We are recovering from our food coma after an amazing week of Thanksgiving treats. While Turkey was the star for most folks, we had some duck breast that stole the show.

Update on my diet and the great results from eating the right kind of fats and looking forward to talking about prime rib for Xmas.

Preparing for Thanksgiving is key for success. Whether you are ordering a fresh turkey or a frozen one, you don’t just throw it in the oven or smoker without some prep and serious consideration of flavors. To brine or not to brine, that is the question. What about injections? What are some things we need to have on hand to ensure the best results?

Winter arrived and I am not as keen on smoking in the cold any more. Technology is great when it works and a nightmare when it doesn’t. Software updates can render devices useless and power outage causes us to cook old school so it is good to keep those skills sharp. Finally, I’ve jumped into the hobby of 3D printers and may have found an accessible option. I will keep you updated on my adventures with the Bambu Lab X1C printer.

We finally removed the broken canopy over the grilling facilities to make room for some new construction. Winter is coming and we are expecting our first hard freeze so had to unhook the water lines and hot water heater from the outside sink. If we have to work on the deck we might as well through a pork shoulder on the smoker for some pulled pork. Hard to get away from the spicy apple seasoning and apple juice brine so that is what we did. Y’all stay warm.

So good to be back home after traveling to visit our girls in Alabama. Both my girls are amazing cooks and made us some great food but a few of the restaurants left some things to be desired. After returning home we have fired up the grill and smoked some cheese, reverse seared steaks and put together an easy pork roast that is full of flavor.

Finally, I preached a sermon about the war in Israel and who are the heirs of Abraham today. Follow the link to my Gospel Preaching With Chris Peltz YouTube channel.

Krispy Kreme Donuts are popular for several reasons but when you through them on the grill, they are truly over the top GOOD. You have to at least try them before you knock them. Also, we grilled some Chuck Eye steaks with mixed results. Chris loved the first bite, texture and flavor but there was way too much fat that did not render down. However, for the price, it is worth trying again. Finally Chris shares his thoughts on a new idea for stuffed apples to maximize the flavor and creamy goodness inside. Stay tuned for further updates and email us to let us know if you try anything we talk about.

We love desserts on the grill and confident you will as well. Try your favorite apple pie, peach or blackberry cobbler, cakes or other baked goods on the grill. We also love grilling fruits like pineapple, peaches, apples and bananas. Don’t knock it ’til you try it. Finally there is the campfire classic S’more with a twist for the grill. In the middle of all that we take a side trip on getting more smoke with pellets using the Grill Grate brand cooking grates.

You wanted to know if I still have an air fryer and what I might know about accessibility. Well, yes, I still have an air fryer, the Cosori Dual Blaze, which has been working with my Amazon speaker and almost completely accessible. However, I can’t go all in with the air fryer for preparing complete meals. It is my go to for reheating leftovers. It is hard not to fire up the grill or use the sous vide instead of the air fryer. Finally, the results of the World Championship Squirrel Cook-off are in and Nick got third place. Congratulations and good luck next year. It amazing me how creative you guys get with your cooks. Thanks for sending in your recipes and I look forward to sharing them next week.

We answer a few questions from our listeners and talk about our Halibut cook before getting to the brisket.  Tips for the best brisket begins with purchasing a whole packer cryovac three weeks before you intend to smoke it.  Place it, unopened, in your refrigerator and leave it alone for three to four weeks.  Smoke it at 275 indirect for the first four hours and then wrap and place a probe in the flat.  Bring temperature of meat up to 205 and then test for probe tender.  Let it rest for an hour or two before slicing.  Do not worry about trimming.

We are talking all about Wagyu beef and I have a call to action.  Our friend, Walter from NYC lost everything to a fire and there is a GoFundMe link on our FaceBook page.  Blind Grilling has sent some replacement grilling and cooking accessories his way, but if you would like to help, please head over to our Facebook page and click the link.  What is Wagyu and why can we not know exactly what we are getting if beef is labeled Wagyu in the U.S. today?  The USDA has no grading system for American bred Wagyu beef and Japan has banned the export of more living Wagyu cattle for breeding.  While Wagyu is amazing and something you should try at least once, it is not worth the extra cost when it comes to American bred Wagyu.    Send questions and comments to blindgrilling@gmail.com or info@blindgrilling.com Check out our website at blindgrilling.com  Subscribe to our You Tube channel at: youtube.com/blindgrilling Like us on Facebook at: www.facebook.com/blindgrilling Visit our sponsors: https://lanesbbq.com/ https://kickashbasket.com/?ref=MgW7rNTx If you want to listen on the AINC Audio Information Network of Colorado by phone, you can call: 303-786-7777  Press 2, then 4 and then 28 for Blind Grilling Experience

Chris breaks out the sous vide machine to try cooking shrimp using this method for the first time. It is so easy and so great; we plan on doing it a lot. He also shares a recipe for some cajun shrimp bread which you can find below:

You can use French baguette or ciabatta bread sliced in half long ways.

Preheat oven or grill to 400F

Sous Vide or cook half pound of shrimp with three cloves of minced garlic with salt and pepper to taste until firm and cooked through, about 6-8 minutes in the oven. Let shrimp cool and then dice into small, bite sized pieces.

Combine cooked shrimp with the following:

One teaspoon favorite Italian seasoning or rub

One third cup of mayo (We love Truff spicy mayo)

One quarter cup Mozzarella fresh graded cheese

Two tablespoons freshly grated Parmesan cheese

One quarter cup sour cream

Top the bread with your shrimp mixture and season with more cajun seasoning like Slap Ya Mama

Bake in oven for six to ten minutes or until cheese is melted. Enjoy

Welcome to our new listeners on Minds Eye Radio.  Today we give some tips for making a rue when you are blind or visually impaired.  We also talk about the importance of food preparation before starting your cook.  Then Chris shares his favorite recipe for smoked Mac & Cheese

Cook a box of macaroni noodles and drain.  In a 9x13 pan, melt 5Tbsp of butter and mix in 3Tbsp flour to make your rue.  Then stir in 4 cups of milk while stirring on medium low heat.  Now add 3tsp +/- of flour favorite all purpose or bbq rub along with 2 cups of freshly shredded sharp cheddar.  Once cheese is melted you can add the cooked macaroni noodles and either serve or top with some more shredded cheddar and sliced jalapeño peppers, place in smoker at 300F for about 3045 minutes or until cheese on top is completely melted. Enjoy

Vince’s BBQ meatballs

Balls:

2 pounds grass fed/finished ground beef

2 pounds ground Mangalitsa pork

2 ounces (4 tablespoons) Lane’s BBQ chili lime rub

1/2 ounce (1 tablespoon) ancho chili powder

1 1/2 tablespoons brown sugar

Cracked black pepper to taste (approximately 1/2 tablespoon)

2 teaspoon Ground oregano

1 1/2 teaspoon onion powder

1/2 cup oat flour (add 2-4 extra tablespoons if high fat content in meat)

2 tablespoons powdered buttermilk (or 1/2 cup liquid buttermilk)

2 eggs (chicken)

Mix thoroughly and cover. Let marinade in fridge for 24-36 hours, or as long as possible.

Measure with a 1/2 cup measuring cup and roll into balls. Smoke indirectly on grill grids at 300 for 45-60 minutes (30-45 minutes for smaller balls). Coat with sauce and place back on smoker for 5-10 minutes.

Sauce:

1 1/2 large sweet onions

2 stalks celery

4-6 cloves garlic

1 green bell pepper

2 Serrano peppers (seeds removed)

1 quart chicken stock

1 1/2 cups Lane’s BBQ Kinda Sweet sauce

1/2 cup raw honey

1/4 cup balsamic vinegar

2 tablespoons white vinegar

1 ounce (2 tablespoons) Lane’s BBQ Chili Lime rub

1 teaspoon ground cumin

1 tablespoon chili powder

1/2 tablespoon sweet paprika

Salt to taste (approximately 1 teaspoon)

Purée vegetables in food processor, add to pot with 1 quart chicken stock. Reduce until very little liquid remains and contents of pot are mostly vegetable purée. Reduce heat to simmer. Add seasoning, BBQ sauce, honey, and vinegars. Stir often until liquid reduces into a thick glaze. Let cool some. Pour over smoked meatballs or roll smoked meatballs in glaze and place them back on grill for 5-10 minutes for glaze to adhere.

Serve with creamy Asiago mashed potatoes, roasted garlic flatbread, coarsely chopped roasted vegetables, or any of your favorite BBQ sides.
