How do you pack all of Naples Italy into a food truck? Well, you can start with a motivated Brazilian with Italian parents who found food was his passion, cooked at several restaurants, moved to the US to learn English then went over to Italy to study VPN pizza.
That person is John Anthony St. Patrick and that food truck is Spacca Naploi. I encountered this hot and fresh pizza and John Anthony when I went out for dinner and we connected afterward to talk all things pizza. Oh and he does handmade Mozzarella and brought some in studio!

Hyper-local, this is a word that I heard on National Hot Dog Day back in 2022 and that term was heard from the voice of Ryan Barry of Willie Dogs. At that time Wille Dogs was a cart/popup concept focusing on creating a hot dog to represent Omaha. Since that time Ryan has gone to culinary school, kept the cart going, and more recently opened a brick and mortar location. I first encountered Chef Jamil Bah-Traore when I read his kind words about fellow Omaha Chef Wilson Calixte of Le Voltaire . David Losole with his focus on pizza and experience, has been slinging slices from Virtuoso Pizza’s ovens to tables and out the window to walk up customers in the Benson area of Omaha for a while now. What do a Cubano, carrots, and mushroom toast all have in common? Well, they are some of the tasty eats available at Get Real Sanwiches located at 3901 Farnam Street in Omaha. The sandwiches and accompaniments to the bread based bounty have chef level loadouts and purposeful presentation. TJ and I made a few trips here and also got some carryout for a nice cross-section of this multifaceted menu. Over the life of Faturday Omaha I’ve been fortunate to follow the life and times of some wonderful people. One of those is Brady Hess who when we first met was running the bar program at the now closed Culprit Cafe, we then caught up with him at Site-1 Brewing where he introduced hungry tummies to his comfort driven BBQ and sides. Now is has partnered with Evan Keelan-White of Scriptown Brewing to bring their creation, Lazy Buffalo, to the world. This is a friendship that has blossomed into a popup and the goal is a brick and mortar location.

Way back in 2020, I talked with Jess and Paul Urban of Block 16, a restaurant that is a favorite of both Omaha and elsewhere. Jess and Paul were some of the first guests on the show and we had a wonderful conversation about Block, the menu, memories, oh and Paul stepping in a bowl of menudo. In our several visits leading up to our Elie’s Chinchorro episode we were not only fortunate to have delicious Puerto Rican dishes like Monfongo grace our table, but we were able to meet the chef herself, Elie Berchal.

Way way back, I had encountered something very uncoffee like at Zen Coffee and that was due to a new restaurant called Wonton Jon’s just getting their start as a pop up serving biscuits and gravy wontons. I then encountered his food at Trucks and Taps and then a burger version of his food at Omah Burger Battle in 2022. I’ve eaten at Malara’s over the years as has TJ, but they haven’t been presented within the Faturday Omaha ethos until this episode. Tucked away at 5060 S 107th St, Omaha, NE 68127 is Chaima’s African cuisine, and tucked within are very accessible and delicious flavors to delight the senses. It’s been a bit since I’ve walked through these doors though I have been to Chaima’s food truck that you may have seen around town. Since my last visit there have been wonderful updates to the interior of the restaurant, but the flavors are still delivered to the table from a knowledgable hand. Roughly 45 min north of Omaha is a long building on a surrounded by stretches of land that grow an array of things. Well in that long building is an array of joy located in Master's Hand. This episode it’s Food Recognize Food with Travis Liebig and Eric Shew of Sunnyside on Center. This little and delicious gem is located about 35th and Center in Omaha, and that is where our conversation about a mountain of bacon, a giant bratwurst, severe weather, and memories from the past took place. Travis is the co-owner of Sunnyside as well as Project Manager for Evergreen that handles Sunnyside, Site-1 Brewing and the new Bull Moose. Eric is head chef and has brought his past restaurant experience and energy to a fun menu.
There’s a few pizzas in town that always put an extra big smile on my face and Collin Adkisson of Mootz pizza makes one of them. This pie has a huge pizza grip (crust if you’re new to the show) and tasty toppings all out of his double oven afterburner food truck. Collin has worked at places like Via Farina, Dante, and WD Cravings before setting out on his own. He also has a big event coming that we will discuss and even some tips for the home pizza maker!

Nina’s home country is Togo, but she has a passion for expressing the flavors of the entire continent of Africa. Okra has been negotiating a move to a location on 72nd Street in the former Omaha Bakery close to Nebraska Furniture Mart. We talk about Nina’s story on how Okra came to be, and you will instantly fall in love with her warmth and heart.
This episode it’s Food Recognize Food with Shannon Derry and Chris Knobbe of The Galley at 4963 Center St. The Galley is a small kitchen as the name implies and focuses on delicious takeout and delivery. This episode it’s Food Recognize Food with Alex Herrick and Sammi Johnson of Baked After Dark. Baked After Dark is located in the Benson area of Omaha and provides late night treats to both travelers and passers by. My personal favorite item there is the soft, delicious, and sufficiently sized cinnamon roll. They have an array of fun cookie flavors from standards like chocolate chip to wonderful creations like the raspberry lemonade. We talk about what’s happening at the bakery, where Sammi and Alex like to eat, and why that chocolate chip cookie is so significant.
A newer spot with tasty Mexican food can be found in El Alteño located at 48th and L St. TJ told me about a soup so delicious that I had to try it, and TJ and I (Dave) made something like 7-10 trips between the two of us and sampled a wide variety of dishes from the birria tacos to the chilaquiles and the refreshing agua frescas like the cucumber lime and the cinnamon laden horchata. Oh and TJ decided to cause some chaos on this episode…and I like it

On this episode we have a Faturday guest alum and Behind the Menu as well as Restaurant Tales host Brady Hess, but not just Brady Hess as he has taken on a new role as Chef Brady Hess at Site 1 Brewing! He is just filling his chef shoes and might tell you to call him meat dude instead of chef, but regardless Hess is at the helm creating BBQ and comfort food to please your palate. I stopped by a while back to taste the pulled pork, mac and cheese, and ribs that are smoked and then flash fried to get a gentle crisp. A few weeks passed and Brady and I sat down to capture his story...
It was once loosely and comedically said that you can find the root of any word in Greek. Now I’m not sure about that, but you can certainly find delicious Greek food at Fetas! Sam and I have have been to Feta's numerous upon numerous times, but we have yet to do an episode until now. The quick note is that Feta's is always fresh and delicious. Kevin Shinn owner of a now closed restaurant called Bread & Cup that was in Lincoln Nebraska and author of a book of the same name. Coming this spring Kevin will open up The Portico which is Chef Shinn’s “private one-table-per-night, as Kevin refers to it, “micro restaurant”. Kim and Ashish are not just the owners of Kinaara, but are foodies at heart. Charcuterie and Cheeseburgers, it’s a double feature of Food Recognize Food. We start with Jasmine Deane owner and artist of Good Life Charcuterie, her locally sourced product, and of course where she likes to eat. Jasmine is new to the Omaha area, but she has adopted it as her home and Omaha has adopted her. She is busy making things happen for small to large grazing tables. Then in the second half we talk with Gary Todd, owner of Muncheese 402 a new late night delicious burger spot that features fun egg rolls like the Italian inspired Mama Mia and a burger our Burger Boss Sam would approve of called the Boss Burger. Time for momo and more at a new spot, Nepali Restaurant Inc. We may have ordered a lot, we usually do, but there were fun and new to us Nepalese dishes besides momo here. This was an interesting dining configuration as TJ was keeping very distant in his mini-van and Sam and I, along with our guests, were dine-in. There was even post-eat analysis with a trip back just to unpack the sauce for the delicious dumplings. We had a fun meal in a new spot, so if you haven’t ventured into Nepalese food you’re in for an extra treat.

Located in Midtown off of 31st and Farnam they have the wings bearing the name of buffalo and this is likely the only place in town where you can get a Buffalo New York style crust pizza loaded with toppings.
