The last episode of our healthier sweet treats, these are simple and delicious!

  • 1 cup Medjool dates pitted, soaked, drained
  • 1/4 cup pecans
  • 3 1/2 oz dark chocolate organic
  • Finely chop the dates or blend in a food processor until sticky.
  • With damp hands, roll the dates into small even balls. Press the balls onto a pan lined with parchment paper, and top with pecans, pressing down slightly so that they stick. Freeze for 10 minutes.
  • Meanwhile, microwave the chocolate at 50% power for 30 seconds at a time until melted.
  • Using a fork, suspend the frozen dates into the chocolate until fully covered. Remove and let the excess chocolate drip off. Return to the parchment-lined pan and repeat until each date ball is coated with the chocolate.
  • Return to freezer for 10 more minutes to set. Transfer to the fridge until ready to enjoy.

Super simple, no baking required, Oatmeal Raisin Chocolate Chip Bites. Full recipe:

  • 1/2 cup peanut butter
  • 3 tbsp honey
  • 1 tsp vanilla
  • 3/4 cup rolled oats
  • 1/4 cup shredded coconut
  • 1/4 cup flax seed ground
  • 2 tbsp raisins
  • 2 tbsp chocolate chips
  • Combine the nut butter, honey, and vanilla in a bowl and mix to combine.
  • Next, add in the rolled oats, shredded coconut, and flax seed and mix to combine.
  • Finally, add the raisins and mini chocolate chips and gently stir to combine, just enough to evenly distribute them throughout the mix.
  • Using an ice cream scoop, portion out 12 evenly sized balls and place them in a dish. Enjoy right away, and refrigerate any leftovers that aren't stolen while you're not looking!
