In Episode 92, your host, Lee Uehara (way-ha-rah) takes you through making your own deli meat using chicken breasts. She does mention bologna, but says that’s another process for another episode.
Basically, all you’re doing is slow-roasting a marinated piece of meat! (The basic idea is the same for most types of meat, BTW.)
RECIPE: Chicken breasts Marinade: honey, onion powder, garlic powder, salt and black pepper. Let it hang out in the fridge for at least one day. Then, slow roast them for about 1.5 hours at 260 degrees F. Check the internal temperature so that it’s at least 166 degrees F.
Lee’s trick to slicing the meat into thin slices: put the cooled-down chicken breasts in the freezer for at least 45 minutes. You don’t want to freeze them but get them to be firmer, more solid for easier slicing. *That’s especially if you’re using a knife and not a meat slicer or slicer attachment with your food processor.
For bologna, which will be talked about in another episode, basically you’ve got to make a meat pureé with cold water and about a 1:1 ratio of meat to fat. You’ll need casing, which you can get at Sausage Maker. Then, you can smoke it, roast it with a water bath or cook it in a hot water bath. The secret ingredients for bologna are mace, nutmeg and possibly coriander.

Tip Number One: Start 2020 out with clean clothes! It’s as simple as doing your laundry.
Tip Number Two: Go for a jog, a walk, something physical on January 1st. You know, start the new year with something healthy…and clean!
These tips seem almost too simple, they're laughable, right? Well, Lee's point is that whatever you do, keep it short, new, simple and keeps you feeling good about yourself. Major Tip: It could be a simple as making your bed! Really. Listen in to hear Lee share how she makes her bed in under one minute – so easy anyone can do it!
Again, the point is to take small steps to enter the new year instead of feeling down about not having done all those things you thought you were going to complete - there is still time! Oh, and if you’re accepting of yourself, non-judgmental, don’t do anything. Just say, “Hello Self! Welcome to 2020!” LOL.
Reiterating: Do something that’s new, small, takes less than an hour to do, perhaps something that’s fun - and most definitely something that makes you feel good about yourself! And, here's a thought: If you always go drinking, try NOT doing that - and enter the new year bright-eyed and bushy-tailed. Eh? Eh?

In Episode 79, Lee shares a simple tip for staying cool while taking a shower in hot weather. Yes, this is a problem with city living. LOL. Not everyone has central HVAC!
This tip leads Lee onto another tip for keeping cool - just wet a washcloth with extremely hot water, ring it out, and rub it on your face and neck! While sharing this cool-down trick, it gets Lee going down the rabbit hole of Japanese restaurants and what faux pas to avoid when being given a rolled wet towel at the table. In Japanese, this hot hand towel is called "oshibori" (oh-she-bow-ree). Don't make this mistake!!!

There, owner Kee Ling Tong - known for her fresh, handmade, and unadulterated chocolates - tells us how to make ganache filling for truffles. Kee's Chocolate is frequently listed as one of the best places in New York City for gourmet chocolates.
Tong also gives listeners tips on how to shop at a grocery store for chocolate and shares the popularity of her chocolate passionfruit pieces that are a near sell-out during Valentine's Day season.
Lee, who is not big into chocolate, is offered one piece of the chocolate passionfruit speciality, and she shares her reaction.
Store regulars, Stuart Kohn and a gentleman named Ed, also weigh in on Kee's Chocolates. Stuart also shares his tips for Valentine's Day.

Truffles Recipe 1 cup fresh heavy whipping cream 1 cup your favorite solid and good-quality chocolate, chopped into small bits Natural flavor extracts and/or ingredients such as chopped nuts, cocoa powder, or coconut Make sure NO water gets into contact with the chocolate. It will create an awful mess and a wasted shopping trip.
Heat-proof bowl, pot and stove or microwave, melon baller or small scoop
A). Traditional Method: boil the whipping cream with out burning, then add to a bowl with the chopped chocolate, stirring until melted and combined. B). Microwave Method: to melt the chocolate, set the time for 15 seconds at a time, stirring after each round. The whipping cream will still need to be heated up.
Pour your cream into a pot and heat to a light boil. Add the hot cream very slowly while stirring it into the chocolate. If the chocolate gets too hot, it will be an oily, useless mess. Hmm, how do I know this? LOL. (Well, actually, it will still set and harden, but the separated fat and chocolate solids will be present, making it ugly and less smooth. But honestly, I still ate my failed batch. LOL.) Add your desired flavor into the cream before adding it to the chocolate. Once cream and chocolate are combined and mixed, refrigerate for at least one hour but as long as 24 hours. (Once the mixture has set and is quite firm, you can then call it ganache!) Scoop or spoon the ganache into small balls as pictured above. Coat in desired ingredients, such as coconut, cocoa powder, or nuts. Enjoy!
---UPDATE: February 13, 2018, 10:30AM--- I went out in search of passion fruit this morning. And after an unsuccessful trip to Citarella, I found it at Fairway, 2 for $5. Please see my photo of it below. Hope that helps :)
