial view of Tampa Bay offered by their scenic rooftop terrace.
General admission tickets are available for $125.

In this episode, I am joined by John LoScalzo, owner and chef of LoKo Cuisine.
LoKo Cuisine is best known for their pop-up meals in collaboration with the Tampa Bay area's craft breweries, called "Eggs & Kegs." On scheduled Sunday mornings, John and his wife Stephanie Kojima are hard at work cooking inspired meals for the culinarily curious (and hungry) food and beer enthusiasts.
And LoKo's meals always have a food, beer, or cultural "twist." Whether it's a meal themed after the flavors of Cigar City's Jai Alai IPA, or New England IPA with New England Surf & Turf, or his latest inspiration Bibimbap & Hip Hop, John always finds a creative theme for his meals.
In our interview, John talks about how LoKo Cusine got started, his inspiration for LoKo's pop-up meals, and his thoughts on beer and food pairing.

Arkane Ale Works is known for their Mango Habanero Berliner Weisse, their pie sours, their adjuncted barrel-aged stouts, and their eye for creativity and as Joe says, “some days we’re more of a sweet shop than a beer store.”
In our interview, Joe talks about his time in the beer industry making traditional beers as the head brewer of Rapp Brewing Company of Seminole, Florida, one of the breweries that helped bring gose back as a popular beer style. Joe talks about how he and business partner Dan Graston began Arkane Ale Works and what is happening with their current state of expansion and distribution and more.

About Arkane Ale WorksLocated in Pinellas County, Arkane Aleworks is a brewery founded by Joe Scheibelhut (actual spelling) and Dan Graston, and represents the culmination of years of passion and planning. It started as two poor kids with a dream and has grown into two poor kids with a dream and a Facebook page, but the best is yet to come!
In this episode, I am joined by Dave Doble of Tampa Bay Brewing Company.
One of Tampa Bay’s iconic and well-visited breweries, Tampa Bay Brewing Company is celebrating 25 years in July 2022. Visited by both Michael Jackson and Guy Fieri, many visitors know TBBC for its welcoming pubs in both Ybor City and Westchase.
In the mid-1990s, the City of Tampa did not have many options for craft beer until John and Vicki Doble put their faith in their son Johnny’s vision of opening a homebrew store called the Brew Shack. Johnny and his family grew that store into a brewpub and one of Tampa’s first ‘destination’ breweries. Once the pub opened, Johnny was the head brewer and Dave Doble left the family business to train as a pilot. Dave talks about when his brother tragically died in a fire in 2003, how he decided return to the brewery his family had founded.
In our interview, Dave talks about that return and how he and his family decided to grow TBBC’s business to its current heights. Dave also talks about changing the TBBC beer lineup and how the brewery’s growth has been helped by Reef Donkey, a GABF Bronze-medal winning pale ale named for the Amberjack, a game fish which lives in Florida’s wrecks and reefs.

Recorded in January 2022, Cycle Brewing's founder and head brewer Doug Dozark is the latest guest on the BeerWise Podcast
Recorded at Cycle Brewing's production facility in St. Petersburg, I had the privilege of speaking with Doug about his time in the brewing industry, including his origin story about moving to Colorado and showing up to work at Oskar Blues, then returning home to open up a tiny brewery alongside his family's restaurant in the tiny town of Gulfport. Doug talks about his love for brewing beer, and how he held down three jobs as a young man - all while trying to foster his brewing knowledge. Doug has worked for both Oskar Blues Brewery and Cigar City Brewing before starting Cycle Brewing - St. Petersburg's first craft brewery.
Since he started Cycle, the brewery has become known for its highly sought-after bottles and its bottle release events. Doug talks about his opinion on those release days as well as his love for barrel-aged beers. Doug speaks about his passion for aging beer (specifically imperial stouts) in spirit barrels and his love for dessert beers.
In this episode, you also see the first iteration of a segment I like to call "The Six Pack." These are six questions to conclude the episode, all related to the beer industry and what the guest has learned in the industry. The "six pack" give a little more information about Doug and about his thoughts on the beer industry.
